Classic recipe for Keto Chicken Tinga for tacos, tostadas, burritos, or over cauliflower rice. Low carb, delicious, and easy!

Keto Chicken Tinga (Tinga de Pollo)

Olive oil (extra virgin)

White onion (slivered)

Garlic (chopped)

tomatoes

Tomatillos (husked)

Oregano

Sea salt

Pepper

Adobo sauce

Chicken breast (shredded)

Cilantro (chopped)

Cook tomatoes and tomatillos in water over medium heat for 10 minutes until softened. Allow to cool slightly and place in a food processor and pulse until smooth.

Heat the olive oil in a deep pan over medium heat. Add the onion slivers and cook until softened (3 minutes). Stir in the chopped garlic and cook for an additional 1 minute.

Add the sauce to the pan. Then add the oregano, salt, pepper, and adobo sauce. Simmer for 5 minutes and taste. Add additional adobo sauce per your taste and cook an additional 5 minutes.

Stir in the shredded chicken to combine. Stir occasionally for 10 minutes and taste. Garnish with some chopped cilantro.

Easy Keto Chicken Tinga (20 Minutes!)

rotisserie chicken (shredded)

olive oil

onion (chopped (35 grams))

garlic (minced)

cumin

chipotle peppers

can Rotel diced tomatoes with green chilies

Prepare tinga sauce:  In a large skillet over medium heat, add olive oil and chopped onions. Cook onions, while regularly stirring, until soft, roughly 3 to 4 minutes. Stir in minced garlic and cook for just 30 seconds before adding cumin, chipotle peppers, diced tomatoes, and salt. Simmer for several minutes while occasionally stirring.

Finish and serve: Remove sauce from heat and pour into a blender and blend until smooth in consistency. Return sauce back to pan and combine with shredded chicken and heat for several minutes until mixture is thoroughly heated. Serve in a bowl along side romaine lettuce leaves (or low-carb tortillas), diced red onions, diced avocado, and crumbled or shredded cheese.
