Japanese Rice made with short-grain brown rice and seasoned with rice vinegar, sesame oil, furikake, and scallions - a simple tasty side dish to serve with fish and meat, or in bowls.

Japanese Rice

short-grain brown rice

water

salt

scallions, sliced (white ends separated)

sesame oil

rice vinegar

– 1 teaspoon furikake seasoning (or sub toasted sesame seeds)

Rinse the rice, or if you have time, soak for 20-30 minutes. Drain.

Add rice, water, salt, white ends of scallions, and sesame oil, to a medium pot, and mix and bring to a simmer.

Cover tightly, lower heat to low, and cook at a gentle simmer until the rice soaks up all the water, about 45 minutes. Check at 35-40 minutes, continuing to cook until all the water is gone. (see notes for white rice).  Let stand 10 minutes covered.

Toss the rice with a couple of teaspoons of rice vinegar, and place in a bowl. Sprinkle with the furikake seasoning and green ends of scallions.

Rice will keep up to 4 days in the fridge. See notes on cold rice.

Thanks Sylvia. I made it with the basmati rice and it worked (following package instruction for water: rice ratio), but I definitely think the short grain would be better for this style. Basmati was what was in the pantry. :)

Shape by hand: Wet your hands with water and take about ⅓ to ½ cup of warm rice in your hands. Using both hands, firmly press the rice into a triangular shape. Shape with mold: Fill the mold with the appropriate amount of rice and firmly press to create your shape.

Heat a pan over medium heat and add the oil. Grill each side of the rice ball until a crispy, golden-brown crust forms. Avoid flipping often to keep the shape intact.

Season

Lower to low heat and brush one side with soy sauce and flip to caramelize the sauce slightly. Check after 15 to 30 seconds as it can easily burn. Brush the other side with soy sauce and flip to caramelize that side. Serve and optionally sprinkle with furikake while still hot. Enjoy!

Place the rice in a small hole colander or sieve and run cold water over it for at least 45 seconds. Use your hands to keep turning the rice over so that it all gets well-washed.2 cups sushi rice

Rinse the rice.

Place the rice in a large saucepan, pour over the water, and then place it over medium-high heat without a lid.2½ cups water

As soon as the pan comes to a boil, place a lid on the pan and reduce the heat so the rice is barely simmering (medium-low/low heat) for 18 minutes. (see note 3)

Remove the pan from the heat, but do not lift the lid. Let it sit and steam for 15 minutes.

After this time, use a large rubber spatula to turn the rice over gently. This releases the steam from the bottom of the pan and helps to fluff the rice.
