Mouth-Watering Keto Crockpot Or Oven Carnitas: Authentic &amp; Crispy Mexican Pulled Pork (Low Carb) 

Crockpot or Slow Cooker 

Transfer pork to a colander that you placed over a bowl (To Trap the Juice:)  

For The Oven

First, cut the pork into the 2-3 inch cubes (keep the fat!) and set aside. 

Move the cubed pork into a large bowl to season! 

Next Stop Spices &#8211; you can do them one at a time or mix them together &#8211; it&#8217;s your preference: We&#8217;re talking pepper &#8211; Chinese 5 Spice &#8211; Ground Cumin &#8211; Cinnamon &#8211; Bay Leaves &#8211; sprinkle over the pork as evenly as possible 

On your Instant Pot, press the &#8220;Sauté&#8221; button and add cooking oil. Once it’s heated up, add 1/2 the pork and brown it on all sides. (Takes 3-4 Minutes) Transfer it to a plate &amp; repeat with the remaining other 1/2. One the pork is browned press cancel.

Next, pour the juice/seasoning mixture all over the pork cubes 

Close and secure the lid on the Instant Pot. Press “Meat” then “Pressure.” When the light on “High Pressure” turns on set the time to cook for 30 Minutes. The do a Quick Release

Remove &amp; Shred &#8211; Crisp in the Oven on Broil (Highly Recommend for Authentic Carnitas!) 

For the Instant Pot

Keto carnitas are naturally low carb and paleo friendly. This slow roasted pork is seasoned with orange, lime, and spices, then broiled to crispy perfection. It&#039;s absolutely luscious! 

Easy Keto Carnitas

lb boneless pork butt

Salt and pepper

lard (or bacon grease)

water

orange

lime

tsp cumin

oregano

chipotle pepper in adobo (chopped)

garlic (minced)

salt and pepper

Preheat the oven to 300F. Season the pork butt all over with salt and pepper.

In a large dutch oven, melt the lard over medium heat. Once hot, add the pork roast and brown well on all sides.

Add the water to the bottom of the pan. Hand squeeze the juice of the orange sections and lime sections into the pan and add the rind as well. Add the cumin, oregano, chipotle, and garlic. Bring to a simmer, then cover and transfer the pot to the oven.

Let cook 5 hours, until the pork is tender and can easily be pierced with a fork. Remove from the liquids onto a foil lined cookie sheet and let stand until cool enough to shred.

Spread the pork out over the cookie sheet and set under the broiler for 3 to 5 minutes, stirring occasionally to get the pork pieces nice and crisp. Watch carefully!

Meanwhile, remove the orange and lime rinds from the liquids in the pot and discard. Set over medium high heat and bring a boil. Cook until the liquids are reduced by half.
