Keto Unstuffed Cabbage Roll Casserole

Preheat oven to 350 degrees. Prepare a 9x13 casserole dish with non-stick cooking spray.

In a stock pot or dutch oven, cook ground beef and onions over medium heat until the beef has browned and crumbled. Stir in the garlic. Drain well and return to pot.

To the beef, add the tomatoes and seasonings. Stir to combine.

Add cabbage over the sauce and cover the pot to help the cabbage begin to reduce. Stir occasionally until the cabbage begins to wilt.

Transfer the cabbage mixture to the casserole dish. Stir in cauliflower rice. Top with cheese.

Bake covered with aluminum foil for 20 minutes. Remove foil, add cheese and cook for an additional 5 to 10 minutes uncovered.

Preheat Your Oven: Preheat your oven to 350 to prepare for the skillet to go in the oven.

Cook Ground Beef and Onions: Heat avocado oil in an oven safe skillet over medium high heat. Add in sliced onions and minced garlic and saute for 5 minutes or until they begin to turn translucent. Add in ground beef and cook until no longer pink.

Omg this was so good. I used 1/4 cup of sun dried tomato pesto instead of the actual sun dried tomatoes and I think this really elevated the recipe!

This was a huge winner for my family!! Even my pickiest of eaters! Packed full of flavor &amp; SO EASY!! My advice... do yourself a favor &amp; use the sun-dried tomatoes (halves)... it makes it even more flavorful! 😋 I didn't know when to add them, but did so before I put the chicken back in to simmer in the sauce. We paired with Butter Garlic Angel Hair Pasta Roni &amp; salad. I also think the meal cost 26$ all together.

This is a delicious meal and I am thrilled to fix it. Quick and easy.   I had never had sun dried tomatoes but even the 5 year old loves it.  I plan to try all the meals.   I’m starting low carb.    For the carb eaters I fix Bow tie noodles. I also double the sauce recipe because my son-in-law is wild for the sauce.
