You don’t need a hangover to enjoy these keto drunken noodles! Try them anytime you&#039;re craving sweety, spicy and saucy noodles!

Low Carb Keto Drunken Noodles

Teaspoons Golden Swerve or Lakanto ((note 1))

Teaspoon Xanthan Gum ((note 2))

Water

Cup Soy Sauce

Tablespoon Thai Fish Sauce

- 8 Ounce Packages Shirataki Noodles (fettucini style)

Cup Sesame Oil

Small Shallot (thinly sliced)

Cloves Garlic (minced)

Bell Pepper (thinly sliced)

Thai Chilis (minced. Can sub

Onions

Pound Chicken Breast (boneless + skinless)

Cup Fresh Basil (roughly chopped)

Make the sauce. Add warm water (1/3 cup), erythritol (2 teaspoons), and xanthan gum (1/8 teaspoon) to a bowl and whisk until dissolved. Be sure to sprinkle the xanthan gum over the top, otherwise, it will clump (note 3). Add the soy sauce (1/2 cup)and fish sauce (1 tablespoon), and whisk. Set aside.

Rinse noodles. Rinse your shirataki noodles (2 - 8 ounce packages) thoroughly by draining them in a colander and running water over the top as your toss the noodles with your hands for at least 1 minute. Set aside to drain.

Sear. Heat 2 tablespoons of oil in a large skillet over medium heat. Add chicken (1 pound) and sear each side (about 1-2 minutes) until golden (it won&#039;t be cooked through yet). Set seared chicken aside on a plate.

Saute.  Add remaining oil to the skillet, along with the bell peppers (1) and shallots (2 small) and cook for two minutes. Add Thai chiles (1-2), garlic (3 cloves) and green onions (8), and cook for another 2 minutes, or until they become fragrant. Add the noodles and toss to coat in the veggies and oil. Fry for about 3 minutes (this helps remove any weird taste the noodles may have, don&#039;t skip).

Simmer. Add the chicken back to the skillet, as well as the sauce. Toss to coat everything. Bring sauce to a simmer and allow it to cook for about 5 minutes until the sauce thickens, the chicken is cooked through, and the veggies are tender to your liking.

Serve + enjoy! Remove from heat, stir in the basil (1 cup), serve warm, and enjoy!

This quick and easy keto Pad Thai recipe is loaded with all the traditional flavors of an authentic Pad Thai recipe - sweet, tart, and with a hint of spice. Best of all, it's a one pot recipe and can be on the table in less than 30 minutes.

Keto Chicken Pad Thai

green onions,

garlic,

chicken

eggs, whisked

bean sprouts

cilantro leaves

peanuts

red pepper flakes,

lime, quartered

Combine all ingredients for the sauce in a small bowl and set aside.

Drain, rinse, and soak the shirataki noodles in fresh water for 20 minutes. Strain them and dry fry them a large skillet, over medium heat for 5 minutes. Add half of the sauce to the pan, and cook for an additional 5 to 10 minutes or until most of the sauce has cooked into the noodles. Transfer the noodles, and any remaining sauce to a bowl and set aside.

To the same skillet, add the coconut oil, the white parts of the green onions, and the garlic. Cook until the onions are translucent and the garlic is fragrant.

Add the chicken to the pan and cook until it is browned and cooked through.

Push the chicken to the sides of the pan and pour the whisked eggs into the center, pushing them around with a rubber spatula to scramble.

Add the bean sprouts, the noodles, and remaining sauce to the pan and cook for an additional 5 minutes.

Garnish with cilantro, peanuts, red pepper flakes and lime, before serving.

This was exceptionally good!  I have made traditional pad Thai for decades and I was looking for a carb friendly version.  This has all of the usual great flavors.  The cabbage is a wonderful substitute for rice noodles.   I sautéed shrimp in red Thai curry paste and added bean sprouts.  I only used about l/2 of the sauce as it seems the cabbage released liquid in cooking.  Definitely a keeper.  Thanks.
