Made this the other night and it was yummy. Left out the mushrooms because I don’t like them. Added a jalapeno. Mixed the bacon back in instead of just putting it on top. Topped it with some shredded cheddar. I’ll be making this one again (several times probably) because chili is one of my favorite things. I was surprised that I didn’t even miss the tomatoes.

Delicious! This is one of my new fave recipes, its absolutely spot on! No need for beans or tomatoes (i am surprised about being ok with lack of tomatoes). I added more paprika to get that smoky, tangy, almost tomato-like taste and lime juice.

I did not like this at all.  I miss the tangy flavor  of real chili 😟

Made this today starting with frozen meat, with the help of my instant pot!  Delish! As family walked in the house they were drawn to aroma!

Thai Chicken Soup with Coconut Milk (Tom Kha Gai)

Tablespoon avocado oil

Onion, diced

Cloves garlic, minced

Tablespoons Ginger paste

Lemongrass paste

Boneless skinless chicken thighs

Cups Chicken Broth

Can coconut milk, full fat

Tablespoons Fish sauce

Tablespoons Lime juice

In a dutch oven over medium heat, add the avocado oil, onion, garlic, ginger, lemongrass and carrots.

Sauté until carrots begin to soften. Should take about 5-8 minutes.

Add in sliced mushrooms and sauté for five minutes more.

Add in chicken and continue to sauté until chicken is no longer pink. About 5 minutes.

Add in chicken broth, coconut milk, fish sauce, lime juice and red curry paste.

Stir and let simmer for 20 minutes uncovered.

Serve in bowls with cilantro for garnish.

This meal was my first foray into zoodles. OMG, it was gone and my table was delivering rave reviews!  We will most definitely be making this one again.

Not really all that great instructions. I also believe that their should be some nutritional information on this. Would also like to add that when me and my mom made this it was only enough for one small bowl for each of us. Not sure if the zoodles were supposed to be drained of all the liquid because this was my first dish with zoodles in it, but I found out that when it was almost a soup when we were done making it.

Keto Big Mac Bowl

Worcestershire sauce

Garlic powder

Cabbage (thinly shredded)

Mayonnaise

In a skillet over medium-high heat brown the ground beef. As it cooks add the worcestershire sauce, garlic powder, salt, and pepper.

When it is almost cooked through add the onions and continue cooking until the ground beef is cooked through and the onions are translucent. Drain the grease and set aside.

In the same skillet add a small amount of olive oil and the shredded cabbage. Saute until cabbage is slightly softened. Salt and pepper to taste.

Divide the cabbage between 4 bowls, top each with a 1/4 portion of the ground beef.

Sprinkle each with 1/4 cup of shredded cheese and top with 4 pickle slices each.

Pour the special sauce over each bowl and serve.

In a small bowl whisk together all of the ingredients and set aside.

This easy recipe for keto ground beef casserole with green beans is the perfect way to make a hearty low carb dinner for the family or for meal prep.It combines lean ground beef, green beans, cream cheese and is topped with shredded cheese then baked in a one skillet casserole.

lb Lean Ground Beef

tbsp Avocado Oil (sliced)

oz Cream Cheese

Shredded Cheddar

Parmesan

tbsp Coconut Aminos or Soy Sauce

Dijon Mustard

tbsp Crumbled Bacon (OPTIONAL)

¼ tsp Ground Black Pepper

Preheat Your Oven: Preheat your oven to 350 to prepare for the skillet to go in the oven.

Cook Ground Beef and Onions: Heat avocado oil in an oven safe skillet over medium high heat. Add in sliced onions and minced garlic and saute for 5 minutes or until they begin to turn translucent. Add in ground beef and cook until no longer pink.

Stir In Seasonings: Cut cream cheese into blocks and add to ground beef and onion mixture as well as the Coconut Aminos, Coarse Grain Mustard and black pepper. Turn heat down to medium and gently stir until cream cheese is melted and everything is combined. Once mixture is combined, fold in drained green beans.

Top and Bake In Oven: Evenly top green bean casserole with shredded cheddar, crumbled bacon and Parmesan cheese. Add skillet to preheated oven and bake for 10-12 minutes or until cheese is melted on top. Serve hot.

Heat the avocado oil (or olive oil) over medium-high heat in a large skillet (I recommend using a 12 inch large non-stick skillet with a deep lip).

Add the yellow onion and cook, stirring occasionally, until it begins to soften, about 5 minutes.

Make room in the center of the pan for the ground beef then place the ground beef onto the skillet and brown for 2-3 minutes per side before breaking it up into smaller chunks using a spatula.

Mix in the chopped cauliflower, chopped red bell pepper, garlic, chili powder and sea salt until well-combined.

Add in the water (or broth or tomato sauce) and baby spinach, cover the skillet and reduce to medium heat. Cook for 5 minutes, or until the spinach has wilted. Give everything a big stir and continue cooking until much of the liquid has evaporated and the cauliflower has reached your desired level of doneness, about 5 to 8 minutes. Taste the recipe for flavor and add more sea salt, black pepper, chili powder, or lime juice to your personal taste.

Serve this main dish in big bowls with any additional side dishes such as rice, beans, avocado slices, and more. If you do cheese, sprinkle the ground beef and cauliflower recipe with grated cheddar cheese or jack cheese.
