An old Southern favorite turned Keto! Light and fluffy biscuits smothered with creamy sausage gravy, you would not believe they are Low Carb!

Keto Biscuits and Gravy

Almond Flour

eggs (beaten)

Sour Cream

Grass-Fed Butter (melted)

Shredded Cheddar Cheese

swerve confectioners (or powdered erythritol)

Baking Powder

baking soda

uncured breakfast sausage (crumbled)

almond milk

heavy cream

mascarpone cheese

nutmeg

Salt and pepper

Preheat the oven to 450 degrees.

Add the almond flour, baking powder, Swerve and baking soda to a bowl and mix using a hand whisk.

In a separate bowl, add the eggs, sour cream and melted butter and mix until combined.  Add in the cheese and continue mixing. Then add the dry ingredients into the wet and mix until well combined.

Scoop the biscuit mix into silicone muffin pan liners (or spray a non-stick muffin pan with non-stick spray) and bake for 10-12 minutes or until the tops are slightly golden.

For the Biscuits

Add the sausage to a large frying pan and cook over medium heat.  Once the sausage is cooked through, add in the mascarpone cheese and melt it.  Then add in the rest of the ingredients and cook over medium heat for 5-7 minutes, or until the gravy has thickened nicely.

Allow the biscuits to cool slightly before cutting them open.  Once slightly cooled, slice the biscuits in half and pour some of the sausage gravy over the top.

Store leftovers in the fridge or freezer.

Keto Biscuits & Gravy

Mix keto drop biscuits in one bowl without yeast! There couldn’t be a faster way to prepare light and fluffy biscuits on a low-carb diet. You don’t have to knead or roll the dough, just combine the gluten-free ingredients and scoop a spoonful on a baking sheet, then pop it in the oven and bake until golden brown.

Keto Buttermilk Biscuits Recipe

almond flour

baking powder

garlic powder

parsley

salt

eggs

buttermilk

cheddar cheese

Preheat

Preheat the oven to 350 °F. Then, line a baking sheet with parchment paper and set it aside.

Combine

Combine the dry ingredients in a medium mixing bowl.

Whisk

Whisk the eggs in a second small bowl, and add the buttermilk and cheese.

Slowly incorporate the wet bowl into the dry one. Don’t over mix!

Drop

Drop rounded tablespoons of dough on the baking sheet and arrange with space between each one. Use a spoon or an actual tablespoon. Each biscuit will be about 2-inches in diameter.

Bake

Bake for 15 minutes until the tops turn golden brown, and a cake tester comes out clean. Remove from heat and let cool on the baking sheet. Serve warm or at room temperature.

Mine did too, 1st time.
Use a cupcake/muffin pan instead of a baking sheet.

My favorite biscuits!!
After the first time making them, I started using a muffin pan, much better!
 Also, after mixing wet and dry ingredients, let it sit for a few minutes, to activate, then drop into pan. Do not re-stir! 
I don't normally use cupcake liners, was going to share photo, but this is for Thanksgiving and other family members who are Keto and/or GF.

This sounds great and I am going to try them.

I am wondering if you can you delete the garlic and cheese to make regular breakfast biscuits?

Excellent biscuits !!  I have been a Type 1 Diabetic for over 50 years and have missed eating biscuits.  You just changed my life forever, thank you for this wonderful, easy recipe !! I will be making these on a very regular basis.

So I made these and they were good. There’s a bit of discrepancy on the cooking time though. At the beginning of the recipe it says 30 minutes but in the recipe it said 15 minutes. Perhaps it should be corrected or an inexperienced cook might have a disaster on their hands.
