fresh cheese tortellini (about 3 cups)

Add Italian sausage to a large soup pot and cook over medium-high heat until browned. Drain any excess fat.

Add carrots, onion and celery. Cook and stir until onion has softened.

Add Italian seasoning, garlic and salt and cook 1 minute.

Add broth, tomatoes and tomato sauce and bring to a simmer over medium-high heat. Reduce heat to medium, cover, and simmer for about 15 minutes, until carrots are almost tender.

Stir in tortellini. Cover and simmer for 5-6 minutes until tender. Serve.

This Italian Sausage Tortellini Skillet recipe is packed with tender tortellini, luscious tomato sauce, flavor-filled Italian Sausage and lots of wholesome veggies. It is the perfect crowd pleasing recipe that kids love as much as adults! But the best part is how quick and easy it is to make!

Italian Sausage Tortellini Skillet

lb Italian sausage (ground)

onion

carrots (finely diced)

garlic (pressed)

baby spinach (fresh)

marinara sauce ((23 oz))

beef broth

tsp salt

oz cheese tortellini (frozen)

parmesan cheese (freshly grated)

In a large skillet, brown the Italian sausage over medium heat, stirring and breaking up as you cook.

Remove the sausage from the skillet and cook the onions and carrots in the grease from the sausage until the onions are translucent and the carrots are soft. Stir in the pressed garlic.

Add the marinara sauce, broth, Italian sausage, and salt and stir to combine.&nbsp;

Stir in the tortellini and continue to cook over medium heat. Once the sauce starts to bubble, reduce the heat to low, place the lid on the skillet and simmer for 5 minutes.

After 5 minutes remove the lid, turn the heat back to medium and stir in the spinach. Continue to cook for 3-5 more minutes until the spinach has wilted, the tortellini is soft and the sauce is thick.

Remove from heat and top with parmesan cheese. Serve hot. Enjoy!

These Lasagna Stuffed Peppers are filled with all of the flavors of Lasagna, but made in a fraction of the time as the traditional dish.

Lasagna Stuffed Peppers

bell peppers (large)

lb beef

lb sweet Italian sausage (mild)

tomato sauce ((1 can))

Italian seasoning (dried)

tsp black pepper

ricotta cheese

egg (large)

tbsp parsley (fresh, finely chopped)

mozzarella cheese (grated)

In a large skillet, brown the sausage and beef over medium heat, breaking up as you go.&nbsp;

Once the meat is no longer pink, drain the grease and return the meat to the skillet.&nbsp; Add the tomato sauce, Italian seasoning, salt, pepper, and garlic. Then cook over medium heat, stirring regularly for 3-5 minutes.

To make the ricotta topping, combine the ricotta, parsley, 1/4 cup parmesan, and egg and mix until combined.

Cut the bell peppers in half, remove the stem, ribs and seeds and rinse them off. Place them cut side up, in a large casserole dish.

Fill the hollow of each pepper with 1/6th of the meat mixture.

Make a divot in the middle of the meat, and add a generous spoonful of the ricotta. Top each pepper with mozzarella cheese.

Pour 1 cup of chicken broth into the bottom of the dish. Cover with aluminum foil and bake at 350˚F for 30-40 minutes or until the peppers are tender.&nbsp; Optional: At the end, turn the oven to broil for 1-3 additional minutes to brown the cheese on top.

Remove from oven and garnish with parsley if desired. To serve remove peppers from the broth and serve with rice, pasta, cauliflower, or zoodles. Enjoy!
