Watermelon Feta Salad

c. extra-virgin olive oil

tbsp. red wine vinegar

kosher salt

c. watermelon

c. medium cucumber, chopped

c. crumbled feta

c. red onion, thinly sliced

c. mint

I make this salad about once a week,  especially during the heat of summer.   Great stuff! Sadly it does not keep well,  overnight at best.   However,  it's easy to make so doing it repeatedly isn't all that difficult.

I have made this watermelon salad twice now and it is awesome just follow the recipe quick and easy and refreshing

Simple and fast. Soak onions for 15 minutes as suggested. Don’t toss the salad for too long. That’s what he said.

Wow!!!!! Was not expecting this to be as amazing as it was! It was off the charts! Between 2 people, it was gone in half an hour! Wonderful recipe!!

This Watermelon Salad Wins Summer

Jacques Pepin shares what he calls his greatest recipe of all time: a whole chicken stuffed with sausage.

chicken (about 3 ¾ pounds)

de-boned

salt

¼ teaspoon freshly ground pepper

olive oil

breadcrumbs

shallots

garlic

sweet Italian sausage

scallions

mushrooms

celery

white wine

Parmesan

pepper

brown stock

parsley

Chicken Ballotine Stuffed with Sausage | Jacques Pepin

De-bone the chicken, reserving the bones for stock or soup

Lay the chicken skin-side down on a work surface, sprinkle with the salt and pepper and set aside

For the stuffing, thoroughly combine the ingredients in a large bowl

Spread the stuffing evenly over the chicken, including the inside of the legs

Roll up the chicken and tie with kitchen twine

Heat the oil in a large skillet over medium-high heat and brown the chicken for a few minutes

Transfer the skillet to the oven and roast for about 1 hour

Lift the chicken from the pan and place on a platter, reserving the pan

For the sauce, add the brown stock to the drippings in the pan and bring to a boil, stirring to mix in any solidified juices on the bottom of the pan

Transfer the ballotine to a cutting board and remove the twine

Cut half of it into 4 or 5 slices, each about 1 inch thick

Return the uncut half to the platter and arrange the cut slices in front of it

Pour the sauce over and around the ballotine, garnish with the parsley and serve

Cut additional slices of ballotine as needed at the table

This recipe appears in several of Jacques Pépin's cookbooks with slight variations. This version is modified from the recipe on epicurious.com.

unsalted butter, softened

black pepper

dry white wine

shallots, peeled and finely chopped (about ⅓ cup)

large, oval country-bread loaf (about 1½ pounds)

sea scallops

Salt and black pepper

dry white vermouth

½ cups ½-inch sliced leeks

carrots

(4 leaves) fresh sage (optional)

thyme

boneless

chicken breasts (about 1 ¼ pounds total)

mayonnaise

mustard

red wine vinegar

sriracha

chives

olive

tomato

arugula

For the chicken, combine all the ingredients except the chicken in a large pot, bring to a boil and boil gently, covered, for about 5 minutes

Add the chicken, bring back to a boil, and boil gently, covered, for 1 ½ minutes

Set aside off the heat for 20 to 30 minutes to continue cooking the chicken in the broth

Meanwhile, for the dressing, combine all the ingredients in a small bowl

Remove the chicken from the broth and let cool

(Reserve the broth to make soup, if you like; see Tip

) When the meat has cooled, shred it into pieces and combine with the dressing in a bowl

To garnish, if you like, arrange a slice of hard-cooked egg on each plate to simulate the head of a chicken and add a slice of olive to make an eye

Pieces of tomato skin can form the comb, wattle, beak and feet

Place about ½ cup of arugula next to each chicken head and cover with some chicken salad

Arrange chives on top to imitate feathers

Legendary French chef Jacques Pepin calls this easy, comforting chicken + rice dish— which his wife loved—"a great, satisfying dinner."

Jacques Pepin's Wife Loved This Easy Chicken + Rice

bone-in

chicken

skin removed and reserved

½-inch diced chorizo (about 4 ounces)

onion

Italian seasoning

cilantro stems (frozen is fine)

sriracha or other chili garlic sauce

Fine sea salt and pepper

Carolina rice

capers

saffron (optional)

Arroz con Pollo | Jacques Pepin

Heat 2 tablespoons of the oil in a large skillet over medium heat

When it is hot, add the chicken and chorizo

Brown each side of the thighs for about 8 minutes

Add the onion, garlic and Italian seasoning and cook for 5 minutes

Add the tomato, cilantro stems, sriracha and 1 teaspoon salt and cook for another 3 minutes

Stir in the rice, water, capers and saffron (if using)

Bring to a boil, then lower the heat, cover and cook for 30 minutes

While the chicken cooks, place the reserved chicken skins on a parchment-lined baking sheet

Drizzle lightly with the remaining 1 tablespoon olive oil and season with salt and pepper

Place another sheet of parchment over the top of the chicken skins and top with another baking sheet to weight it down

Bake in the oven for 20 to 25 minutes until crispy

Serve chicken and rice with crispy chicken skins

Curly Dogs with Pickle Relish

dill pickle

cut into 1/4–inch dice (about 1/4 cup)

mild

(1/4-inch)

scallion

ketchup

chili sauce

sugar

dogs

peanut oil

hamburger bun

(about 2 ounces)

For the relish, combine all the ingredients in a bowl

With a sharp paring knife, cut the hot dogs lengthwise about halfway through the meat

Then make crosswise cuts in each one, spacing them about 1/3-inch apart and cutting about halfway through the meat; you should have about 12 cuts on each hot dog

Add the hot dogs and cook over medium heat for about 3 minutes, shaking the pan so the hot dogs roll over and brown on all sides

Meanwhile, toast the bun until it is crusty

Place a curly dog on each bun half, curling it into a wheel

Spoon some relish into the centers and serve
