This easy Italian Meat Sauce is perfect when making Lasagna or Baked Ziti or whenever you just want to add a little meat to a Marinara sauce.

Italian Meat Sauce (or Gravy)

onions

garlic (minced

beef

lb sausage (hot

28 oz cans crushed tomatoes

tomato puree

water

basil (chopped)

salt (to taste)

pepper (to taste)

Heat 3 tbsp of olive oil in a large Dutch oven or sauce pot.  Once heated, add the chopped onions.  Cook for about 5 minutes until they begin to soften.

Add the garlic (you can either mince the garlic and leave it in the sauce during cooking, or you can halve the garlic and remove it after you cook it for about a minute with the onions).

Add the ground beef and sausage.  Break up and cook until browned.

Add the canned crushed tomatoes and puree.  Season with salt and pepper to taste.

Add the chopped basil.

Bring to a boil, then drop the heat, cover and simmer on low for at least 30 minutes but preferably at least 2 hours.

Spaghetti Sauce (The Best)

lb (675 g) sweet

lb (675 g) lean ground beef

olive oil

onions, finely chopped

carrots,

celery,

garlic,

5 1/2 oz (156 ml) tomato paste

28 oz (796 ml) diced Italian tomatoes

28 oz (796 ml) tomato sauce tomatoes

beef broth

(10 ml) dried oregano

cloves

Salt and pepper

In a large saucepan, brown the meat in 30 ml (2 tablespoons) of the oil, half at a time, with the red pepper flakes. Add oil, if needed. Season with salt and pepper. Set aside in a bowl.

In the same saucepan, soften the onions, carrots, celery, and garlic in the remaining oil. Season with salt and pepper. Add the tomato paste and cook for 1 minute over high heat.

Add the meat, tomatoes, tomato sauce, broth, oregano, and cloves. Bring to a boil and simmer gently, stirring and scraping the bottom of the pan regularly, for about 3 hours or until it thickens. Serve over the pasta of your choice.

Hello. New cooker here. Please help me. For following; 
"2 cans 28 oz (796 ml) diced Italian tomatoes
2 cans 28 oz (796 ml) tomato sauce ..."
Are the listed ml the TOTAL amount or the amount of EACH can should be and thus we need 2?  I ask because diced tomatoes only come in 796ml cans where I shop.

Celery is defined differently in most countries.
CDN sticks=ribs. That's a single 'rib' of celery.
CDN brunch=stalk.
I think it is the same definition as in the US.

You will find in many recipes that there is an equal number of carrots as celery. So 4 carrots = 4 sticks, or 'ribs' of celery.

Add in 1-2 bay leaves, extra oregano, parsley flakes and extra salt.  Its a great recipe just does need a little more for the volume.

Husband and guests found that this taste like homemade catelli. I’ve never eaten catelli, but seeing as it’s canned spaghetti sauce I didn’t exactly take it as a compliment. I like it, but I prefer my own sauce which is even simpler but is full of fresh herbs. This sauce lacks depth. It needs fresh basil, thyme, and oregano. I also had to add a bit of honey to cut the acidity of the tomatoes (and it did wonders). Overall it’s good, but there are better sauces out there.

when you say cloves you mean like cloves you use on ham, how to you remove them after or do you

Excellent flavor with a slight kick from the chilli flakes, cloves add a pleasant aroma and taste. Sauce boasts a rich red eye appealing  color .    I have about a cup of red wine I am contemplating adding .  However, this sauce tastes fabulous as is!!!!

Must admit that i'm very disappointed with this recipe. In my opinion it lacks in flavor. It needs more punch. All i can taste is the tomatoes. unfortunaltely the taste of the italian sausage gets lost in this sea of tomatoes. It's a decent base but i would suggest adding whatever ingredients fits your palate because it's pretty much flat. A couple tsp of oregano isnt nearly enough to properly flavor the sauce.

We were visiting friends in the summer and they served this for dinner - we never ask for seconds and both did on this occasion! My friend shared the recipe and I've now made this several times as it has become our favourite pasta sauce. We're addicted!

Garlic: remove the sprout or not?

This Authentic Italian Sunday Gravy is what I grew up eating every week. Nana's tomato meat sauce holds a fond place in my heart, and her recipe lives on to this day in my recipe box. It's my most requested recipe and today I'm sharing it with you.

Authentic Italian Sunday Gravy (Nana's Meat Sauce)

pork spareribs

beef stew meat

sausage

garlic (peeled and left whole)

tomato paste

tomatoes

basil

Salt and Pepper (to taste

Tablespoon sugar (more or less based on the flavor of your tomatoes)

Parmesan (shaved, for topping)

Pasta

Heat the oil in a large heavy pot over medium heat.

Pat the pork dry and put the pieces in the pot.

Cook turning occasionally, for about 15 minutes or until nicely browned on all sides.

Transfer pork to a plate.

Brown the beef in the same way and add it to the plate.

Place the sausages in the pot and brown on all sides.

Set the sausages aside with the pork and beef.

Drain off most of the fat from the pot.

Add the garlic and cook for about 2 minutes or until golden.

Remove and discard the garlic.

Stir in the tomato paste and cook for 1 minute.

Add the tomatoes to the pot.

Add the water; season with a pinch salt and pepper.&nbsp;

Return the pork, beef, and sausages to the pot and bring sauce to a simmer.

Partially cover the pot and cook over low heat, stirring occasionally, for at least 2 hours.

If the sauce becomes too thick, add a little more water.

At the end, add sugar, to taste, and adjust your seasonings one more time with salt and pepper. Add basil leaves and serve over your favorite pasta, topped with shaved Parmesan.

Bolognese Sauce Recipe

pork ((patted dry))

extra virgin olive oil

oz pancetta

yellow onion ((from 2 medium-size onion))

carrots ((from 2 medium-size carrots))

dry red wine

oz San Marzano peeled tomatoes

milk

oregano

broth ((beef

rosemary

cheese

parsley

In a large deep skillet or  sauté pan, heat the olive oil over medium heat. Add the pancetta and cook for 2 minutes. Stirring occasionally.

Add the onion, carrots, and celery and saute for about 8 minutes. Season with a pinch of salt and pepper.

Add garlic, and rosemary into the skillet. Cook for about 1 minute.

Turn the heat to medium-high, push the soffrito to the side of the skillet, then add the ground chuck beef and minced pork to the skillet. Saute, stirring frequently and breaking up any large lumps. Continue cooking for about 8-10 minutes. The meat should be lightly browned but not crisp.

Add the tomato paste into the skillet, stir for about 30 seconds.

Lower the heat then pour in the red wine and let it simmer until the liquid is reduced in half or evaporated.

Add the tomatoes, milk, oregano, and broth. Bring to a boil then reduce the heat to low. Simmer, uncovered for about an hour or an hour and a half or until you reach the desired thickness and taste.

Season to taste with salt and pepper.

Serve with pasta.
