Instant Pot Cake

almond milk

apple cider vinegar, white vinegar, or lemon juice

white whole wheat flour

cocoa powder (sifted if clumpy)

espresso powder (optional; it will create a more intense chocolate flavor)

baking soda

salt

maple syrup

coconut oil (melted and cooled to room temperature)

sugar

vanilla extract

pure almond extract (optional but delicious)

avocado (very ripe)

cocoa powder (sifted if lumpy)

kosher salt

If you have a handled trivet: Place it in the bottom of a 6-quart or larger Instant Pot with the handles up so that you can lift the cake out later. Skip the foil sling in Step 2 and move on to Step 3. If you no longer have the trivet, use a small heatproof bowl turned upside down and placed in the center and proceed to Step 2. If your trivet does not have handles, place it in the bottom and proceed to Step 2.

Make a foil sling to lift the pan out of the Instant Pot: Take a long (about 18 inches) piece of foil and fold it over itself the long way (elementary school would call this "hot dog style") several times to create a long strip. Make sure it is long enough to reach all the way around the bottom of the pan and stick up several inches over the top of each side. Set aside.

In a medium mixing bowl or a large measuring cup, stir together the almond milk and vinegar. Let sit 5 minutes.

In a large mixing bowl, whisk together the flour, cocoa powder, espresso powder, baking soda, and salt until well combined.

To the bowl with the almond milk mixture, add the maple syrup, coconut oil, granulated sugar, vanilla extract, and almond extract. If the coconut oil solidifies, microwave the bowl in 10-second bursts until it reliquifies. Whisk until well combined. Add the liquid ingredients to the dry ingredients. By hand with a wooden spoon or spatula, stir just until the flour disappears. It will seem airy and could be a bit lumpy but will be delicious after it's baked.

Generously coat a 6-inch round cake pan with nonstick spray. Line the bottom with parchment. Coat with spray a second time. Pour the batter into the pan and smooth the top. Cover the top of the pan completely with a double layer of aluminum foil. Really pinch the foil around the top of the pan to create a seal and prevent moisture from creeping in while the cake bakes. Add 1/2 cup water to the Instant Pot (this will prevent it from registering a "Burn" warning).

If using the foil sling, place the cake pan in the center of the foil strip, then pull the strip ends up around the pan. Lower the cake into the Instant Pot, ensuring the ends of the foil poke up on either side of the pan. If the strips stick up out of the Instant Pot, fold them inward towards the center so that you can close the lid. If not using the sling, place the pan directly on the handled trivet.

Cover and seal the Instant Pot. Cook on high pressure (manual) for 35 minutes. When the cooking time is complete, immediately vent the Instant Pot to release any remaining pressure. Carefully open the lid.

Gently lift the cake from the Instant Pot by using the two ends of the foil sling or trivet handles. Place the pan on a wire cooling rack, then unwrap and discard the foil cover. Let the cake cool in the pan for 10 minutes. Run a dull knife, such as a butter knife, around the edge of the pan to loosen the cake, then gently invert it and transfer it to the rack. Let cool on the rack completely.

While the cake cools, prepare the frosting: In a food processor or blender, pulse the avocado, cocoa powder, and salt in 3- to 5-second bursts until mostly combined. Add the maple syrup and vanilla. Process until smooth and creamy, stopping to scrape down the processor a few times as needed. Try not to eat it all right then and there. Place the cooked cake on a serving plate. Frost, slice, and enjoy!

Instant Pot Chocolate Lava Cake for Two Recipe

57 g (about ¼ cup) cubed Semisweet chocolate

(about 61 g) Powdered sugar

(about 32 g) All purpose flour

(about 240 g) Water

(about 58 g) Unsalted butter

(about 50 g) Egg

½ teaspoon (about 2 g) Vanilla extract

Instant Pot Turnip Cake (Chinese Lo Bak Go)

(650 grams) Daikon / Chinese turnip (, julienne)

(30 grams) peanut oil

(10 milliliters) roasted sesame oil

(30 grams) dried shrimp (Chinese: 蝦米)

(10 grams) cooked dried conpoy/scallops (Chinese: 乾瑤柱) ((Optional))

(150 grams) rice flour (Chinese: 粘米粉)

(30 grams) water chestnut flour (Chinese: 馬蹄粉)

(15 grams) sugar

½ teaspoon (1.5 grams) white pepper

(250 milliliters) unsalted chicken stock

Pressure Cook Turnip: Add 1 cup (250ml) cold water and trivet in Instant Pot Inner Pot. Layer the stainless steel bowl of 1.45 lb (650g) Chinese turnip julienne on the trivet. Close lid and turn Venting Knob to Sealing position.&nbsp;Pressure Cook at High Pressure for 10 minutes + Quick Release. Turn Venting Knob to Venting Position to quickly release the pressure. Carefully open the lid (avoid dripping the condensation on the turnip!)

Create Rice Flour Mixture: While the Chinese turnips are pressure cooking, create the Rice Flour Mixture. In a large mixing bowl, add 1/3 lb (150g) rice flour, 2.5 tbsp (30g) water chestnut flour, 1 tbsp (15g) sugar, ½ tsp (1.5g) white pepper, 1 tsp - 1.5 tsp (5g - 7.5g) table salt. Give it a quick mix with a spatula. Pour ⅓ unsalted chicken stock in the rice flour mixture. Mix thoroughly with a spatula. Pour another ⅓ unsalted chicken stock in the rice flour mixture, then mix thoroughly again. Repeat this one more time, so a total of 1 cup (250ml) unsalted chicken stock are added into the rice flour mixture.

Saute Cured Meat: After the Chinese turnip is done pressure cooking, set aside the turnip and trivet. Discard the water, then towel dry the inner pot. Add in 2 (80g) chopped Chinese Sausage (臘腸) and 2.5 tbsp (40g) chopped Chinese Cured Meat (臘肉). Heat up Instant Pot using Sauté More function.&nbsp;*Tip: For older version, press “Saute” button, then “Adjust” button. For newer version, press “Saute” button twice.Wait a few minutes until the cured meat begins to release oil. Then, add in 2 - 3 tbsp (30g) dried Shrimp (蝦米) and optional 10g cooked conpoy (乾瑤柱). At the 3 - 4 minutes mark, add in 2 tbsp (30ml) peanut oil and 2 tsp (10ml) roasted sesame oil. Saute for another minute. Add in cooked turnip and all the turnip liquid (if any). Let them cook for another 2 minutes. Ensure to completely deglaze the bottom of the pot with a wooden spoon.

Create Turnip Cake Batter: Pour ⅓ portion of the hot turnip/cured meat mixture in the rice flour mixture. Mix thoroughly with a spatula.&nbsp;*Pro Tip: You don't want to pour all the turnip in at once because the heat will cook the rice flour mixture.&nbsp;Pour another ⅓ portion into the rice flour mixture and mix thoroughly again. Repeat this one more time, so all the turnip, cured meat, and liquid are added into the rice flour mixture. Mix thoroughly, then pour the turnip cake batter in a cake pan. Add some more dried shrimps on top.

Pressure Cook Turnip Cake: Clean the Instant Pot inner pot. Add in 1 cup (250ml) cold water and a trivet. Layer the turnip cake pan on the trivet. Close lid and turn Venting Knob to Sealing position.&nbsp;Pressure Cook at High Pressure for 32 minutes + 20 minutes Natural Release. After 20 minutes, release the remaining pressure by turning the Venting Knob to Venting position. Remove the lid carefully (avoid dripping the condensation on the turnip cake!)

Chill Turnip Cake &amp; Serve:&nbsp;The turnip cake will look super wet when you take it out of the Instant Pot. To let it set, cool completely to room temperature and chill in the fridge for at least 4 hours. Once chilled, cut turnip cake into ¾ inch thick pieces. To serve, brown turnip cake pieces on a medium-low heat skillet with peanut or vegetable oil. Enjoy!~ :)

Grease a bundt pan with nonstick cooking spray and set aside.

Add cake mix and soda to a mixing bowl and mix well. Mixture will be fizzy from the carbonation in the soda. Just mix gently until the cake is mixed well. Pour into prepared pan.

Cover the cake with a piece of paper towel and cover the paper towel with foil. Loosely wrap the foil around the pan.

Create a sling by using a long piece of foil and folding it in half. Place the pan onto the center of the sling and bring the ends up toward the sides to the center.

Place 1 cup of water into the bottom of the instant pot. Place the trivet into the pot and place the cake into the pot. Tuck the foil down into the pan if it is extending beyond the top of the pan.

Place the lid onto the instant pot and secure the lid shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 45 minutes. When the cooking cycle is complete, open the pressure valve with a hot mitt. Open the lid and carefully remove the cake by lifting the sling out of the pan. Be very careful as the water in the pan is hot and so is the cake!

Place the pan onto a protected surface and remove the foil and paper towel. Let set until cooled completely.

Invert the pan onto a serving platter or cake plate and sprinkle with powdered sugar and vanilla ice cream before serving.
