Keto Chicken Alfredo with Broccoli Bake

2.5 lbs boneless skinless chicken breast, sliced

tsp salt

tsp pepper

chicken broth

broccoli

garlic cloves,

oz cream cheese, softened

heavy whipping cream

Italian seasoning

cheese,

pepper jack cheese, grated

mozzarella cheese, grated

tsp basil

Melt 1 tbsp butter in a 10.25 oven-safe skillet. (I use a cast-iron skillet)

Season sliced chicken with salt &amp; pepper before placing the chicken in the skillet. Sear on both sides.

Cover the skillet with a lid and simmer on low until the chicken is no longer pink.

Remove chicken from the skillet and set aside.

Deglaze the pan by pouring 2 tbsp chicken broth into the hot skillet then scraping the bits off the bottom with a wooden spoon. Leave the bits in the pan as they are extra flavorful.

Pop the broccoli in the microwave and follow package directions to steam. Or, if you prefer, you can steam in boiling water on the stove.

While the broccoli is cooking, add 2 tbsp butter to the skillet along with the minced garlic. Saute 2 minutes or until fragrant.

Add softened cream cheese, heavy whipping cream, and Italian seasoning to the minced garlic, then stir continuously with a whisk on medium heat until the ingredients are thoroughly combined.

Reduce to a medium/low heat and allow the sauce to simmer gently boiling until the heavy whipping cream has reduced and thickened. Keep whisking so that it doesn&#x27;t stick to the bottom of the pan. It will take a few minutes for the sauce to reduce and thicken.

Once it has thickened, add the parmesan and pepper jack cheese then continue to stir until the cheeses melt and the sauce is smooth.

Drain steamed broccoli.

Add the chicken and broccoli to keto alfredo sauce and stir until thoroughly combined.

Sprinkle mozzarella cheese on the low carb chicken alfredo broccoli mixture then sprinkle basil on top.

Pop the skillet in the oven on the top rack under broiler for 1-2 minutes or until the mozzarella cheese begins to bubble. While you could leave it on the stove to melt, I found that baking the cheese from the top in the oven produced the best results for this dish.

Prepare chicken

Salt and pepper chicken on both sides. Grill, covered, over medium high heat for 3-4 minutes. Flip and grill on the other side until chicken reaches an internal temperature of 165 degrees Fahrenheit. Remove and slice into strips. 

Make alfredo sauce: Sauté garlic

In a large skillet over medium high heat, melt butter. Stir in garlic and nutmeg and let cook until fragrant (about 30 seconds). 

Make alfredo sauce: Thicken the sauce

In a small bowl or measuring cup, whisk together egg yolk and heavy whipping cream. Pour into garlic butter mixture and reduce heat to medium low. Continue stirring and cooking until the sauce has thickened enough to coat the back of a spoon (about 5-10 minutes). Do not let the sauce boil. 

Stir in parmesan, noodles & chicken

Once thickened, stir in keto noodles and parmesan cheese. Stir until cheese is melted. Season with salt and pepper. Add chicken. Serve with your favorite keto vegetables like broccoli or asparagus.

Chicken Alfredo with Broccoli Recipe

chicken breast (boneless)

garlic powder

salt

black pepper

Alfredo sauce (store-bought

mozzarella cheese (shredded)

parsley (minced for garnish)

garlic (minced)

heavy cream (room temperature)

Parmesan (finely grated)

Cube

Start by cutting the chicken breast into ½-inch cubes. Then, toss it in a bowl with garlic powder, salt, and pepper. Coat all sides evenly with the seasoning.

Cook

Heat the butter in a skillet over medium-high heat and pan-fry the chicken for approximately 3 minutes on each side. Once cooked through, remove from heat and set aside.

Steam

While the chicken cooks, begin trimming the broccoli and cut it into florets (just the top part, with minimal stalk). Steam broccoli until tender for about 6 minutes. Remove from heat and set aside.

Make sauce

While the broccoli steams, begin preparing the Alfredo sauce. If you are using store-bought sauce, jump down to the next step.Simmer the garlic in butter in a small saucepan for 2 minutes until fragrant. Mix in cream. Slowly add the parmesan and stir continuously until it&#39;s a thick, uniform sauce. Finally, season with nutmeg, remove from heat and set aside.

Layer

Put the chicken bake together by spreading ½ cup of Alfredo sauce in the bottom of a 9x13-inch baking dish. Layer half the cooked chicken with half of the steamed broccoli arranged over it. Then, spoon 1 cup of Alfredo sauce over the broccoli and sprinkle 1 cup of mozzarella cheese on top of the sauce.

Bake

Repeat the process for a second layer with all the remaining chicken, broccoli, sauce, and shredded cheese. Garnish with parsley and place under the broiler in the oven for 5 minutes on high until the cheese melts, bubbles, and begins turning golden brown. Remove from the oven and let sit for a few minutes before serving warm.

This is one of our favorite casserole type dishes for weeknight meals. I make extra because the leftovers are just as great. The homemade alfredo sauce is the best part!
