Our easy to make single serve Keto Tiramisu recipe will transport you to Italy without the the traveling or the carbs!

Keto Tiramisu

almond flour

coconut flour

tsp powdered erythritol

baking powder

salt

tsp vanilla extract

liquid stevia

1.5 tbsp butter, room temperature

coffee

tbsp rum ((optional))

oz cream cheese, room temperature

erythritol

liquid stevia ((to taste))

heavy whipping cream

cocoa powder ((for garnish))

Preheat oven to 375°F and line a baking sheet with parchment paper.

Combine almond flour, coconut flour, erythritol, baking powder and salt. Mix until well combined using a whisk.

Add the vanilla, egg and butter to the dry ingredients. Cut the butter into flour mixture, or combine on pulse setting in a food processor.

Chill dough in the freezer for 10 minutes.

Once chilled, form the batter into 4 balls and flatten them. Space at least 1.5 inches apart from each other on baking sheet.

Cook for 6-8 minutes of until golden brown around the edges. Remove and allow to cool prior to dunking in coffee mixture

Cookie Layer

While cookies bake, combine coffee and rum (if using) in a small bowl; chill.

Coffee Mixture

In a medium mixing bowl, combine cream cheese, vanilla extract, erythritol, and stevia using an electric mixer until smooth and creamy.

Pour the heavy cream into a separate bowl and whisk on high speed until medium to stiff peaks form, about 1 minute. Do not over beat.

Add the whipped cream,  into the cheese mixture and whisk on low speed until the cream cheese is well incorporated into the cream, about 1 minute.

Spoon some cream into the bottom of a stemless wine glass or dessert cup. Dip a cookie in the coffee mixture for 5 seconds, soaking it lightly and then place on top of the cream. Dollop some more cream on top of the cookie.

Sprinkle with unsweetened cocoa powder, if desired, and refrigerate until ready to serve. Repeat steps to create three more keto tiramisu desserts.

Leftovers best stored in air tight container (small glass jars work great) in the fridge up to 2 days.

Note: Feel free to use only a portion of the filling. This will decrease the fat and calories on each Keto Tiramisu!

Preheat the oven to 325F and grease a rimmed 15x11 inch rimmed sheet pan. Line the bottom of the pan with parchment and grease the parchment.

In a large bowl, whisk together the almond flour, sweetener, coconut flour, protein powder, baking powder, and salt. Stir in the eggs, water, butter, and vanilla extract until well combined and smooth.

Spread the batter evenly in the prepared pan and bake 18 to 22 minutes, until the edges are golden brown and the top is just firm to the touch.

Remove and let cool completely in the pan.

Cake Layers

In a small bowl, whisk together the coffee and the rum. Set aside.

Coffee Syrup

In a large bowl, beat the mascarpone until smooth, then beat in 1/2 cup of the sweetener. Add 3 tablespoons of the coffee/rum mixture and beat until well combined.

In another large bowl, beat the cream with the remaining sweetener and the vanilla extract until it holds medium soft peaks (the top of the peak should fall over when the beaters are lifted).

Gently fold the whipped cream into the mascarpone mixture until well combined.

Tiramisu Filling

Cut the cake into pieces to fit into the bottom a 9x9 inch pan. Brush with half of the remaining coffee mixutre. Spread half of the mascarpone mixture over top.

Repeat with remaining cake, coffee mixture, and mascarpone mixture. You will have a few bits of cake left over. Discard or use for snacking!

Dust the top of the tiramisu with cocoa powder and grate the chocolate over top. Refrigerate 2 hours to firm up before cutting.

To Assemble

Smooth and creamy mascarpone cream fill the layers between these light and fluffy pancakes, with a dusting of cocoa powder over the top!

Keto Tiramisu Pancakes

Oat Fiber (see notes)

eggs (separated)

vanilla extract

swerve confectioners (or powdered Erythritol)

heavy cream

coffee extract

Avocado oil

mascarpone cheese (room temperature)

heavy cream (cold)

coffee (at room temperature)

Mix the almond flour, oat fiber, baking powder and salt in a bowl and set aside. In a separate bowl, whip the egg whites until you get soft peaks and set aside.

In another bowl, add the egg yolks, swerve, heavy cream, vanilla and coffee extracts.  Mix using a hand mixer for about 2 minutes.  Add the egg whites in and mix briefly.

Add the dry ingredients into the wet and mix until combined.  Batter should be a little loose, but not too runny.  Add a little more heavy cream, if needed.

Add some avocado oil or clarified butter/ghee to a skillet on low heat and add the pancake batter to make pancakes of about 3-4” in diameter.

Cook them on low heat with a lid on for a few minutes on each side, this is key!

To Make the Pancakes

Add the heavy cream to a bowl and whip to stiff peaks, set aside.  Whip the mascarpone cheese, swerve and vanilla in a separate bowl.  Then fold in the whipped cream until well combined.

To Make the Filling

Add a pancake onto a plate, brush some of the coffee over the top so that it soaks in.  Top with a dollop of the mascarpone cream.  Sprinkle a dusting of the cocoa powder.  Add another pancake over the top and repeat the process.

This is divine! The fluffiest pancakes ever, and the mascarpone filling is unbelievable. I skipped the coffee extract and sprinkled fresh blueberries on top, and thought it was heavenly. Keto or not, this is absolutely amazing. Great weekend treat! Enjoy!
