Vegan Champagne Jello Shots

In a microwave safe bowl, combine the juice and agar and whisk until incorporated. Microwave for about 3 minutes, until boiling. Place in the refrigerator until lukewarm.

When cooled, add the champagne and agave, then whisk to combine.

Pour the mixture into individual 2-ounce shot portions or onto a lined baking pan. Chill for 8 hours or overnight until firmly set. If using a baking pan, use a pizza cutter to create squares and lift with a spatula. Store on parchment paper. Shots stay good for about a week so these work well to make in advance.

Vodka Jello Shots

Layout plastic cups on a baking sheet without the lids on. Set aside.

Place gelatin mix in a medium mixing bowl or 4-cup liquid measuring cup. Pour in boiling water and whisk until gelatin is completely dissolved.&nbsp;Pour in vodka and cold water. Whisk to combine.

Pour the mixture into each plastic cup, filling until almost full.

Refrigerate the shots for 2-3 hours or until set. Put lids on cups and store in the fridge until ready to serve.

This easy champagne jello shots recipe is very glam version of your classic jello shot, perfect for special occasions!

Easy Champagne Jello Shots Recipe

oz champagne

oz gin of vodka

oz fresh squeezed lemon juice

gelatin (I used the Knox brand)

Edible gold leaf (optional for garnishing)

Combine the simple syrup and lemon juice in a cocktail shaker filled with ice. Shake well, then pour into a medium saucepan and sprinkle with gelatin.

Allow the gelatin to soak for two minutes, then heat over medium low heat, stirring constantly, until the gelatin is completely dissolved (about 2 to 5 minutes).

Remove from heat and add the gin and Champagne, stirring well to blend.  Pour into a very lightly greased loaf pan and chill until fully set, several hours or overnight.

Turn out the set gelatin onto parchment paper, then slice carefully (a thin knife like a boning knife works best) into rectangles or squares.

Garnish with edible gold leaf using a paintbrush (use one you can reserve for food only -- you don&#x27;t want paint chemicals in your food!).

Gold leaf crumbles and sticks to things (like fingers!) easily, so be gentle -- just pull off tiny corners with the brush (they will stick), then place them gently on top of the gelée squares.

These layered Pina Colada jello shots have that tropical cocktail taste that is perfect for a summer party.

Layered Pina Colada Jello Shots Recipe

3-oz boxes Island Pineapple Jello

White Rum

3.4 oz box Coconut Cream Pudding

Malibu Rum

Milk

Water

Pour 1 package of the Island Pineapple Jello into the mixing bowl.

Bring the water in the kettle to a boil.

Add 1 cup of boiling water to the pineapple jello and mix until the crystals are dissolved.

Add&nbsp;½ cup of the white rum and&nbsp;½ cup of cold water to the jello. &nbsp;Note: &nbsp;Depending on how strong you want your jello shot to be, you can change the amounts of rum and water. &nbsp;Just make sure that when you add them together, the total amount of liquid comes out to 1 cup.

Pour the jello into the bottom 1/3 of the jello shot cups.

Let cool in the refrigerator until set, 2 to 4 hours.

First Pineapple Layer

For the coconut cream layer, mix the Coconut Cream Jello Pudding,&nbsp;¼ cup Malibu coconut rum and 1¾ cup milk in a mixing bowl. &nbsp;For this portion of the recipe, you really can't put more than about ¼&nbsp;cup of rum in with the pudding mix or it won't set.

Stir for 2 minutes until the pudding mix has thickened a little.

Pour over the top of the pineapple jello layer in the jello shot cups. &nbsp;Each cup should be about 2/3 full.

Let the shots sit for a few minutes so that the pudding thickens while you are making the second pineapple layer.

Note: The coconut cream pudding doesn't seem to fill as many cups as the jello, so you may run out of it before you have filled all of the jello cups.  I just made a few pineapple-only jello shots with the leftover ones.

The Coconut Layer

Pour the second package of Island Pineapple Jello into the mixing bowl.

Add ½ cup of the white rum and ½ cup of cold water to the jello.

Let the jello mix cool completely.  Do not rush this step.  Pouring even slightly warm jello over the pudding mix will cause it to liquify.

Pour the jello over the top of the pudding mix.  To prevent making a hole in the pudding, I held the spoon up over the top of each jello shot cup.  Then poured the jello into the spoon so that it would overflow onto the pudding.

Pour any extra pineapple jello mix over the pineapple-only jello shots from the first step.  The two layers will mix together and no-one will be able to tell they were made separately.

Refrigerate for at 2 to 4 hours.

Second Pineapple Layer

Halloween Eyeball Jello Shots

Lychee

Cherries

Create green lime flavored Jello following package instructions and add vodka after cooled

Pour jello mix into plastic party cups and refrigerate until slightly hardened

Slice one quarter of a maraschino cherry and insert it into a lychee

Slice the end of a grape and insert it into the maraschino cherry to create an eyeball

Place the fruit eyeball into the firm jello cups and top with more jello
