Instant Pot Pork Chops

(2lbs) bone-in well-marbled pork loin center chops ((1.25” inch thick recommended))

unsalted butter

- 12 (253 grams) cremini mushrooms (, sliced)

¾ cup (188 milliliters) unsalted chicken stock

(30 milliliters) regular soy sauce

(215 grams) medium onion (, sliced)

(16 grams) garlic cloves (, minced)

½ teaspoon (0.7 grams) dried thyme

rosemary

Kosher salt

black pepper

(20 grams) all purpose flour

½ cup (125 milliliters) heavy cream

Tenderize Pork Chops: Use back-end of a heavy knife or meat tenderizer to pound both sides of pork chops (make criss-cross patterns as shown in photo). Pat dry pork chops with paper towels. Season one side of pork chops with salt &amp; black pepper just before you place them in Instant Pot.

Brown Pork Chops in Instant Pot: Press &quot;Saute&quot; button to heat up your Instant Pot using &quot;Sauté Normal&quot; function. Wait until it says &quot;HOT&quot; (~8 mins). *Pro Tip: Ensure Instant Pot is as hot as it can be in order to induce a Maillard reaction. Add 2 tbsp unsalted butter (28g) in Instant Pot. Ensure the whole bottom is coated with butter. Place 2 pork chops in Instant Pot with seasoned side facing down. Brown for roughly 2 minutes per side. Lightly season the other side with salt &amp; black pepper. Set aside the browned pork chops, then repeat browning step for the other 2 pork chops.

Optional Flavor-Enhancing Step - Saute Mushrooms: Add in sliced mushrooms, saute until all mushrooms’ moisture have evaporated (~8 mins). *Pro Tip: The mushrooms’ edges should be slightly crisped &amp; browned.

Saute Garlic and Onion: Add in one more tablespoon of unsalted butter if necessary. Add in sliced onions, minced garlic, ½ tsp (0.7g) dried thyme, and ½ tsp (0.9g) dried rosemary. If you’ve skipped the optional mushroom step, add the mushrooms here. Saute for another 2 minutes.

Deglaze: Pour in ¾ cup (188ml) unsalted chicken stock, then deglaze by scrubbing all the flavorful brown bits off the bottom with a wooden spoon. Give it a quick mix.

Pressure Cook Pork Chops: Add in 1 tbsp (15ml) regular soy sauce. Give it a quick mix. *Note: We&#x27;re adding the second tablespoon of soy sauce after pressure cooking. Place the 4 browned pork chops and meat juice back in Instant Pot. *Pro Tip: Make sure the pork chops are partially soaked in the cooking liquid. Close lid, then turn Venting Knob to Sealing position. Pressure Cook at High Pressure for 0 (zero) minute + 8 minutes Natural Release. *Pro Tip: Yes, you can set the Instant Pot to &quot;0 (zero)&quot; minute with the + and - buttons. It will start natural releasing as soon as it reaches high pressure. Carefully open the lid.

Make Mushroom Sauce: While the Instant Pot is natural releasing, mix exactly 2 tbsp (20g) all-purpose flour with ½ cup (125ml) heavy cream. Set aside pork chops. Bring the content to a simmering with &quot;Saute&quot; function. Mix heavy cream mixture into the mushroom sauce in Instant Pot one third at a time until desired thickness.

Season &amp; Serve: Taste and season the mushroom sauce with 1 tbsp (15ml) regular soy sauce. *Note: Use less or more soy sauce accordingly. Place pork chops in Instant Pot. Then you&#039;re ready to serve these deliciously juicy tender Pork Chops. Enjoy~

Perfectly cooked (and juicy!) oven baked bone in pork chops in around 30 minutes. Only 5 minutes of prep to make the best homemade pork chop seasoning and toss them in the oven. Never-dry, these are cooked to the perfect temperature in the oven.

Easy (and Juicy!) Oven Baked Bone In Pork Chops

Preheat

Preheat oven to 400° Fahrenheit and grease a baking pan with oil or line it with parchment paper.

Seasoning

Make the seasoning mix by combining the seasonings in a small bowl and mixing.

Place the pork chops on the baking pan and drizzle oil over each pork chop. Rub (or brush) the oil over both sides of the pork chops.

Season

Season the pork chops on both sides with the seasoning mix.

Cook

Place the pork chops in the oven to bake for 25 minutes, or until the pork chops reach a temperature of 145° Fahrenheit.

Rest

Carefully remove from the oven and allow the pork chops to rest for 3-5 minutes before serving.

The Best Juicy Boneless Pork Chops

boneless pork chops (about 3/4 to 1 inch thick)

olive oil (for pan)

black peppercorns ((Optional) about 1/2 tsp)

bay leaf (optional)

tbsp brown sugar

Pre-heat your oven to 375 degrees.

Add the water, kosher salt, brown sugar, dried rosemary and peppercorns to a small sauce pan over medium heat.

Heat until the salt dissolves.

Remove the pot from the heat and let cool completely. This step can be done ahead of time.

Make your Brine

Add all of the spices for the seasoning to a small bowl and mix well.

Set aside for later.

Add your cooled brine to a large bowl and place your pork chops in it for 30 minutes.

While pork chops are brining, place your cast iron pan in the oven to pre-heat for 10 minutes. If you are not using cast iron, you can skip this step.

After 30 minutes, remove the pork chops from the brine. Pat dry with paper towels and set aside.

Remove your pan from the oven (be careful as the pan will be very hot) and place it on the stove over medium heat. If you are not using cast iron, let your pan pre-heat for a few minutes on the stove.

Add your seasoning to the pork chops on all sides.

Add olive oil to your pan.

Place the pork chops in the pan and sear for 3 minutes per side. Make sure to also get the fat sides of the pork chops.

Once the pork has been seared on all sides, place the pan into your pre-heated oven and let the pork chops cook for 6 minutes.

After 6 minutes, remove the pork chops from the oven and place them on to a plate and cover with aluminum foil to rest for about 3-5 minutes. The pork Chops should be 145 degrees when you take them out of the oven.

Serve the pork chops immediately and make sure to pour any remaining pan juices over the top of them.

Brush olive oil on each side of the pork chops. Generously sprinkle seasoning evenly on one side. Gently press seasoning into the pork chops. Flip over and season and press the other side. 

Preheat air fryer and add pork chops

Preheat air fryer to 375 degrees. Place pork chops in the air fryer basket or tray. Do not stack on top of each other.

Air at 375 for 8-10 minutes depending on the thickness of your pork chops and if they are bone-in or boneless pork chops. Flip pork chops half-way through. Check temperature with a meat thermometer to cook until desired level of doneness.

These juicy oven baked pork chops are seriously the best! Pan seared then baked with potatoes and asparagus, and a simple sage-shallot sauce, this is a family favourite.

Oven Baked Pork Chops with Potatoes

800 g baby potatoes

olive oil ((notes 1))

black pepper,

asparagus

shallots (1 medium shallot), finely sliced

sage leaves

salted butter

½ teaspoon freshly cracked black pepper,

beef stock (beef broth) or chicken stock

Dijon mustard

cornflour (US cornstarch)

whole milk ((notes 1))

Salt

I recommend brining the pork chops for the best flavour and perfectly juicy meat, for a minimum of 45 minutes or up to 12 hours prior to cooking.

Preheat oven to 220C (200C fan forced) / 425F.

OPTIONAL CRUNCHY CRACKLING:If your pork has the skin attached and you would like it crunchy, cut the skin off each chop and lay it onto a baking tray lined with baking paper, skin side up. Drizzle over a little oil and scatter over some sea salt. Rub it over the skin then place on the bottom shelf of the oven. This should be super crunchy and ready about the same time as your pork and potatoes.

FOR THE PORK AND POTATOES:Cut the potatoes into 2-3 pieces each or roughly inch size pieces. On a large baking sheet, toss the potatoes with 1 tablespoon oil, salt and pepper.

Place into the oven and bake for 20 minutes.

Meanwhile, heat the remaining oil in a skillet over high heat - get the pan searing hot. If your pork chops were not brined, season well with salt and pepper. Add the pork chops to the hot pan and cook without turning until caramelised underneath - 3-5 minutes. Don&#39;t crowd the pan - if you need to do them in batches, place the seared pork chops on a warm plate covered with a piece of foil while doing the second batch.

After the potatoes initial 20 minutes, add the pork to the baking sheet seared side up (this is your presentation side). Scatter the asparagus around the pan, then bake for a further 8-12 minutes or until the pork is cooked through (63C/145F on a meat thermometer inserted into the thickest part.

Remove the tray from the oven. Cover loosely with foil to rest.

FOR THE SAUCE:Meanwhile, make the sauce, using the same skillet the pork was seared in. If there is still some oil in the pan use that - remove all but 1 tablespoon and use paper towel to remove any burnt bits from the pan. If there is no oil, wipe out the pan and add a little glug of oil. Heat over medium heat.

Add the shallot to the pan and cook for a couple of minutes to soften. Add the fresh sage leaves and butter and cook another minute.

Add the pepper, stock and dijon and mix well to combine. Bring to a boil.

In a small bowl, combine the milk and cornflour and mix well. While stirring, pour it into the sauce. Keep stirring, it should thicken quite quickly.

Transfer the pork, potatoes and asparagus to warmed serving plates.

Pour the resting juices from the pork into the sauce and mix well. Pour the sauce over the plates and serve.
