ZUPPA DI PESCE - ITALIAN SEAFOOD SOUP

mussels

300 g clams (vongole)

prawns

salmon

octopus

750 ml Vegetable or Fish stock

olive oil

garlic

red chilli flakes

brown onion (finely chopped)

saffron strands

fennel (thinly sliced)

250 ml 250 milliliters white wine

500 g Val Verde Passata

oregano

½ lemon

parsley leaves and fennel fronds (chopped)

black pepper

Add mussels and clams to a large heavy-bottomed pot along with 750ml vegetable/fish stock. Cover and cook over medium heat for 3 minutes, shaking pan occasionally until mussels and clams have opened up. Remove from heat. Strain and reserve the stock for the soup. Discard any unopened mussels and clams.

Heat a tablespoon of oil in a large cast-iron frying pan on medium-high heat. Cook fish and prawns for 1-2 minute until seared and starting to char. Remove from heat and set aside.

In the same pan, cook tentacles for 30 seconds on high heat until just cooked. Remove and set aside.

To Prepare The Seafood

Heat the remaining 2 tablespoons oil on medium-high heat in a large wide pan. Add garlic and chilli. Sauté for a few seconds. Add onion and fennel. Sauté for 3-4 minutes until the onion is caramelized. Add the pinch of saffron. Mix well. Add wine to deglaze the pan and mix all the brown, sticky bits.

Add Val Verde Passata, the reserved stock, oregano and lemon juice. Mix well. Reduce heat to medium and simmer uncovered for 15-20 minutes to develop flavours.

Add the mussels, clams, fish, prawns, octopus/squid and mix well. Cook for a further 1-2 minutes until heated through.

Remove from heat. Sprinkle with black pepper, garnish with parsley and fennel.  Drizzle with extra virgin olive oil.

Serve with crusty bread.

To Make The Soup

Torta Pasqualina is a traditional Italian Easter pie. This delicious recipe has layers of buttery puff pastry and a spinach ricotta filling with whole eggs nestled in the filling!

Torta Pasqualina

Heat 1 teaspoon of olive oil in a very large skillet or dutch oven over medium heat. Add in the spinach and cook, stirring occasionally, until wilted. Remove the spinach from the pan and set aside to cool and drain.

Wipe out any excess moisture from the pan using a paper towel, then return to medium heat and add in 1 teaspoon of olive oil. Add in diced onion and cook until softened, about 2 minutes. Stir in the minced garlic and cook for a minute; remove from heat.

Once the spinach has cooled, squeeze out the excess moisture and chop finely. Place in a large mixing bowl along with the cooked onions and garlic, ricotta cheese, grated parmesan, 2 beaten eggs, salt, pepper, and nutmeg. Mix until all of the ingredients are well combined.

Preheat oven to 400 degrees. Grease a 9-inch springform pan with nonstick cooking spray.

Use a rolling pin to flatten out one sheet of puff pastry and press into the bottoms and sides of the springform pan. Cut out a 9-inch circle from the second piece of puff pastry and set aside. (Any excess scraps of dough can be used to press into the sides of the pan.)

Pour the spinach mixture into the pan. Use a spoon to make five deep indentations in the filling. Crack one egg into each of the holes.

Lay the 9-inch round piece of puff pastry over the spinach mixture. Fold the sides over on to the top round piece and pinch edges of puff pastry together to seal.

Use a sharp knife to make small vents on top of the dough to allow the steam to escape. Bake on center rack in preheated oven for 55-60 minutes, or until the pastry is golden and the filling has set.

Let cool on a wire rack for at least 30 minutes before removing the collar from the pan. Serve warm or at room temperature.
