Kathi rolls are a sandwich worthy of dinner. Seriously delicious.

mayonnaise

lb boneless, skinless chicken thighs

tbsp tandoori masala (- look

tsp kasoor methi

tsp salt

tsp naga pickle

vegetable oil (- any neutral oil)

Chop the pickles as finely as you can. Mix the pickle with the mayo and the yoghurt. That&#039;s it. Sometimes simple can be great.

The quantites really depend on the brand of pickle you choose. If it&#039;s a particularly salty pickle you may need to cut it with a bit more mayo/yoghurt. Or you may need to add a bit more pickle. Trust your instincts.

If you want to use a squirt bottle make around 10 times as much and use a blender. Like a restaurant would. It&#39;s good on burgers too. Especially lamb burgers. Mmmm... lamb burgers.

Make the sauce

Combine the tandoori masala, kasoori methi, salt and oil. Stir to combine. If you like a bit of spice a little naga pickle goes nicely in this mix.

Mix your marinade with the chicken thighs. Really stir to get it each piece coated. Use tongs for this. And watch your clothes. This stuff stains. Badly. Unless you make your own tandoori masala of course.

Marinate anywhere from 1 to 4 hours. 

Make the chicken tikka

While the chicken marinates, preheat your oven to 400F. Pre-heat a sturdy baking pan. 

Remember to use your tongs. Place the chicken onto the pre-heated baking sheet and return the baking sheet to the oven.

Cook for around 6 minutes. A timer is never a bad idea. Flip each piece and return the baking sheet to the oven.

Continue to cook until the internal temperature of the chicken reaches 170-175F. This somewhere between 4-8 minutes. Total cooking time depends on how big your chicken thigh pieces are. When you&#039;ve hit your target internal temp remove the chicken from the oven and set the chicken aside.

Oven method

I really like a BBQ for chicken tikka. Truth be told I strongly prefer charcoal over gas. Set yourself up for a direct zone and an indirect zone.

You can use skewers but if you can get one of those little wire screens they use for grilling at an Asian grocer or restaurant supply store they are super handy.

Cook the chicken over the indirect zone until you get to an internal temp of about 160F then char the chicken up a bit over the direct zone. You may have to move it back to the indirect zone if it starts to char too much before it gets to the target internal temp.

Remove the chicken when you get to 175F and set aside.

Grilling (BBQ) method

Warm the parathas.

Put a smear of sauce on the paratha. Top with chicken tikka. You may want to cut the pieces in half to make things easier to eat.

Drizzle with a bit more sauce.

Garnish with cilantro, thinly sliced shallots, green chilies or crispy fried onions. Garnish with what you like is what I&#039;m saying here. Make these kathi rolls your own.

Eat them as you would a taco. Tilt your head as you take a bite. And enjoy!

Veg kathi roll are Indian style wraps made with veggie filling and green chutney. These make a great lunch box food not only for kids but also for grown ups.

Kathi Roll Recipe

whole wheat flour (or atta)

salt

water

potato (or ¾ cup paneer cubed)

mix vegetables ((capsicum, peas, cauliflower, carrot etc))

½ teaspoon cumin (or jeera)

mustard ((optional))

asafoetida (or hing)

onion (thinly sliced)

ginger garlic paste (or grated ginger or minced garlic)

coriander powder

red chili powder ((adjust as needed))

½ teaspoon garam masala

turmeric (or haldi)

coriander leaves (chopped)

Green chutney (or any sauce)

Steam or boil potato until just done without making mushy.

Add atta to a mixing bowl along with salt and oil. Pour water just as needed and make a soft dough. Knead well until it becomes soft and pliable.&nbsp;Cover and set aside for 20 mins.

Divide the dough to 4 to 5 equal parts.&nbsp;Lightly sprinkle the rolling area and the dough ball with flour.&nbsp;Using a rolling pin roll the ball evenly to a round layer.

Heat a pan / griddle or tawa on a medium high heat. Gently transfer the roti to the tawa.&nbsp;When you see tiny bubbles, flip it and press down gently with a spatula.

Cook on both the sides flipping until both the sides are cooked with golden to brown spots. Add ghee or oil now.

Spread a kitchen cloth or tissue over a plate. Transfer the roti to it. Make all the rotis and stack them in the plate.

Heat a pan with oil. Allow mustard and cumin to crackle.&nbsp;Add hing, onions and salt. Saute until onions turn golden.

Fry ginger garlic paste until the raw smell goes off.&nbsp;Add all the veggies. Next add turmeric, chili powder, coriander powder and garam masala.

Saute for 1 to 2 mins. Cover and cook on a low flame until the veggies are cooked. Set this aside to cool.

Make filling

Smear chutney or sauce over the roti.&nbsp;Add a sufficient amount of cooked veggies to one side of the roti. Begin to roll it tightly and prick a tooth pick to hold in shape.&nbsp;Serve kathi rolls hot or cold.

cauliflower florets

carrot cubes

potato cubes

french beans

water (for steaming veggies)

¼ teaspoon ajwain ((carom seeds))

cumin seeds

onions

Ginger Garlic Paste

tomatoes (or 1 large tomato or ½ cup chopped 1 cm tomato cubes)

turmeric powder

½ teaspoon kashmiri red chili powder (or ¼ teaspoon red chili powder)

Coriander Powder

½ teaspoon Garam Masala

coriander leaves

Paneer (grated

whole wheat flour

salt (or add as required)

water (or add as required)

½ teaspoon chaat masala

lemon juice (or add

grated cheese (- optional)

Rinse and chop all veggies and take them in a pan or bowl that fits inside a 3 litre pressure cooker. You can also add your choice of veggies.

Now add 1.5 cups water in the cooker. Place the pan in the cooker.

Pressure cook for 2 to 3 whistles on medium flame or for 12 to 15 minutes. The veggies have to cooked well, yet retain their shape. You can also steam veggies in a pan or an electric rice cooker. Cover and keep aside.

In a mixing bowl or pan or a large tray, take atta (whole wheat flour), oil &amp; salt.

Then add 1 cup water in parts. First you can add ½ cup water and add the remaining required amount of water later.

Begin to knead. Add water as required and knead to a smooth soft dough.

Cover the dough and keep aside for it to rest for 30 minutes.

In a small bowl, take thinly sliced onions, chaat masala, kashmiri red chili powder or a pinch of red chili powder lemon juice.&nbsp;

Mix very well. Cover and keep aside or you can refrigerate too.

Heat 2 tablespoons oil in a pan or kadai. Then add ¼ teaspoon ajwain (carom seeds) and ¼ teaspoon cumin seeds. Let them splutter.

Then add ⅓ cup finely chopped onions and&nbsp;saute till the onions turn translucent.

Add 1 teaspoon ginger-garlic paste.

Stir and saute till the raw aroma of both ginger and garlic goes away.

Add ½ cup chopped tomatoes.

Mix well and saute the tomatoes on a low to medium flame for 3 minutes or till they soften.&nbsp;

Then add ¼ teaspoon turmeric powder, ½ teaspoon kashmiri red chilli powder, ½ teaspoon coriander powder and ½ teaspoon garam masala powder. Mix very well. If using regular red chili powder, then add ¼ teaspoon of it.

Then add ⅓ cup chopped capsicum cubes &amp;&nbsp;saute for two or three minutes.

Next add all the steamed veggies. If there is any water in the pan of the steamed veggies, then add this water too. Also add salt as per taste.

Mix very well.

On a low to medium flame saute for 4 to 5 minutes. Do make sure that the veg stuffing is dry.

Next add ¼ cup chopped coriander leaves. Mix very well.

Lastly add ¼ cup grated or crumbled paneer. Paneer is optional and you can skip it. Check the taste and add more salt or chili powder if required. Mix very well and keep the veg stuffing aside.

After 30 minutes, divide the dough into small or medium sized balls. This depends on the size of the wraps you want to make. You can also make mini wraps.

Dust the dough ball with some flour. Then gently roll to thin roti. The roti should not be thick. If required while rolling, you can add some more flour.

Place the roti on a hot tawa. Cook the base till you see bubbles appearing on the rotis or the roti is ¼th cooked. Do note that the tawa should be hot. So cook on a medium-high to high flame. On a low flame, the rotis will become like papads.

Then flip roti.

Spread some oil all over.

Then flip again when the second side is ½ cooked.

Spread some oil on this side too. You will see golden blisters on the roti.

Flip once or twice more for even roasting. Remove and keep the roti in a roti basket or in a warm casserole. Prepare all rotis this way.

Now take a single roti. Place the mix veggie stuffing in the centre. If you have mint coriander chutney, you can also spread some chutney on the rotis, before placing the veg stuffing.

Sprinkle some chaat masala powder on top. Add the marinated onions on top of the veg stuffing. You can also add some grated cheddar cheese or paneer on top. Now roll both the sides of the roti

You can wrap them in butter paper or aluminium foil from the base, so that while eating the stuffing does not fall down. If you want you can even secure the wraps with a toothpick. You can even pack these in tiffin box. Skip adding onions if packing in tiffin box.

Serve veg kathi roll just plain as they taste good the way they are. Or you can accompany some chutney or tomato ketchup by the side.
