This Keto Egg Roll in a Bowl or AKA “Crack Slaw” is a quick and healthy dinner made in about 20 minutes! This delicious one-pot meal has the flavors of a classic Chinese Eggroll without the added carbs. 

Easy Keto Egg Roll in a Bowl "Crack Slaw"

lb pork

coleslaw mix

tbsp sesame oil

ginger

tsp garlic

tbsp coconut aminos

scallions

Start by chopping your scallions, and mince the garlic. Set aside. 

Measure out 1 tablespoon of ginger paste. Or if you are using a fresh ginger root, then using a box grater grate the ginger. 

In a large frying pan add the ground pork and the minced garlic and saute on medium high heat. It should only take a few minutes to cook. 

Once the meat is cooked add the ginger and stir. Then add the coleslaw mix and combine. Cook for a couple of minutes, then turn the heat off. 

Pour the coconut aminos and sesame oil and stir. Top with the chopped scallions. 

I love this recipe, it super easy and very tasty!   Next time I make it I will use more cabbage and ginger, and toasted sesame oil instead of regular.

Keto Crack Slaw

lb beef

garlic

tbsp sesame seed oil

sriracha

soy sauce

tsp white vinegar

tsp white sugar OR splenda

tsp salt

tsp pepper

sesame seeds

onion

In a large skillet, fry the ground beef until cooked and no longer pink. Drain and return to the stove.

Push the ground beef to the side and add the sesame seed oil in the space. Add in the garlic and fry for 2-3 minutes, then mix into the ground beef.

Add in the coleslaw mix. Drizzle with white vinegar, sriracha, soy sauce and sprinkle with the sugar, salt and pepper. Fry for another 5 minutes until the cabbage is wilted to your liking.

Plate, then sprinkle with the toasted sesame seed and green onions.

This ground beef keto egg roll in a bowl is a delicious one-pan meal you can make in 30 minutes or less! It tastes like all the best parts of Chinese take-out but without the egg roll wrapper. This recipe is also low-carb, gluten, dairy, and soy-free.

Ground Beef Keto Egg Roll in a Bowl (Crack Slaw Recipe)

coconut oil

green cabbage (or coleslaw mix)

Keto Soy Sauce (or liquid aminos, see note)

Heat

Heat coconut oil in a large skillet over medium-low heat. Add garlic and ginger, cook 1-2 minutes.

Stir fry

Thinly slice cabbage or open a bag of coleslaw mix and add to the skillet. Toss to coat in oil. Stir fry for 5 minutes until softened.

Add Keto Soy Sauce or aminos, raise heat to medium-high. Continue cooking for 3 more minutes as liquid reduces, stirring occasionally.

Break

Add ground beef. Break apart any chunks with a spatula. Stir fry until lightly browned.

Scramble

Crack the eggs in a small bowl and whisk. Push cabbage and beef to the side of the skillet. Pour the eggs on the exposed pan surface. Scramble in place by pushing in with a spatula as the sides begin to cook.

Combine

Break apart the eggs and combine everything together in the skillet.

Toss

Garnish

Divided into portions and garnish each with green onions and sesame seeds.

This was a great way to use up some old cabbage! So much easier than actual egg rolls, but just as tasty. Will definitely make again!
