Jeyuk Bokkeum (Korean Spicy Pork Stir-Fry)

pork

Tbsp gochujang ((korean chili paste))

soy sauce

sugar

Tbsp minced ginger

Tbsp minced garlic

Tbsp rice wine

tsp gochugaru ((korean chili flakes))

60 g red apple ((2.1 ounces), Fuji, Royal Gala

60 g brown onion ((2.1 ounces))

sprinkles black pepper

90 g onion ((3.2 ounces), thinly sliced)

g carrots ((3.5 ounces), thinly sliced)

cabbage ((6.3 ounces), thinly sliced)

Korean rice cakes

Some cooking oil

Put the meat in a big bowl and add the marinades. Mix them well. Marinate the meat for at least 30 mins. (I marinated my meat overnight to deepen the flavour and tenderness. Refrigerate until needed.)

Separate the rice cakes (if they are stuck to each other). If they were kept in the fridge, soak them in warm/hot water for 10 to 20 mins to soften.

Heat the wok on high heat and add some oil. Add all the prepared ingredients together and stir them occasionally. Reduce the heat to medium half way through.

Once all ingredients are cooked serve them with some steamed rice.

Jeyuk Bokkeum (Korean Spicy Pork). Tender pork stir-fried in a spicy, sweet and savoury gochujang sauce with onions, carrots, and garlic.  Ready in 25 minutes!

Easy Jeyuk Bokkeum (Korean Spicy Pork)

pork shoulder (thinly sliced, OR pork shoulder)

tsp vegetable oil (or any neutral tasting oil)

onion

onions

carrot (peeled and thinly sliced (optional))

tsp sesame seeds (toasted)

cabbage (chopped)

2.5 tbsp regular soy sauce (not light or dark soy sauce)

garlic

brown sugar

mirin (or omit

sesame oil (toasted)

1.5 tbsp gochujang (or 2 tbsp for very spicy)

tsp black pepper

Thinly slice pork shoulder. Tip: Freeze pork shoulder for 30 minutes and it’ll be easier to cut thinly.

In a bowl, mix sauce ingredients. Set aside.

Over low medium heat in a large pan, add oil. Fry pork until only 50% cooked.

Mix in onions and carrots (and optionally cabbage). Cook for 1 minute.

Mix in sauce. Cook until sauce thickens slightly, uncovered. Garnish with green onions and sesame seeds. Remove off heat. Enjoy!
