Keto Teriyaki Chicken - 20 Minutes

Tablespoons avocado oil

Pounds Chicken thighs

Cup Soy Sauce

Tablespoons Keto Brown Sugar substitute

Clove garlic, minced

Grated ginger

water

xanthan gum (click here to see my favorite brand on Amazon)

Sesame seeds and onions

Heat the avocado oil in a large skillet over medium-hi heat. &nbsp;Add the chicken and sauté' until cooked through...about 8 minutes.

In a medium bowl, combine the soy sauce, sugar substitute, garlic, ginger, water, and xanthan gum. &nbsp;Whisk to combine. &nbsp;Pour the sauce into the skillet with the chicken and reduce the heat to medium. &nbsp;Continue cooking for a few more minutes until the sauce thickens and coats the chicken.

Serve topped with sesame seeds and sliced green onions for garnish.

INGREDIENTS

2 1/2 Pounds Chicken thighs cut into 1 inch pieces
1/4 Cup Soy Sauce or Coconut Aminos
3 Tablespoons Keto Brown Sugar substitute
1 Clove garlic, minced
1 teaspoon Grated ginger
1/2 Cup water
1/4 teaspoon xanthan gum (My favorite brand on Amazon http://amzn.to/2FMWPW7 (affiliate link)
Sesame seeds and sliced green onions for a garnish

INSTRUCTIONS

JENNIFER'S TIPS
Serve with steamed cauliflower rice for a quick side dish.  I like to buy the already riced cauliflower in the frozen section of the grocery store.

Keto Teriyaki Chicken

Just like the original recipe, but made with healthier ingredients!

Authentic Keto Kung Pao Chicken Recipe

530 g boneless skinless chicken breast (2 large breasts)

tbsp coconut aminos (or soy sauce)

tbsp cooking sake (or shaoxing wine)

tbsp baking soda

tsp ginger (grated)

tbsp sesame oil

Szechuan peppercorns

tbsp raw peanuts (or cashew nuts)

1-3 chili peppers

2.5 tbsp coconut aminos (or soy sauce)

tbsp black vinegar (or white vinegar)

tbsp Lakanto Golden (keto brown sugar)

tsp xanthan gum

green onion (Japanese leek)

Slice the chicken breast into 1 inch/2 cm cubes.

Place the chicken breast into a large bowl and cover with the coconut aminos, sake and baking soda.  Mix well and let it marinate for 20 minutes.

While the chicken is marinating, add the Szechuan peppercorns to a frying pan and put on medium heat.  Roast them until the pan starts to smoke. Take them out of the frying pan and transfer them to a mortar and pestle.  Crush as fine as you can.

Grate the ginger, slice the chili peppers in 3, slice the long green onion in 1 inch/2cm pieces.

In a large frying pan, add the Kung Pao spices ingredients and cook on medium heat for 1-2 minutes. Add the long green onion and cook for another minute.Add the marinated chicken pieces and start stir-frying.  To get the most juicy pieces of chicken breast, make sure you cook it on low-medium heat.  If you cook the chicken breast on high heat, they will dry out.  Cook for 3-4 minutes.

Add the Kung Pao sauce ingredients and cook an additional 2-3 minutes, or until the chicken is cooked through.

Remove from the heat and the dish is ready to serve!
