These Easy Keto Low-Carb Soft Cream Cheese Sugar Cookies are a simple and sugar-free recipe. They are made with almond flour and perfect for Christmas cookies and the holiday season.

Easy Keto Low-Carb Soft Cream Cheese Sugar Cookies

unsalted butter (Softened)

Preheat oven to 350 degrees.

Line a cookie sheet or sheet pan with a silicone baking mat.

Add the sweetener and butter to a mixing bowl and mix with a hand mixer.

Add in the cream cheese and mix.

Add in the egg and vanilla. Mix.

Add the almond flour and mix until cookie dough forms.

With wet hands, use a cookie scoop or spoon to shape the cookies. For large cookies I make them with 1 ½ to 2 tablespoons of cookie dough. This will produce 10- 12 cookies. Flatten each using the palm of your hands.

Bake for 10-14 minutes until the cookies begin to brown. Mine were done around 11 minutes. You don’t want the bottoms to turn brown, this will result in burnt cookies. The bottom should be golden when removed from the oven.

Remove the cookie sheet from the oven. Allow the cookies to cool for about 10 minutes before transferring to a cooling rack.

Combine the ingredients and spread on the cookies. If this doesn't produce enough icing for you, add more cream cheese and confectioners sweetener as needed.

Ice the cookies after they have cooled completely.

Keto Low Carb Sugar Cookies

flour

coconut flour (, measured correctly (spoon & sweep))

fruit

fine sea salt

unsalted butter

cream cheese (softened, can also sub with KiteHill vegan cream cheese

powdered monk fruit sweetener (Swerve or erythritol)

heavy cream OR coconut cream

almond milk or lemon juice,

In a stand mixer fitted with the paddle attachment turned to low speed, mix the almond flour, coconut flour, sweetener, and salt together until combined.

Turn the mixer to medium, then add the butter, 1 cube at a time, and mix until the dough looks crumbly and slightly wet about 2 minutes.

Add the cream cheese, vanilla and almond extract and beat for another 30-60 seconds until the dough just begins to form large clumps, scraping down the sides of the bowl as needed.

Gather dough with hands and knead just until it sticks together (add 1 tablespoon of almond flour at a time as needed if dough seems too wet). Shape into a disc and wrap in plastic. Chill in the refrigerator for at least 35 minutes (or up to 2 days).

Line two large baking sheets with parchment paper. Set aside. When ready to roll, remove and unwrap dough disc from the fridge.

Place a large piece of parchment paper on a flat surface. Place dough in the center. Place another large parchment paper on top of the dough and using your rolling pin, roll into 1/4 inch thickness (1/8 inch for thinner cookies). Place the cookie dough sheet in the freezer for 10 minutes.

Remove the cookie dough sheet from the freezer and remove the top parchment paper. Cut into shapes with cutters of your choice. Place cut cookies on lined baking sheets, about 1 inch apart then place in the freezer again for 10 minutes (to prevent spreading). Repeat with any scraps.

Preheat oven to 325° F.

Bake cookies, one sheet at a time, on the middle rack for 13-17 minutes, rotating the pan halfway, or until edges are light golden brown (do not overbake).

Allow cookies to cool on baking sheet for 15 minutes then transfer to a cooling rack until cool. (cookies will continue to bake &amp; harden)

Frost or decorate cookies as desired.

In a medium bowl, combine the powdered sweetener with coconut cream until smooth. Add almond milk or lemon juice as needed to desired consistency.

How to make Keto Sugar Cookies - The BEST Low Carb Cookies

Easily the best keto sugar cookies you will ever make. This cut out sugar cookie recipe produces sturdy but tender cookies that stand up to your favorite sugar-free frosting and decorations. Perfect for any holiday or event, and so fun to decorate!

tbsp coconut flour ((can also use oat fiber))

tbsp egg white powder

Water

tsp vanilla extract

Natural food coloring

Prepare a work surface with a silicone baking mat or a large piece of parchment paper. Dust lightly with coconut flour.

In a medium bowl, whisk together the almond flour, coconut flour, and salt. In a large bowl, beat the butter and sweetener together until creamy. Beat in the egg and vanilla extract, and then beat in the almond flour mixture until dough comes together.

Turn the dough out onto the prepared work surface. Pat into a rough circle and then top with a large piece of parchment paper. Roll out to about 1/3-inch thickness. Place the whole mat on a cookie sheet and chill in the refrigerator for at least an hour.

Preheat the oven to 325F and line two large baking sheets with silicone mats (you can use parchment paper as well but it doesn&#x27;t protect your cookies from the heat quite as well. Using cookie cutters of choice, cut out cookies and lift carefully with a small, offset spatula or knife.

Place cookies on the prepared baking sheets. Re-roll your dough and cut out more cookies (if your dough gets too soft to work with, you can return it to the refrigerator for a bit to harden up).

Bake the cookies 12 to 14 minutes, or until they are just starting to brown around the edges, switching and rotating the pans halfway through baking. Remove from the oven and let cool completely on pan. The cookies will still be quite soft when removed from the oven but will firm up as they cool.

Cookies:

In a large bowl, whisk together the sweeteners and the egg white powder. Add water, 1 tablespoon at a time, whisking in between, until desired consistency is achieved. It should drizzle off the end of the whisk in ribbons, but shouldn&#x27;t be too thin. Whisk in the vanilla extract.

Divide into sepate bowls and add food coloring in small amounts until the desired color is achieved.

Place icing in small ziploc bags or piping bags with the very corner snipped off to pipe outlines. Let the outlines dry at least 10 to 20 minutes before filling in.

To fill in the outlines, pipe frosting into the outline in a back and forth motion. It does not have to be perfect and there may be gaps. Then simply use a toothpick to fill the icing into the gaps.

Let the flooded icing dry completely before adding any additional icing decoration. (Or do what I did for one cookie, add little dots of another color and swirl them in with a toothpick. So many fun options!).

Using an electric hand mixer or a whisk, cream together the butter and monkfruit until light and pale in color. Add in the egg, vanilla extract, and almond extract and beat until evenly combined.

Next, add in the almond flour, coconut flour, baking powder, and salt then mix until a firm dough is formed.

Bring the dough together into a ball then wrap tightly in cling wrap. Transfer the dough to the fridge and chill for a minimum of 2 hours to overnight.

Once ready to bake, preheat your oven to 350°F (180°C) and line 2 cookie sheets with parchment paper, set aside.

Place the dough onto a large sheet of parchment paper, then cover with another large sheet, sandwiching the dough between the 2 sheets. Using a rolling pin, roll the dough out into a 1/4 of an inch thick sheet. Using cookie cutters, cut the dough into a variety of shapes.

Using a large offset spatula or a flat turner, gently run under each cookie, lifting off the parchment and removing from the excess cookie dough. Place the cutout cookie onto the prepared cookie sheet. Repeat this process until all of the cookies have been removed from the sheet. If you have a lot of excess dough after removing the cookies, roll the dough out again and continue to cut out cookies until all of the dough is used. This will make 16-18 large cookies, depending on what shapes you use.

Bake the cookies 1 cookie sheet at a time for 10-12 minutes, or until lightly golden brown and crisp.

Remove from the oven and allow to cool slightly before transferring the cookies to a rack to cool fully.

Dust with powder monkfruit or swerve if desired.

Cover and store the cookies in an airtight container at room temperature for up to 4 days.

Keto Rolled Sugar Cookies

A classic cookie everyone enjoys, this keto sugar cookie recipe has an incredible flavor with a keto friendly sweetener. With each bite, it's hard to believe they are low carb and are a must have for the keto diet. This best ever keto sugar cookie recipe produces a cookie that is soft, yet still has that crunch when you bite into it. They make the perfect cutouts too!

Sift dry ingredients

Sift together our dry ingredients: almond flour, coconut flour, baking soda, cream of tartar and salt. This creates a finer texture for keto cookies. I highly recommend you don't skip this step.

Mix wet ingredients

In large bowl, cream together the butter and powdered erythritol until fluffy (about 2 minutes). Beat in vanilla extract along with the almond extract if using. Then beat in eggs.

Refrigerate dough

Add flour mixture and beat until just combined. Place dough into between two pieces of parchment paper and flatten down to a small disc shape. Refrigerate for at least 2 hours. May store in freezer in a Ziploc bag for later use too.

Roll it out

Keeping the dough between the parchment paper. Lay down a wet paper towel and place the dough and parchment paper on top. Using a rolling pin, roll out dough to about 1/8 to 1/4 inch thickness between the two sheets of parchment paper. Refrigerate for additional 20 minutes.

Preheat oven

Punch out shapes and bake

Remove the top piece of parchment paper and cut out shapes. Place on a parchment lined baking tray about 1.5 inches apart. Bake until starting to get golden brown around the edges, about 8-9 minutes. Remove from the oven, let cool on baking tray for 5 minutes before transferring to a wire rack. Decorate with keto royal icing once completely cooled.

Decorate

To make keto royal icing, combine 1 cup powdered erythritol sweetener, egg whites, cream of tartar, and salt in a small bowl. Whisk until smooth. Remove 1/3 of the icing into a smaller bowl and add remaining 1/4 cup powdered erythritol. Whisk until slightly thicker than original icing mixture. Use the first batch of icing to flood the inside of the cookies with icing and the second thicker batch to outline the cookie. Add icing batches to two separate piping bags. Using the thicker icing, pipe the borders of your cutout cookie. Then using the thinner icing, flood the inside of the outline.
