A quick and easy, old favourite cookie recipe that everyone loves. Also perfect baked and packaged as a gift.

Jam Drops

(1/2 cup / 1 stick) unsalted butter, room temperature

(1/2 cup) caster sugar sugar

vanilla extract

1 egg yolk

(1 and 1/4 cups) plain flour or all purpose flour

baking powder

salt

(1/4 cup) raspberry jam

Line two cookie sheets with baking paper or parchment paper.

In a large mixing bowl, add butter and sugar and beat using an electric mixer on medium speed until combined and creamy. Add vanilla and egg yolk and beat briefly, just until combined.

Add flour, baking powder and salt and beat briefly until a soft cookie dough forms. It may appear dry and crumbly. Just use a spatula (or your hands) to give it a good stir and a soft cookie dough should form.

Scoop balls of cookie dough (approximately 1.5 tablespoons each) and roll them into smooth balls using your hands. Place cookies on prepared trays, leaving room for them to spread out.

Use your finger or thumb to press a shallow indent in the middle of each ball of cookie dough, about one third of the way into the cookie (see photo below). Fill each hole with jam (approximately 1/4 teaspoon per cookie).

Place cookies in the fridge for 30 minutes to chill. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.

Bake cookies for 11-12 minutes or until the cookies naturally spread out and are slightly golden on the edges. Leave to cool for 5-10 minutes before transferring to a wire rack to cool completely. Top up holes with extra jam, if desired. 

Our old fashioned jam drops are the most delicious melt-in-your mouth thumbprint cookies filled with sweet jam! Made from just 6 ingredients with less than 10 minutes preparation time!

220 g (1 cup) caster sugar

300 g (2 cups) plain flour (sifted)

tsp baking powder

jam (any flavour)

Preheat oven to 170 degrees celsius (fan-forced). Grease and line two baking trays with baking paper.

Beat the sugar and softened butter with electric beaters or a stand mixer until light and fluffy.

Add the egg and continue to mix until combined.

Sift in the plain flour and baking powder. Stir gently to combine.

Roll the mixture into small balls (2 teaspoons of mixture per ball).

Place the cookie balls onto the baking trays and use the tip of your little finger to create an indent in the middle that goes apprximately one-third to one-half of the way down).

Place a very small (TINY!) amount of jam into each indent.

Place the trays into the fridge and chill for 30 minutes.

Bake the cookies for approximately 10 minutes or until lightly golden.

Leave the cookies on the baking trays for 10 minutes and then transfer to a wire rack to cool completely.

Conventional Method

Cream the butter and sugar for 20 seconds, Speed 4. Scrape down the sides of the bowl and repeat for a further 20 seconds, Speed 4.

Add egg and mix for 10 seconds, Speed 4.

Add flour and baking powder and mix for 20 seconds, Speed 5.

Thermomix Method

Recipe video above. Buttery vanilla shortbread biscuits filled with jam, made the old fashioned way - because you can&#39;t improve on perfection! I&#39;m a little more generous on the jam than typical recipes, and insist on baking the jam into the cookie rather than filling the dent in afterwards (it&#39;s just not the same!).I also insist on making this the traditional way using your thumb to make the dent (hence the recipe name Thumbprint Cookies). Use any flavoured jam you want, though strawberry and raspberry are popular choices (strawberry is pictured), apricot is also common.

Jam Drops (Thumbprint Cookies)

(2 sticks) unsalted butter, softened

sugar

tsp vanilla extract

egg (, at room temperature (~50-55 grams/2 ounces))

plain flour ((all-purpose flour))

tsp cooking salt / kosher salt

Cream butter and sugar. Beat in vanilla, egg and salt, then beat in flour. Roll 3cm/1.2&quot; balls (#60 cookie scoop), flatten, indent, fill. Bake 14 minutes 180°C/350°F (160°C fan), cool on tray.

Abbreviated steps for baking pros:

Preheat the oven to 180°C/350°F (160°C fan-forced). Line 2 trays with baking paper/parchment paper.

Cream butter and sugar - Beat the butter and sugar until creamy - about 1 1/2 minutes on medium speed using an electric beater or stand mixer fitted with the paddle attachment.

Crumbly dough - Add the vanilla, egg and salt, then beat for ~20 seconds until incorporated. Add the flour and salt, then beat until you cannot see white flour. The mixture will be crumbly.

Form cookies - Measure out 1 tablespoon of mixture, very tightly packed (#60 cookie scoop). Tap out onto your hand, scrunch in your first to press into a dough then roll into a smooth ball (3cm/1.2&quot;). Flatten into a 1.25cm disc (1/2&quot;) then use your thumb to make an indent. (This method avoids cracks, see Note 3).

Fill - Place cookie on the tray, and repeat to make 25 - 28 cookies, leaving 3.5cm / 1.5&quot; between each. Fill the indent with slightly heaped 1/2 teaspoon jam (Note 4).

Bake for 14 minutes (both trays at the same time), or until the edges are light golden and the surface is pale golden. Rotate and switch the tray shelves at the 10 minute mark, so they cook evenly.

Cool fully on the tray (the base will finish cooking). Then grab and devour!
