Homemade KFC Potato Wedges

Russet potatoes

all-purpose flour

milk

salt

garlic salt

onion powder

Wash potatoes well, and cut into small wedges. The wedges should be no larger than 3/8 of an inch thick at the outside of the potato. Ideally, the potato wedges should be cut as uniformly as possible.

Place the potato wedges in a large bowl and add enough water to cover the potatoes. Allow the potatoes to soak for at least 1 hour (best overnight).

Combine milk and egg in a small bowl. Whisk together to mix the egg fully into the milk.

In another bowl, combine flour, salt, garlic salt, onion powder, black pepper, and poultry seasoning.

Heat oil to 350 degrees.

Dredge the potatoes in the flour, then dip into the egg wash, and then back into the flour.

Place the breaded potatoes on a wire rack on top of a baking sheet to allow them to dry. The coating will set up and stay on the potatoes better if allowed to set for 5 to 10 minutes before frying

Fry potatoes in batches for 5 to 6 minutes, remove and place on a wire rack to drain.

After the first cooking time, place each batch of potatoes back into the oil for another 3 to 4 minutes. This second cooking will result in potatoes with a very crisp outer coating. When removed for the second time drain on the wire rack, and then serve immediately.

Dice chicken into bite sized pieces.

Use 3 shallow bowls or rimmed plates (empty pie plates are great for this) to set up a breading station.In the first bowl, mix together the flour, paprika, onion powder, salt, and pepper. Set aside.In the second bowl, add the egg whites and whisk well.In the third bowl, spread the panko bread crumbs.

Fill a heavy-bottomed stock pot, deep cast iron skillet, or Dutch oven with at least 2 inches of oil and begin heating over medium-high heat.  Clip a cooking thermometer to the stock pot, to monitor the temperature of the oil.  Heat the oil until it reaches precisely 350°F.

Meanwhile, bread the chicken pieces by dipping them in the flour mixture, then in the egg whites, back into the flour mixture, once more in the egg whites, and finally, roll them in the bread crumbs.

Drop breaded chicken pieces, a few at a time, into the hot oil.  Use a slotted spoon to turn them over after about a minute.  Cook for 2-3 minutes total, until the breading is a deep golden brown.  Check that the internal temperature of the chicken is 165°F to confirm that the chicken is properly cooked through.

Remove from the hot oil and place on paper towels to drain off the excess oil.

Divide the mashed potatoes between 4 small soup or cereal bowls. Sprinkle 1/4 cup of cheese over the potatoes, then top each bowl with 3 ounces of fried chicken pieces and a couple of tablespoons of corn. Drizzle desired amount of gravy over each bowl and serve while hot.

Grease a 9X13 inch baking dish with butter. Spray a piece (large enough to cover the baking dish) of aluminum foil with cooking spray. Place on counter sprayed side up; set aside.

Preheat oven to 400°F (204°C).

Spread the prepared mashed potatoes (6 cups) in an even layer in the buttered baking dish.

Sprinkle the heated corn (8 ounces) evenly over the mashed potatoes.

Sprinkle the heated chicken (26 ounces) in an even layer over the corn.

Evenly sprinkle the cheese (2 cups) over the chicken.

Cover the casserole dish with prepared foil and bake in preheated oven until the cheese has melted and the ingredients are heated through.

Remove from oven, pour gravy (1 jar) over top of the casserole, return to oven uncovered, and continue to bake another 7-10 minutes. Remove from oven, sprinkle with parsley if using, and serve!
