Homemade Healthy Hamburger Helper

Lb 85% Lean Ground Beef

tsp Cornstarch

Onion powder

Garlic powder

Paprika

Salt

Cups Hot Unsweetened Almond Milk*

Cup tomato sauce*

oz Chickpea elbow macaroni noodles

Cup Cheddar cheese, (grated (optional))

Heat a large, high-sided skillet to medium heat and cook the beef until browned, about 5-6 minutes. Discard the extra fat.

Sprinkle the cornstarch, spices and salt all over the beef. Then, pour in the milk, broth and tomato sauce (make sure they are hot!) and stir until well combined. Bring to a boil.

Once boiling, stir in the chickpea pasta. Boil for 1 minute, stirring frequently.

Then, reduce the heat to medium-low, cover the pan and simmer for 10 minutes, stirring every 3 minutes or so.

After 10 minutes, remove the lid and cook until thick and reduced, about another 5-7 minutes, stirring occasionally.

Stir in the cheese, if using and DEVOUR!

Air Fryer English Muffin Pizzas

English Muffins (I used Thomas English Muffins)

oz pizza sauce

mozzarella cheese

oz mini pepperoni

Italian seasoning, garlic powder

Split the English Muffins in half so you have 12 English Muffin halves.

Place the English Muffins split side up in the air fryer for 3 minutes at 400 degrees.

Remove from air fryer and top each with pizza sauce, cheese, mini pepperoni, Italian seasoning, and garlic powder.

Place back into the air fryer for 4 minutes at 400 degrees.Note: Depending on the size of your air fryer this may need to be done in smaller batches.

One Pot Steak and Mushroom Pasta has a creamy and decadent pasta sauce with steak and mushrooms, the leftovers are fabulous as well!

One Pot Steak and Mushroom Pasta

olive oil

kosher salt, pepper

oz baby portobello mushrooms (sliced)

Tbsps butter

garlic

beef broth

heavy cream or whole milk

bow tie pasta (uncooked)

parsley

Set a large pot over medium high heat, add 1 Tbsp of the olive oil and the steak. Season with kosher salt and pepper. Cook 3 to 5 minutes, stirring a few times and remove the steak and set aside.

Lower the heat to medium and add the remaining olive oil and the mushrooms. Season with kosher salt and pepper. Cook 5 to 7 minutes, stirring a few times. Remove the mushrooms and set aside.

In the same large pot over medium heat and add the butter. Once the butter melts add the garlic and cook 1 minute.

Add the beef stock, heavy cream or milk, uncooked bow tie pasta, kosher salt, and pepper. Bring this to a boil, then reduce the heat to medium low for 14 to 16 minutes, until most of the liquid is absorbed. Stir it a few times throughout.

Add the cheese, cooked steak, and mushrooms. Cook 1 more minute or until cheese is melted.

Serve with fresh chopped parsley if desired.
