This easy, one-pot Kashmiri Chai recipe takes less than 20 minutes to make! This is not a traditional Noon Chai recipe, but an accessible version that&#039;s still delicious (and pink)! Make it with regular green tea leaves if you can&#039;t find Kashmiri tea leaves.

20-Minute Kashmiri Chai (Pink Tea)

water

ice cubes

tbsp Kashmiri chai leaves

star anise (badiyan)

green cardamom pods

(loung) (optional)

cinnamon (optional)

baking soda

milk

¼ tsp kosher salt salt

½-1 tbsp raw almonds (crushed using mortar and pestle)

Prepare ice water: Combine room temperature water with 2-3 large ice cubes and set aside.

Heat a medium saucepan over high heat. Add water, Kashmiri chai leaves, star anise, green cardamom pods, cloves and cinnamon (if using) and bring to a boil.

Once it comes to a boil, add the baking soda. It’ll fizz a little. Allow this mixture to boil over high heat for 5-6 minutes. Occasionally, use a ladle to aerate (scoop and pour back) the tea. You’ll notice the froth in the water go from pale green to a deep pink color. If not, add another 1/8 tsp of baking soda.** The water will be greatly reduced, almost evaporated.

Add the prepared ice water (discard any ice cubes). If you’d like, you can aerate several times to deepen the color. Add the milk, half &amp; half, salt, and sweetener. Allow it to a come to a light boil, then immediately turn off the heat. Do not allow it to boil for too long as it&#039;ll start to lose some of its pink color. Taste and adjust salt and sweetener.

Strain the tea into cups and add crushed almonds and pistachios, as desired.

Kashmiri Pink Chai (Noon Tea)

tbsp kashmiri tea leaves

tsp baking soda

salt

star anise

cinnamon

cloves

green cardamons

kehwa

sugar

almonds & pistachios (for garnish)

In a large sauce pan add the water along with kashmiri tea, star anise, cinnamon, cloves and green cardamom. Bring everything to a boil.

When the boil comes add baking soda and salt. Lower the heat slightly and keep cooking till the water is reduced to half the initial amount which is 2 cups according to this recipe.

When the water is reduced add ice-cold water along with some ice cubes from a height. Then aerate the mixture by using a ladle or another mug and pour around a cup of this tea from a height and keep doing that for the next 10 mins. It translates to ‘phaintna’ in Urdu which means to beat vigorously.

After 10 mins you will start to see deep red bubbles on the surface of the tea. Turn off the heat and strain the liquid. This ‘kehwa’ can be stored in the fridge for around 2 weeks.

For preparing the milk tea, bring the milk to a boil in a saucepan. Add the sugar and pour some of the kehwa. You can adjust the kehwa and milk ratio according to your taste. Bring the mixture to a boil and turn off the heat. Cover the pan and give ‘dam’ for 2-3 mins.

Pour in the serving cups and add garnish with some crushed almonds and pistachios.

Kashmiri Pink Chai is a Pakistani hot beverage which is pink in colour. It has a rich, creamy and sweet taste. A kehwa (tea base) is first prepared with Kashmiri or Green Tea leaves and whole spices like star anise, cinnamon, cloves and green cardamon. And then the kehwa is boiled with milk and sugar to make the tea.
