This Instant Pot Chicken and Yellow Rice will have you screaming winner winner chicken dinner. It's so easy and convenient when you have zero time to cook and need dinner on the table fast. Bonus points, one pot clean up. Yipee!

Instant Pot Chicken and Yellow Rice

olive oil

yellow onion, small diced (1 cup chopped or 160 grams)

brown basmati rice (363 grams)

chicken broth

carrots (150 grams)

peas (146 grams)

corn (141 grams)

turmeric

saffron

oregano leaves

bay leaf

pepper (divided)

chicken breast

Using 6 qt Instant Pot, turn on to SAUTE mode on NORMAL heat. Heat olive oil and sauté onions until translucent, 3 minutes. Press CANCEL to turn off Instant Pot.

Add broth and brown rice to the pot and mix with onions. Stir in carrots, frozen peas, frozen corn, turmeric, saffron, oregano, bay leaf and season with 1/4 teaspoon salt and 1/4 teaspoon of pepper. IMPORTANT: Stir the rice and veggies to make sure to fully incorporate vegetables with the rice.

Arrange chicken breasts on top of rice mixture; season with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.

IMPORTANT: Push chicken down into the rice with some veggies on top of the chicken.

Secure lid on Instant Pot, and turn nozzle to SEALING. Cook on MANUAL setting with HIGH PRESSURE for 25 minutes.

IMPORTANT NOTE: It takes 15 minutes for this dish to reach pressure!! Don't worry, it will get there.

Once time is up, allow pressure to go into KEEP WARM mode for 10 minutes to allow the pressure to release some naturally. Then press CANCEL on the Instant Pot and twist the steam release handle on the lid to the VENTING position.

Once steam has released and fully depressurized, open Instant Pot lid to shred the chicken and gently fluff into the rice mixture with a fork. Be sure not to "overmix" chicken and rice mixture. Carefully remove the inner pot to prevent the rice from sticking to the bottom. Serve warm.

Delicious! I changed it a little (because of our small family size) and seasoned it a little differently. I only used 1.5 cups rice and 1 2/3 cup broth. I subbed bell peppers for the corn and peas because I didn't have those and added 1/2cup sofrito.  I don't have saffron, sadly, but used sazon with saffron instead.  I cooked per your directions and it was moist and incredibly delicious. My husband and daughter (age 6) raved.

This Instant Pot Salsa Verde Chicken is packed with flavor and super easy to prepare! If you're looking for an IP chicken recipe that everyone will love, this is it.

Instant Pot Salsa Verde Chicken

– 2 1/2 lbs boneless chicken breasts

cumin

smoked paprika

salt

salsa verde

Place all the ingredients in your Instant Pot or pressure cooker.

Set cooker to high pressure for 25 minutes.

When the timer goes off, quick release the pressure and shred the chicken with 2 forks.

Congee is an excellent any day, any time comfort food, especially for one of those cold winter days or sick days. It is so easy on the tummy and gives such a wonderful soothing feeling, that you will always end up craving for more.

Instant Pot Chicken Congee (Rice Porridge)

lbs chicken (I use drumsticks

Jasmine rice

water

green onions (optional)

Scallions (green onions)

chili oil (my family's favorite)

sesame oil

soy sauce

white pepper

cilantro leaves

onions

crispy fried garlic

peanuts

Wash the rice thoroughly.

Remove the skin and slice the ginger into thin discs or strips.

Slice the green onions and separate the green parts and white parts.Keep the green parts for garnishing.

Wash the chicken and remove the skin if you prefer.

Measure the water and broth and keep them ready.

Prep

Now dump the ginger slices, chicken pieces, white parts of green onions, rice, water+broth and salt in the instant pot inner pot, close the instant pot lid, close the vent by moving it to seal position and cook on manual mode for 25 mins on high pressure.( Press manual, press - or + buttons to adjust the time, press pressure level button to adjust the pressure to high and then press on manual again to start).

It will take around one hour for the instant pot to build pressure (displays ON) and cook(displays minutes countdown from 25 to 1) and then finally switch to off mode. Once it is in off mode let the steam release naturally for at least 15 mins and then release the rest of the pressure manually by turning the knob to vent. Now open the instant pot lid. It will look watery at the first look but don't worry it will thicken with in few minutes as you stir. 

Mix everything well and remove the chicken bones from the pot to discard. Chicken will be falling of the bones so yo don't need to shred it separately again.Just stir everything together really well and that will separate any chicken from the bones easily.

Cook

Serve it in a bowl with your favorite condiments and enjoy! Some suggestions for condiments are scallions (green onions), chili oil (my family&#39;s favorite, Chiu chow style chili oil by Lee Kum Kee brand is our favorite), ground white pepper, sesame oil, cilantro leaves, fried onions, crispy fried garlic.
