Easy One Pot Italian Sausage Pasta

Italian Sausage (casings removed)

onion

red bell pepper (diced)

Heat a large heavy-bottom skillet over medium heat and add the Italian sausage, breaking it up as it browns.

Once the sausage has browned remove it to a plate lined with paper towel and add the diced onions and bell pepper.

Saute the onion and bell pepper just until soft. Remove them to the plate with the sausage.

Add the canned tomatoes to the pan and use the liquid to scrape all the caramelized bits off the bottom of the pan left from the sausage and the veggies.

Add the pasta and the chicken stock and stir to combine.

Add the lid to the pan and cook for about 7-10 minutes, stirring a few times, until the pasta has absorbed the liquid and is cooked to al dente.

Once the pasta has cooked through, add the sausage and veggies back into the pan along with the spinach. Toss well so the spinach wilts and the sausage and veggies are distributed throughout.

Give the pasta a taste and add salt and pepper, only if necessary.

Top with some freshly shaved Parmesan cheese and serve!

Cook the penne in a large pot of salted water according to the package directions. Reserve 1 cup of the cooking water then drain the pot.

Add the sausage, onion, and garlic to a large frying pan over medium-high heat. Cook, crumbling the sausages with a spoon, until the sausages are cooked, about 6-7 minutes.

Heat broiler. Cook pasta per package&nbsp;directions, drain and return to pot.&nbsp;

In a large, deep skillet heat the olive oil over medium heat. When the oil is hot, add in the diced onions and sauté for 5-6 minutes, until they begin to soften. Add in the ground sausage to the skillet and break the meat apart. Cook until no pink remains. Drain excess grease and return the to heat.

With the heat still on medium, add in the garlic, basil, oregano, salt, red pepper, and flour. Cook for 1 minute, stirring constantly to coat.

Add in the tomato sauce and broth and stir to combine. Bring to a boil and simmer for 15 minutes.

While sauce is simmering, boil the Cavatappi pasta according to pasta directions. Drain.

Add the half and half and pasta to the sauce, stirring to combine. Add in the grated cheese and stir until melted.

Garnish with parsley and grated Parmesan if desired and serve immediately.

I would have given 5 stars but I did tweak it. I used 1.5 tsp of salt. No basil(I didn't have any) so I increased the oregano to 1.5tsp. I used grated parmesan instead of the white cheddar and I used about 1/2 a cup (I eyeballed it) came out absolutely fantastic. I would definitely make this again.

I made this last night with the following adjustments: 1 lb each of ground beef and sweet Italian sausage, 2 cups of heavy whipping cream (that's all I had) which made it super creamy. I was concerned with the saltiness, so I added it 1/4 tsp at a time until I reached the perfect saltiness. I allotted for the saltiness of the cheese and kept it a little undersalted until after I added it at the end. I ended up adding a little more salt. I did not add parmesan. This is definitely a quick-and-easy weeknight recipe I will be using again and again. Thank you :)

dry white wine (can sub chicken broth)

butter

garlic (minced)

parmesan cheese (grated)

mozzarella cheese

½ lb. cavatappi pasta (can sub penne)

¼ cup half and half

Worcestershire sauce

hot sauce (I use Frank’s hot sauce)

½ beef bouillon cube (see notes)

¾ teaspoon EACH: dried oregano, basil, parsley, mustard powder

Pro Tip: If you prefer to use the oven to melt the mozzarella on top (in the last step), preheat oven to 350°.

Combine sauce ingredients in a large measuring cup with a spout and set aside. Measure remaining ingredients before beginning.

Heat a large skillet over medium-high heat and add the sausage. Cook and crumble for 3 minutes, then add the onions. Stir occasionally  until the onions are softened and the sausage is cooked through, 5-6 minutes. Drain grease and set aside on a plate. Turn the heat off.

Begin boiling a pot of water for the pasta. Add ½ tablespoon salt once a boil is reached.

Add the wine to the same skillet used to cook the sausage and set the heat to medium. Let it bubble gently and reduce by half, about 4 minutes. Use a silicone spatula to “clean” the brown bits from the pot and work it into the wine, this will give the sauce more flavor.

Add the butter, garlic, and flour and stir to combine. Cook for 1-2 minutes.

Add the sauce mixture (from step 2) in small splashes, stirring continuously. Do this slowly to ensure the roux doesn’t break and that the sauce remains thick.

Add the diced tomatoes along with the juice from the can. Bring to a boil, then reduce to a simmer. Add the sausage/onions back and stir to combine.

Simmer, partially covered, while you boil the pasta to al dente, stirring occasionally as it cooks. Drain once cooked.

Reduce heat to low. Gradually sprinkle the Parmesan into the sauce, stirring continuously. Sprinkle in 1/3 of the mozzarella, saving the rest for the top.

Stir in the cooked pasta.

Top with remaining mozzarella cheese. Close the lid and allow the cheese to melt. (Or transfer to a 350° F oven for 3-5 minutes or so.) Serve!

I have made this 4 times and love it!  We live on an island with rural farms, and I get hot Italian sausage from a local pork producer.  This time I left it a little chunky rather than crumbling - yum!  I leave out the tomato paste and the red wine as we don't like the taste of either.
