This recipe is based on the most famous Irish staple, the potato. It has both mashed potato and grated potato. Many Irish people will remember this from their childhoods or maybe many still make it today.

Traditional Irish Potato Boxty

Potatoes of equal size

butter

flour

Salt and pepper

Prepare potatoes

Boil half potatoes

Grate other potatoes

Grate the other half of your potatoes into a bowl.

Squeeze liquid from grated ppotatoes

Put the grated potatoes into a tea-towel and squeeze out all the liquid until you have the dried potato gratings.

Mash potatoes

When the other potatoes are boiled mash them well using a potato masher.

Combine potatoes

Combine the grated potatoes and mashed potatoes in a bowl and add salt and pepper.

Add flour

Add a tablespoon of flour into the potato mixture a mix in with your hands until you have a type of potatoey dough.

Knead dough

Sprinkle some flour over a dry counter and knead your dough for a few minutes.

Cut dough into squares

Using a floured rolling pin roll out the dough and cut into squares or “farls”. The recipe I followed said to roll it out thinly but you can roll it out to whatever thickness you want.

Brown cakes in pan

Melt some vegan butter in a hot frying pan and add your boxty cakes to the pan. Brown them on each side and then lower the heat and let them cook through slowly. This should take around 10-15 minutes depending on how thick your boxty cakes are.

Serve!

Enjoy your boxty for breakfast with vegan sausages and ketchup, or for your dinner with thyme fried mushrooms, fried cabbage, beans and vegan sausages.

Irish boxty bread is an easy, no yeast potato bread ready in just over an hour!  It’s a traditional Irish recipe that uses leftover mashed potatoes and grated potatoes.  You'll want to serve it for St. Patrick’s Day breakfast or dinner this year.

Irish Boxty Bread

all-purpose flour

baking powder

unsalted butter (melted)

Prep:

Warm up the mashed potatoes and place them in a medium mixing bowl with the flour, baking powder, salt, and melted butter.  Measure out the milk and set it aside.

Grate:

Working quickly so the potatoes don&#39;t turn pink, peel and grate the two potatoes.  Squeeze as much liquid as possible out of the grated potato with paper towel, then stir it into the flour mixture.

Mix:

Gradually mix in the milk until all the flour is picked up from the bowl and a sticky dough has formed.  Turn out the dough onto a lightly floured surface and gently knead a few times until the mixture is well combined.

Shape:

Shape the dough into a disc and place on a lightly floured baking stone or a parchment-lined cookie sheet.  Score in a cross shape with a sharp knife, cutting almost all the way through the dough.

Rest:

Let the boxty rest for about 10 minutes on the counter while the oven is preheating to 400 F.

Bake:

Bake at 400°F for about 40 minutes, until the loaf is a lovely golden brown.  Let the bread cool a little on a wire rack before serving.  It tastes best warm and spread with butter.

Prepare the dry mix

Whisk together the all-purpose flour, salt, black pepper, and baking powder in a bowl until evenly combined.

Combine potatoes and wet ingredients

In another bowl, mix the grated russet potatoes, mashed potatoes, lightly beaten egg, and heavy cream thoroughly.

Mix batter

Stir the flour mixture into the potato mixture. The batter should be thick yet spreadable to form patties. Add more heavy cream if the mixture feels too dry depending on the moisture content of your potatoes.

Heat the pan

Place butter into a large skillet and melt over medium-high heat until hot and bubbling.

Form and cook patties

Scoop portions of the potato batter into the skillet and gently spread them into flat circles approximately 1/3 inch thick.

Fry first side

Cook each patty for 2-3 minutes without moving until the bottom is well browned and crisp.

Flip and cook other side

Flip the patties and fry for another 2-3 minutes until golden brown and fully cooked through.

Ensure doneness

Since the batter contains egg, make sure the boxty is cooked completely by checking for no raw egg spots and a firm texture.

Serve

Serve hot with sour cream or melted butter on top for a delicious traditional experience.
