Quick and easy Khao Pad Thai fried rice recipe made with fragrant jasmine rice, prawns/shrimp, chillies, garlic, shallots and 3 ingredients stir fry sauce. Add your choice of protein and vegetables and create restaurant-quality Thai fried rice at home in 15 minutes!

Khao Pad ( Thai Fried Rice )

Prawns (Peeled and deveined prawns, chicken

Garlic (Finely chopped)

Shallot onion (Or small onion, finely chopped)

Bird eye chilli (Or hot chillies, cut thin slices)

2-3 Spring onion (Green onions/scallion, Cut thin slices)

Eggs

2-3 tbsp Oil (Vegetable, sunflower, canola, peanut oil, etc.)

Salt & pepper

tbsp Fish sauce

tbsp Light soy sauce

tbsp Brown sugar (or regular white sugar)

Cucumber slices

Lime wedges

Coriander

Add the sauce ingredients fish sauce, light soy sauce, and sugar in a small bowl. Whisk it well until sugar dissolved. ( You can heat up in microwave for 4-5 seconds to melt the sugar. )

Heat the large wok or pan over medium heat, drizzle 2 tbsp of oil and stir fry the shallots and garlic for a few seconds until fragrant. Add the prawns and cook for 1-2 minutes.

Then, push the prawns to one side of the wok, drizzle 1 tbsp of oil and add 2 eggs inside the wok. Let it set for a few seconds then break them into small pieces. Add chillies and sprinkle salt and pepper to taste.

Next, add the cooked rice and pour the sauce mixture over the rice. Bring the heat to a high and stir fry for about 2 mins or until the sauce is combined well with the rest of the ingredients.

Add spring onions, toss everything well for another 1-2 mins. Transfer to a serving plate and garnish with, cucumber, lime wedges, and coriander.

Khao Pad or Thai Pineapple Fried Rice is a flavorful and easy-to-make main dish. This recipe includes eggs, vegetables, seasonings, fish sauce, oyster sauce, chile paste, pineapple, cashews, and chicken, but you can add or substitute to your heart&#x27;s content.

Thai Pineapple Fried Rice (Khao Pad)

cooking oil (divided)

eggs (beaten)

green onions (thinly sliced)

unsalted cashews

white rice

chicken

peas

fish sauce (or more if needed)

oyster sauce

chili paste (to taste)

In a large skillet or wok, heat 1 tablespoon of the oil over medium-high heat. Once the oil shimmers in the pan, add the eggs and cook, stirring and moving them around frequently until they are set, about 1 minute. Transfer the eggs to a plate or bowl and use a spatula to chop them up into pieces.

Add 1 tablespoon of the oil to the skillet. When it shimmers, add the carrots and cook, stirring occasionally, until they begin to soften, 3 to 5 minutes. Add the pineapple and cook, stirring frequently,until the pineapple begins to brown on the edges, the carrots are tender, and all of the liquid has evaporated, about 5 minutes. Stir in the green onions and garlic and then remove from the heat and transfer the pineapple and carrots to the bowl with the eggs.

Add the remaining tablespoon of oil to the skillet. When it shimmers, add the cashews and cook, stirring, just until they become aromatic, about 1 minute. Add the rice to the skillet, breaking up any big clumps as you add it. Wet your hands before handing the rice to prevent it from sticking. Spread the rice out in an even layer and cook, stirring and turning the rice occasionally, until the rice is heated through and beginning to brown in places, about 5 minutes.

Add the eggs, carrots, and pineapple to the skillet along with the chicken and peas. Cook, stirring, for about 5 minutes more, until everything is heated through.

Stir in the fish sauce, oyster sauce, chile paste, and lime juice and remove from the heat. Taste and adjust seasoning as needed.

Serve hot.

I used chicken and green beans for this recipe and all my kids loved this khao pad. The balance of sweet, savory, and spicy is perfect and the cashews added a great crunch. Will definitely make this again.
