Italian Stuffed Flank Steak

garlic (minced garlic

shallot (minced)

Tbsp fresh parsley (finely minced)

sage leaves (finely minced)

tsp basil (minced)

Salt and pepper (to taste)

Combine garlic, shallot, parsley, basil, sage, and olive oil in small bowl.

Slicing horizontally across the steak, butterfly and pound flank steak into 2 thin rectangles. Position steak so that the grain runs parallel to the edge of the counter, spread herb mixture evenly over surface of steak.

Lay prosciutto evenly over steak, leaving 1-inch border along top edge.

Cover prosciutto with even layer of cheese, leaving 1-inch border along top edge.

Starting from bottom edge and rolling up away from you, towards the top, roll steak into tight log and place on cutting board seam-side down.

Starting in the middle of the steak roll, tie a piece of kitchen twine to secure the steak. Working outward from the center, place more ties of kitchen twine, in one inch intervals, until the whole steak roll is tied up.

Using a sharp knife, slice roll between pieces of twine into 1-inch-thick pinwheels. Season pinwheels lightly with salt and black pepper.

Skewer each pinwheel with a toothpick.

Preheat oven to 350.

Heat a cast iron skillet over medium high heat. Place pinwheels in pan and brown for 3 minutes or so. Flip over and brown on the other side for 2 minutes.

Slide skillet into preheated oven and cook for about 8-10 minutes or until steak reaches desired doneness.

Remove from oven, tent with aluminum foil and let rest for 5 minutes.

Remove twine and toothpicks and enjoy!

Tablespoon Balsamic Glaze (or high quality aged balsamic vinegar)

Whisk balsamic vinegar, extra virgin olive oil and rosemary in a small bowl. Coat beef completely on both sides and let marinate for 30 minutes in the refrigerator. Remove from refrigerator and let stand at room temperature for 30 minutes.

During the last 30 minutes of marinade time, add the greens and tomatoes with the lemon juice and olive oil. Set aside.

Season the steak with salt and pepper.

Oil grates or grill pan with vegetable oil. Heat the grill pan or the outdoor grill on high heat. Turn the grill or pan down to medium high and add steak.

Cook for 6 minutes on one side, or until well caramelized and showing good grill marks. Turn the steak over and cook for another 5 minutes, or until the steak reaches an internal temperature of 130-140 for medium rare.

Remove the steak to a cutting board and slice the steak against the grain as thin as you can get it.

Spread the greens onto a platter and place the meat slices over the salad. The excess meat juices will flavor and help break down the greens.

Drizzle the steak with the high quality olive oil, and then with balsamic glaze or a high quality aged balsamic vinegar.

ribeye steaks (1.5 inches thick)

black pepper

red wine (for sauce)

Remove steaks from refrigerator one hour before cooking

Season steaks generously

Heat cast-iron pan

Cook steaks

Finish in oven

Rest steaks

Make pan sauce

Easy Steak Tagliata

500 g (1lb) fillet / beef tenderloin

tsp salt

sundried tomatoes

soy sauce

lemon juice

garlic (crushed)

tsp finely chopped rosemary

salt and pepper (to taste

Parmesan cheese

fresh rocket/arugula

Drizzle the beef with a generous amount of olive oil and season with salt.

Cook in a hot pan or on a hot grill until cooked to your preference. I prefer the steak to be cooked rare to medium rare so I cooked it for approximately 3-5 minutes per side.

Remove the steak from the heat and allow to rest for at least 10 minutes before slicing thinly.

 Finely chop the sundried tomatoes and crush the garlic.

Place in a bowl and add the olive oil, lemon juice, rosemary, soy sauce, salt and pepper.

Mix well. (This step can also be done in a food processor if you prefer a smoother dressing). 

Layer the slices of steak on a serving plate then drizzle over the dressing. Top with Parmesan shavings and rocket/arugula and serve. 

Very quick and tasty - but next time I’ll reduce the amount/ratio of soy in dressing. 1/4 cup soy made it too salty for me. And I/welike a salty taste profile 
Otherwise, delicious. Added more arugula, made it more of a salad, served with garlic roasted cubed potatoes. Used grilled strip loin. Worked very well
