The Best Keto Bread Rolls

mozzarella cheese

In a small glass bowl, add shredded mozzarella cheese and cream cheese. Microwave at 1 minute intervals until the cheese is melted and cream cheese has softened. If you don't want to use a microwave, melt the shredded cheese over the stovetop in a non-stick skillet and use softened cream cheese.

To a food processor, add remaining ingredients and melted cheeses. Pulse until combined. You may also combine the ingredients using an electric mixer; however, the dough comes together evenly and faster using a food processor.

Wet your hands with some water or oil in order to handle the dough. This will prevent the dough from sticking to your hands. Grab a handful of dough, form it into a ball and place on a parchment lined baking tray. Continue with remaining dough. You can form your desired size. Dough balls larger than 2.5 inches wide, will require longer cooking times. Evenly place dough balls on the tray spacing about 1 inch apart.

Bake at 400 degrees Fahrenheit for 13-18 minutes or until hardened on the outside and slightly firm on the inside. Let cool for 3-5 minutes before eating.

These Keto bread rolls remind me of the sweet milk buns I used to love as a kid. Because of the yeast, they rise a lot and become airy and light. We all thought they were a pleasure to eat! The recipe uses almond flour and is low carb, gluten and sugar free.&nbsp;

Pull-Apart Keto Bread Rolls

tbsp whey protein powder

tbsp psyllium husk powder

tsp baking powder

tsp inulin

tsp active dry yeast

salt (optional)

eggs, large (room temperature)

butter (melted)

Greek yoghurt

/ 80 milliliters lukewarm water

Proof the yeast! Put the yeast and inulin into a bowl and add the warm water (40 Celsius / 105 Fahrenheit). &nbsp;If you don't have a thermometer, the water should be warm to the touch. Cover the bowl &nbsp;with a kitchen towel and leave in a warm place for 5-10 minutes until it starts to froth and thicken.

In the meantime, combine the dry ingredients - &nbsp;almond flour, protein powder, psyllium husk powder, baking powder - &nbsp;in another bowl and set aside.&nbsp;

Using an electric mixer or a food processor, whisk the room temperature eggs and egg whites, melted (warm, not hot!!) butter and the activated yeast mixture until well combined.&nbsp;

Add the yoghurt and the first half of the dry ingredients mixture. Blend until combined, then add the second half of the flour mix. The dough will thicken quickly as the psyllium and the almond flour absorb the moisture.&nbsp;

Line a pie dish or a casserole dish with parchment paper. &nbsp;Lightly wet your hands and form eight dough balls. Make sure you leave some space around the rolls as they will significantly increase in size.

Cover the dish with lightly oiled cling film and a kitchen towel and return to a warm space for around 50 to 60 minutes until the rolls have substantially expanded - see the images in the post. I like to place my tray on top of the radiator.

Towards the end of the rising time, pre-heat the oven to 175°C/350 Fahrenheit.

Bake for around 15 minutes or until the rolls are starting to brown. Then cover loosely with aluminium foil and continue to bake for another 7-10 minutes.

Preheat the oven to 350°F.

Add the mozzarella and cream cheeses to a microwave safe bowl. Heat for 30 seconds at a time until the cheeses are melted and combined well.

Place the cheese dough into a mixing bowl with the remaining ingredients. Beat on high until well combined.

Wet your hands slightly and form the dough into 8 evenly sized balls. Flatten them slightly with the palm of your hands, and place them onto a parchment lined baking sheet.

Bake for 15 minutes until lightly browned.

Let cool and serve.

apple cider vinegar

¼ cup ground flaxseed/linseed (ground)

almond meal/flour

pre-shredded/grated mozzarella

tbsp cream cheese

tsp extra virgin olive oil

sesame seeds

Preheat

Preheat your oven to 375°F/190°C. In a small bowl mix together your egg and apple cider vinegar. Set aside until ready to use.

Add your flax seen to a grinder or blender, coarsely grind. Pour the flax seed in a microwave safe bowl. Add the almond flour and shredded mozzarella cheese to the bowl and mix. Then add your cream cheese to the bowl. There is no need to mix the cream cheese in just yet.

Microwave

Place your bowl with the cheese in the microwave. Melt your cheese for 1 minute, remove the bowl and mix with a silicone spatula. If your cheese is not completely melted yet microwave for 30 more seconds until your cheese is completely melted.

While your mozzarella dough is still hot add your baking powder. Mix and fold together. Add the egg/vinegar mixture to your dough. Fold in with your silicone spatula.

Roll

Roll your dough into a ball and cut into 4 equal sections. Roll each section into a ball and then flatten the top and bottom of the ball to shape into a hamburger bun.

Place on a baking sheet lined with baking paper. Brush the olive oil over your buns and sprinkle the tops with sesame seeds. Bake in the oven at 375°F/190°C for 12-15 minutes. Your burger buns will be done when the tops are golden brown and the dough is cooked in the centre.

Bake

Remove the buns from the oven and let them cool on a wire rack or towel for 5 minutes before slicing and serving.
