This meal was my first foray into zoodles. OMG, it was gone and my table was delivering rave reviews!  We will most definitely be making this one again.

Not really all that great instructions. I also believe that their should be some nutritional information on this. Would also like to add that when me and my mom made this it was only enough for one small bowl for each of us. Not sure if the zoodles were supposed to be drained of all the liquid because this was my first dish with zoodles in it, but I found out that when it was almost a soup when we were done making it.

Low Carb Keto Drunken Noodles

Teaspoons Golden Swerve or Lakanto ((note 1))

Teaspoon Xanthan Gum ((note 2))

Tablespoon Thai Fish Sauce

- 8 Ounce Packages Shirataki Noodles (fettucini style)

Cup Sesame Oil

Small Shallot (thinly sliced)

Cloves Garlic (minced)

Bell Pepper (thinly sliced)

Thai Chilis (minced. Can sub

Pound Chicken Breast (boneless + skinless)

Cup Fresh Basil (roughly chopped)

Make the sauce. Add warm water (1/3 cup), erythritol (2 teaspoons), and xanthan gum (1/8 teaspoon) to a bowl and whisk until dissolved. Be sure to sprinkle the xanthan gum over the top, otherwise, it will clump (note 3). Add the soy sauce (1/2 cup)and fish sauce (1 tablespoon), and whisk. Set aside.

Rinse noodles. Rinse your shirataki noodles (2 - 8 ounce packages) thoroughly by draining them in a colander and running water over the top as your toss the noodles with your hands for at least 1 minute. Set aside to drain.

Sear. Heat 2 tablespoons of oil in a large skillet over medium heat. Add chicken (1 pound) and sear each side (about 1-2 minutes) until golden (it won&#039;t be cooked through yet). Set seared chicken aside on a plate.

Saute.  Add remaining oil to the skillet, along with the bell peppers (1) and shallots (2 small) and cook for two minutes. Add Thai chiles (1-2), garlic (3 cloves) and green onions (8), and cook for another 2 minutes, or until they become fragrant. Add the noodles and toss to coat in the veggies and oil. Fry for about 3 minutes (this helps remove any weird taste the noodles may have, don&#039;t skip).

Simmer. Add the chicken back to the skillet, as well as the sauce. Toss to coat everything. Bring sauce to a simmer and allow it to cook for about 5 minutes until the sauce thickens, the chicken is cooked through, and the veggies are tender to your liking.

Serve + enjoy! Remove from heat, stir in the basil (1 cup), serve warm, and enjoy!

This keto pasta tastes identical to regular pasta, but it has just over 3 NET CARBS per serving! And all you need to make these keto noodles is just 2 or 3 ingredients. Plus, along with being low carb pasta, it is also gluten free!

Keto Pasta Made With Just 3 Ingredients

(112 grams) full fat shredded mozzarella cheese

¼ teaspoon xanthan gum (optional)

Add mozzarella cheese and xanthan gum to a large bowl and mix. Microwave for about a minute until the cheese melts.

Quickly mix the cheese with a spatula into a ball.

Add the egg yolk to the bowl (make sure cheese is warm, not hot before doing this) and use one hand to fold the cheese into itself and a spatula with the other hand to help combine until pasta dough is uniformly yellow in color.

Get out two pieces of parchment paper and sandwich the dough ball between them. Roll out until it's about 1/8 inch thick.

Spray a pizza cutter with baking spray and cut dough into pasta noodle strands.

Put the pasta on a baking sheet and refrigerate overnight or for at least 8 hours.

Separate the strands from one another after refrigerating.

Add warm water to a large pot and boil on your stovetop. Once water is boiling, add pasta to it and cook for just 1 minute.

Wash pasta under water that is not too warm, not too cold, and shake off any excess water that is on it.

These are amazing. I was careful and followed your directions to a “T.”  The pasta turned out perfectly the first time made. No egg or cheese taste flavor bled through the “noodle” or the sauce. I ate the whole serving and am more than satiated. Thank you for the great recipe. Now I can have spaghetti with my husband.

Loved the flavor of these and the texture was great too! My only wish is that the calories were lower.

Shirataki noodles have no carbs, practically no calories, and when prepared correctly, have texture but not much flavor of their own.

How to Cook Shirataki Noodles

unsalted butter

Parmesan (grated)

Place shirataki noodles (1 7 ounce package) in a colander and run cold water over them for a few minutes, occasionally tossing. This will remove the fishy smell. While in the colander, I like to cut the noodles so they aren&#39;t as long using kitchen scissors, but that&#39;s optional.

Place noodles in a microwave safe bowl, and microwave on high for 2 minutes, this will help their texture. Remove from the microwave and dab with paper towels to remove as much liquid as possible.

Melt butter (1 tablespoon) in a large pan over medium heat. Add the garlic (2 cloves) and saute until fragrant. Add the noodles, salt (1/4 teaspoon), and pepper (1/4 teaspoon). Toss and continue to cook until the noodles become opaque and are well coated in butter for 5 minutes. They should no longer squeak in the pan.

Remove the noodles from heat and add the parmesan (3 tablespoons). Toss to coat, and enjoy!

In a bowl, beat egg yolks and cream cheese. Add parmesan and mozzarella. Continue beating with a mixer. Sprinkle spices. Continue mixing well.

In a parchment lined sheet pan, evenly spread egg and cheese mixture. Flatten with a spatula or back of a spoon.

Place sheet pan in a preheated oven at 475°F and lower heat to 350°F. Bake for 5 to 8 minutes. Watch closely as you need to avoid overcooking. If small bubbles start to appear, lower heat to 300°F and continue baking for 2 to 3 minutes until all sides and center are done. (You can test for doneness just like testing a cake with a toothpick, if you wish).

Allow to cool at room temperature for 10 to 15 minutes before slicing. Slice according to desired size, using a knife or pizza cutter. Serve with sauce, if desired.
