Italian S cookies have a light and buttery texture, are flavored with lemon and vanilla, and are the perfect shape for dunking into a cup of coffee!

Italian S Cookies

eggs (room temperature)

lemon zest

vanilla extract

(400 grams) all-purpose flour

(170 grams) unsalted butter (cubed and room temperature)

(200 grams) granulated sugar

fine sea salt

baking powder

water

turbinado sugar

In a small bowl whisk the eggs, lemon zest, and vanilla.

In a large bowl mix together the flour, salt, baking powder, butter, and sugar until small crumbs form.

Make a well in the middle of the large bowl, then add the contents of the small bowl and mix until just combined.

Place the dough onto a lightly floured surface, then knead gently for a few seconds until a ball forms.  Wrap the dough in plastic and refrigerate for at least 30 minutes.

Preheat oven to 375f and set the rack to the middle level.  Line 3-4 baking sheets with parchment paper.

Remove the dough from the fridge and divide into quarters.  Take a portion of the dough and roll an approximately 1/2&quot; thick by 5&quot; long rope.  Form an &quot;S&quot; shape and place it onto the baking sheet.  Repeat for the remaining dough.

Optional - brush the cookie with the egg yolk and water mixture and sprinkle with turbinado sugar.

Bake for 13-18 minutes or until golden brown.  Let cookies rest for 5 minutes before transferring to a wire rack to further cool.  Enjoy!

Italian S Cookies / Esse Biscotti

egg yolks (room temperature)

all-purpose flour (at least 11% protein)

salt*

butter

In a small bowl lightly beat the egg yolks, whole egg, zest and vanilla.

In a large bowl add the flour, make a well in the middle and add the butter, sugar, salt and egg mixture.  With a fork mix until almost combined, then move to a lightly floured flat surface.  Knead gently to combine (don&#39;t over knead).  Dough will be soft.  Wrap in plastic and refrigerate one hour.

Pre-heat oven to 400 F (200 C).  Line 2 baking sheets with parchment paper.

Remove dough from the fridge and break off small pieces of dough, soften the dough slightly between your finger and roll into approximately 4-6 inches,  to form into an S shape.  Place on prepared cookie sheets and bake for 10 minutes, reduce heat to 320F (150C) and bake for another 10-15 minutes or until lightly golden. Let cool 5-10 minutes on the baking sheet then move to a wire rack to cool completely. I left my dough overnight and WOW!  My husband said they were the best cookies I’ve ever baked!  Thank you!!!  This will stay in my recipe box.  By the way, I used it to make thumbprints with my grandma’s Italian filling, and then some with apricot jam, YUM!

These traditional Italian cookies have a lovely lemon flavor, a little bit of vanilla, and are sweetened with just the right amount of sugar. These crunchy cookies are ideal dunked in a coffee for breakfast or enjoyed on their own as part of a cookie platter or afternoon snack. For a more tender variation on this cookies, see the Notes section below.

Italian S Cookies Recipe

(375 grams) all purpose flour (See Note 1)

(115 grams) cold unsalted butter (Cut the butter into small pieces.)

(200 grams) granulated white sugar

lemon

salt

eggs (at room temperature)

whole milk (if needed)

Line two large baking sheets with parchment paper. Preheat the oven to 350ºF/180ºC.

In a large bowl, combine the butter with flour. Rub the flour and butter with your fingertips until the mixture resembles fine breadcrumbs.

Stir in granulated sugar, baking powder, and salt. Make a well in the middle and add the eggs, vanilla extract and lemon zest,.

Use a fork to whisk together the eggs and gradually bring in and incorporate the other ingredients and the flour mixture.

When it becomes too hard to use a fork, use your hands to gently press, squish, and knead the mixture until it forms a smooth, but firm dough. Add 1-2 tablespoons of milk if the dough seems too dry. Form into a ball.

Cut the dough ball into quarters then divide the quarters in half. You will have 8 even portions.

Take one portion and roll it into a 6 inch (15 cm) long log. If it helps, dust the counter with extra flour. Cut the log into 6 even pieces.

Roll each piece into 4 inch (10 cm) long sticks and form the shape of an “S”.

Transfer the cookies to a prepared baking sheet and bake for 12-15 minutes or until golden brown. All ovens vary, so check after 10 minutes if your oven runs hot.

Transfer to wire rack to cool completely. These cookies will become crunchier as they cool.

I love this recipe, it’s the best one I’ve found!  Im still doing something wrong though.  They taste great but look lumpy.  Any ideas?  I would love to make these more often but I’m so discouraged.  Lumpy S’s

I’d previously used a recipe that made very soft, egg-rich cookies. This recipe employs an unusual technique that results in the best of both worlds, soft and well flavored yet also crispy. I added a simple glaze drizzle and colored sugar. They hold their shape better, better texture for dunking and richer in flavor. Bonus: fun to make.

These are delicious!  I was trying to replicate a recipe from my favorite Italian bakery and these were identical.   Directions were easy to follow, too.  Thanks for helping add a new recipe to my recipe box!
