A vibrant panzanella with all the fresh flavors of an Italian Caprese salad.

Caprese Panzanella

grape tomatoes

golden grape tomatoes

basil

mini mozzarella balls (drained)

garlic (minced)

shallot

sour dough bread

butter

olive oil

balsamic glaze

Salt and pepper

Cut all the tomatoes in half and place in a large salad bowl. Tear 12-15 basil leaves into pieces and add them to the bowl. Then add the mozzarella balls, garlic and sliced shallots to the bowl.

Place the butter in a large skillet over medium heat. Once it has melted, add the bread cubes to the skillet and toss to coat in butter. Toast the bread cubes on all sides until they are golden and crispy.

Add the toasted bread cubes to the salad. Toss, and salt and pepper to taste. Drizzle with olive oil and balsamic glaze and serve immediately.

(6 ounce) package of cherry tomatoes, halved

In a large pan over medium heat, add cooking spray and cook sausage, for 4 to 5 minutes, until it is brown and no longer pink.

Add garlic and cook for 1 minute, until fragrant.

Add vegetable broth and tortellini. Raise heat to high and cook for 8 minutes, stirring occasionally. Cook until pasta is tender.

Reduce heat to medium. Stir in tomatoes. Cook for 2 minutes, until tomatoes soften.

My whole family loved this. So good and so easy. I will definitely make it again.
