This Keto Lemon Pie is the first recipe that I've added a crust. I thought that a pecan crust would be absolutely amazing along with the fresh lemon flavor in the Keto Lemon Pie. The crust is so simple with only three ingredients, so it takes very little effort. I think it tastes best if you pop it in the freezer for an hour or two before serving and it slices much better. I have included step-by-step pictorial instructions below for your convenience.

Keto/Low Carb Lemon Pie

pecans

tbsp butter, melted

Swerve

oz cream cheese, softened

heavy whipping cream

lemon

lemon juice

Swerve confectioners

vanilla

Preheat oven to 350 degrees. Crush pecans finely. I used a mini chopper.

Add butter and Swerve granular to crushed pecans and mix thoroughly. I added the ingredients to my mini processor and pulsed until all of the ingredients were combined.&nbsp;

Grease a pie pan then add crust mixture.&nbsp;

Grease the back of a spoon and use it to carefully smooth the pecan mixture in the bottom of the pie pan and up the sides.&nbsp;

Bake for 10 minutes and allow to cool.

For the Crust:

In a large bowl, beat the heavy whipping cream until it forms stiff peaks.

Add the softened cream cheese, Swerve Confectioners, and vanilla to the heavy whipping cream and beat on medium speed until the mixture is smooth.&nbsp;

Add lemon juice and lemon zest then beat again.&nbsp;*You may need more or less lemon juice and zest depending on the ripeness of your lemons. Make sure to taste the mixture as you are preparing the recipe.

Pour filling mixture into pecan crust and freeze for 1 to 2&nbsp;hours before serving. (You may store pie in fridge and pop in the freezer for about an hour or two before serving.)

The Best Ever Keto/Low Carb Lemon Pie

This Keto Lemon Pie has a tangy sour cream filling and an easy press-in crust. It&#39;s low carb, sugar-free, and utterly craveable.

Keto Lemon Pie Recipe

tbsp powdered sweetener

tsp glucomannan ((can sub xanthan gum, see notes))

heavy cream

butter

tsp lemon extract

full fat sour cream

keto pie crust (fully baked)

In a large, heavy-duty saucepan, whisk together the sweeteners and glucomannan.

Add the cream, egg yolks, lemon zest, and lemon juice and whisk to combined. Set over medium heat, whisking frequently, until the mixture begins to thicken. This takes 7 to 10 minutes. Keep a close eye on it, you do not want it to curdle.

Remove the pan from the heat and whisk in the butter and lemon extract. Let cool to room temperature.

Whisk in the sour cream until no lumps remain. Pour the mixture into pie shell and refrigerate for at least 4 hours to set - the longer, the better, so overnight is best if you can wait that long.

Top with lightly sweetened whipped cream.

I made this for the second time and it was still delicious. I did have ricotta cheese to use up and successfully substituted it for the sour cream. I don't usually make substitutions, but wanted to use the remaining ricotta that I had and it turned out great. It's a very light and refreshing treat, especially in our hot summer weather. I made a raspberry/blueberry keto compote to drizzle on top. I did freeze a few pieces the first time and they were also delicious and unaffected by freezing. Give it a try, I'm sure you will enjoy it.

This has become my new favorite recipe. I skip the crust and eat the filling by itself. Rather than discard the egg whites, I beat them until stiff and fold them into the lemon filling. It lightens it up and makes it the perfect dessert. I have yet to try one of your recipes that I don't love!

Oh Carolyn, have I told you that I love you?!!? And your recipes!!! Made this for Easter this year as I'm still working my way through my 30 pound box of lemons (lucky me!!!) and this did not disappoint. So easy to put together and the flavor is amazing! I used the lesser amount of sweetener as I prefer my lemon desserts a little tart and it was perfect. I made mine into 3 mini pies so I could keep one at home for myself. DIVINE!!! I know I can always count of you for awesome recipes that work perfectly.
