Japanese Mochi Pancakes. Soft, chewy and so delicious! Unlike your average pancake where they are chewier than fluffy. Perfect for breakfast or brunch. These are dairy-free.

Easy Japanese Mochi Pancakes

Coconut oil (for greasing the pan)

all purpose flour

glutinous rice flour

tsp baking powder

tsp salt

oat milk (or milk of choice)

tbsp coconut oil (melted)

tsp vanilla extract

maple syrup

In a large mixing bowl, mix dry ingredients together.  Then add in wet ingredients and mix.

In a small greased pan set over medium heat, add 1/3 cup of batter. Cook on one side for 4 minutes until golden brown. Flip and cook on the other side for 2 minutes.

Serve with maple syrup and fresh fruit.
