&lt;p&gt;&lt;strong&gt;About Kerala Chicken Roast Recipe | Chicken Roast Recipe&lt;/strong&gt;: A fried-chicken recipe which is full of aromatic flavors and tangy spices. This dish brings out the authentic south Indian spice of the dish. You can cook this dish as a side dish for a dinner party. It goes well with rice as well as any Indian bread of your choice.&lt;/p&gt;&lt;strong&gt;Ingredients of Kerala Chicken Roast Recipe&lt;/strong&gt;: Kerala chicken roast is a semi-dry, delicious blend of marinated and tender chicken, fried and sauteed with a spicy, tangy masala paste. Teamed up with some chillies, fried onions and lemon juice to bring out that extra zing in this dish.

Kerala Chicken Roast Recipe

For the marination:

Chicken

Turmeric powder

Chilli powder

Coriander powder

Vinegar/lemon juice

cloves

Green chillies

Salt

For roasting:

Tomato (pureed)

Green chillies (slit)

Curry leaves

Garam masala powder

Pepper powder

Lemon (juiced)

Clean and cut the chicken into medium sized pieces. Make a paste of all the ingredients under marination.

Marinate the chicken pieces with this paste and keep aside for an hour.

Cut onions into very thin slices and fry in hot oil. Drain them and keep aside.

Fry the chicken pieces in the same oil until almost done. Keep the pan covered so that the chicken does not get browned, but is cooked inside. Drain them and keep aside.

Heat 2 tbsp of oil in another pan (You can use the same oil in which we fried the chicken pieces. This will enhance the flavour). Add slit green chillies and curry leaves. Saute for 1 minute.

Add the tomato paste to this and saute for 1 minute. Now add the prepared chicken &amp; roast until it is dry.

Make sure that all the chicken pieces are well coated with the tomato paste.

Sprinkle garam masala &amp; pepper powder and mix well.

Add lemon juice and mix well. Check for salt. Add a little if needed. Now add the fried onions and mix well.

Make one of Kerala’s staple dishes – malabar prawns, a speciality of the South Indian coast. They're quick and easy to prepare and full of distinct flavours

Malabar prawns

raw king prawns

turmeric

Kashmiri chilli powder

lemon juice

ginger

vegetable oil

curry leaves

green chillies

onion

tsp black pepper

fresh coconut

coriander

Rinse the prawns in cold water and pat dry. Toss them with the turmeric, chilli powder, lemon juice and grated ginger and set aside.

Heat the oil in a pan and add the curry leaves, chilli, sliced ginger and onion. Cook until translucent, about 10 mins, then add the black pepper.

Toss the prawns in with any marinade, and stir-fry until cooked, about 2 mins. Season if required and add a squeeze of lemon juice. Serve sprinkled with the coconut and coriander leaves.

Shrimp with Mango or Chemmeen Manga Curry! Made with Coconut, Pearl Onions and Sour Mangoes, this dish aka Konjum Manga is a local favorite in my hometown, and pairs well with steamed rice.

Water ((as required))

Peel, wash and slice the mangoes into thin slices lengthwise.

Grind together grated coconut, pearl onions, green chilies, chili powder, coriander powder and turmeric powder.

Into a pan (preferably a manchatti / clay pot), add the grinded mix, mango slices, and curry leaves along with a little water and salt. Cover and cook on a medium flame.
