Amazing recipe. One thing I did, and recommend doing having made this recipe with and without, is adding 1/2 cup of red wine (you could use white too for a different flavor profile) after cooking down the celery, onions, carrots, and garlic. It deglazes the pan and loosens up those yummy parts stuck to the bottom of the pan and also adds more depth to the soup.

This is my husband’s favorite soup. I definitely use more broth then the recipe calls for because the pasta soaks it up. Also use I box broth and one box stock for a richer flavor.

This is a great ratio recipe.  I added 3 tbsp of tomato paste at beginning, 1 cup of white wine  to deglaze after 10 minutes  and 3oz (2 cups) fresh chopped spinach.   I added 300g (12 oz) of dry fried mushrooms at the end.   A great recipe tweaked to our tastes

I made this tonight. I used what I had. I had chorizo. Everything else was the same. I added the rosemary but I didn't chop it. I just put the whole spring in, also added a sprig of fresh thyme. I had tubettini so that's what I used. The broth was excellent before adding the pasta. I hope there is some left after the pasta cooks.

Very good, but it takes way more than 20 minutes.  The carrots were hard after 20 minutes.  Takes at least an hour to cook

This recipe is so easy and so Delish!!!  Its 90 degrees out, but I'm craving my Pasta e Fagioli.  Very tasteful, and soothes your belly!!!  Love Delish recipes!

My cousin made this. A M A Z I N G dish... soup er yummy. Cant wait to make it.

I made this today and its delicious! The only things I did differently was I used 1lb of Italian sausage instead of a half pound. I also added about a tbsp of vegeta seasoning which is great for most any recipes with a chicken broth base and I used 2 cups of ditalini as opposed to 1.5 cups. Theres a lot of broth so 2 cups won't soak it all up. I omitted the rosemary because I've never been a fan of it.

Pasta E Fagioli Is The Only Soup You Need This Winter

Bursting with juicy tomatoes, hearty chickpeas and tender pasta in a light broth, this easy pasta e ceci is the the cozy weeknight meal you&#x27;ve been looking for. The best part: it all cooks up in one pot in about 45 minutes!

Pasta e Ceci

onion, (diced)

carrot, (diced)

celery stalk, (diced)

garlic cloves, (minced)

vegetable broth

rosemary

ditalini pasta ((or another type of small pasta))

Salt and pepper, (to tastes)

Coat the bottom of a large pot with olive oil and place it over medium heat.

Give the oil a minute to heat up, and then add the onion, carrot, and celery. Sweat the veggies for about 10 minutes, until they begin to soften up.

Add the garlic and cook for about 1 minute more, until very fragrant.

Stir in the broth, tomatoes, chickpeas, and rosemary.

Bring the liquid to a boil, reduce the heat, and allow it to simmer for about 10 minutes.

Stir in the pasta and bring the liquid back up to a boil.

Allow the pasta to cook in the soup at a low boil until al dente — this may take a minute or two longer than the time indicated on the pasta&#x27;s package directions. Stir the pot occasionally while it simmers.

Remove the pot from the heat and season with salt and pepper to taste.

Ladle into bowls and serve.

Italian Sausage Soup with Kale and Beans

olive oil, divided

Italian sausage links, turkey

yellow onion, diced

celery stalks,

bay leaf

thyme

Italian Seasoning

salt and pepper,

kale, stems removed and roughly chopped

white cannellini beans, drained and rinsed

cheese,

baguette,

Heat one tablespoon olive oil over medium heat in a large dutch oven or soup pot.

Add&nbsp;sausage and cook for about 8 to 10 minutes. or until browned, stirring occasionally to break into smaller pieces.

Transfer with a slotted spoon to a plate and set aside.

Pour remaining olive oil to the soup pot and heat it up.

Add onions, carrots, celery, bay leaf, thyme, and Italian seasoning; cook for about 8 minutes, or until vegetables are tender.

Stir in garlic, salt, pepper, and continue to cook for 1 minute.

Mix in kale and cook until it starts to wilt, about 1 to 2 minutes.

Stir in beans, prepared sausage, and broth; bring to a boil.&nbsp;

Lower heat to a simmer and cook uncovered for 15 minutes to combine all the flavors.&nbsp;

Remove from heat and take out the bay leaf and sprig of thyme.

Divide soup among bowls and top with cheese.

Serve with a slice of baguette. (optional)

If you love Olive Garden's Minestrone soup, then you will love this easy homemade version! It's so hearty, comforting, and delicious!

Minestrone Soup (Copycat Olive Garden Minestone)

onion

celery (chopped)

carrots

zucchini (chopped)

yellow squash (chopped)

tbsp Italian seasoning

oz tomatoes tomatoes

tomato paste

low-sodium vegetable or chicken broth

oz beans

black beans

ditalini pasta

tsp kosher salt (more

tsp pepper (more

Drizzle olive oil in the bottom of a large dutch oven or deep stock pot.

Add diced onions, chopped celery, carrots and both types of zucchini to the pot and heat everything up on the stove top over medium high heat. Mix everything together and allow it all to cook.

When the veggies have softened, add garlic, a scoop of tomato paste, salt, pepper, Italian seasoning, crushed tomatoes, cannellini beans, black beans, and pasta.

Add a bay leaf then pour the broth into the pot.

Mix everything together. Bring the contents of the pot up to a boil and then down to a simmer. Cook everything together until the pasta reaches al dente.

Remove the bay leaf and the soup is ready to serve! Try serving it with homemade croutons, fresh parsley, and some crushed red pepper.

Hearty Italian Peasant Soup

lb Ground Italian Sweet sausage

med white onion

tbs minced garlic

beef broth

28 oz can crushed italian tomatoes

14 1/2 oz can fire roasted tomatoes

15.5 oz can Cannellini beans

yellow squash

celery

carrots chopped

cabbage

tbs italian seasoning

hot sauce

tsp crushed red pepper flakes

salt and pepper

In a stock pot, over medium heat, cook the ground Italian sausage until browned.

Remove sausage from pot.

Add the olive oil to the pot.

Once the olive oil has warmed, add the onions and cook until transparent.

Add the garlic and cook for a minute or two.

Push the onions and garlic to one side of the pot and add the tomato paste.

Stir the tomato paste until it deepens in color.

Add the sausage back to the pot and stir until onions, garlic, meat and tomato paste are incorporated.

Add the remaining ingredients to the pot and stir.

Bring soup to a boil, then place a lid on the pot and lower heat to a simmer.

Simmer the soup on low for an hour or two, or until the vegetables and soft and cooked through.

Serve with some freshly grated cheese on top and a slice of crusty bread.

This is a soup after my own heart! A must try in this cold weather!
