instant pudina rice

Mint rice recipe is a vegan, gluten free and one pot meal aromatic &amp; flavourful south indian recipe made in a simple way using regular ingredients.

mint leaves

cloves

ginger

star anise

green chillies

pod cardamom

cinnamon

black pepper

mace/Jayatri

tsp nutmeg/supari

water

Mint paste already prepared

basmati rice

tbsp oil

bay leaf

cumin seeds

onion

cashews

Salt

MAKING OF MINT PASTE

Take a blender and add all the ingredients mentioned under the head &quot;FOR MINT PASTE&quot;.

Grind to  a  fine  paste. Keep aside.

Add oil in pressure cooker.

Add bay leaf and cumin seeds. Let seeds splutter.

Put cashews in oil and roast them till turn light golden.

Add onion and saute till turns golden brown.

Pour in the mint paste and let it cook for about 2 minutes until it cooks and absorbs well.

Add rice in pressure cooker. The rice should have been washed and soaked for about 20 minutes before using.

Add salt and water and mix.

Put the lid of pressure cooker on and let it blow 2 whistles.

When the pressure from cooker releases, open the lid.

Mint rice are ready. Enjoy warm with curd or the way you love to.
