Easy Kimchi Jjigae (Kimchi Stew)

rice water (anchovy stock, dashi, or water)

kimchi juice (from the kimchi)

Gochugaru (Korean red chili flakes) (to taste)

tbsp Doenjang (Korean soybean paste) (or soy sauce)

Add sesame oil to a pot over medium heat. Add onion, garlic, kimchi, and sugar, and cook for about 3-4 minutes, stirring often to ensure even cooking. Add rice water and bring to a boil.

When the stew starts boiling, add kimchi juice, Gochugaru, and Doenjang (or soy sauce). Cook for about 8 minutes, or to your desired consistency.

Add tuna and tofu and cook for another 2 minutes, and season with salt to taste, and add in Dashida if using. Garnish to your preference and enjoy!

pack instant ramyeon noodles

cheese

chicken broth (anchovy stock, dashi, or water)

tbsp Gochugaru (Korean chili flakes) (or to taste)

tbsp Gochujang (Korean chili paste)

soy sauce

mirin (or 1/2 tbsp sugar)

Combine all sauce ingredients in a small bowl.

Assemble the spam, tofu, mushrooms, sausages, rice cakes, onion, and kimchi in a shallow pot. Add the sauce and chicken broth, cover, and bring to a boil over medium-high heat.

When the stew starts to boil, reduce the heat to medium and cook for about 5 minutes. Add the noodles and cheese, and boil for another 3-4 minutes until the noodles are cooked through.

Garnish with green onion and serve with a bowl of steamed rice. Enjoy!

Kimchi Tofu Soup (Meal-for-one Recipe)

Use a pair of scissors (or a knife) to cut 150g kimchi into bite-size pieces. Set aside.

Cut 200g soft tofu into 2 inch cubes. Cut a small wedge of onion. Chop off the seafood mushrooms&#39; roots and discard. Peel and slice a clove of garlic. Chop some green onions, fresh peppers, and cilantros, set aside.

Preparation

In a small stone bowl (or saucepan), heat sesame oil over medium high heat for 1 minute.

Add onion and garlic, stir with chopsticks for about 1 minute until fragrant. Add kimchi, stir for 1 minute until hot.

Reduce the heat to medium low, add soybean paste, stir until well mixed. Add tofu and mushrooms, pour in chicken stock or water to immerse the tofu.

Sprinkle Korean chili powder over the soup. Gently stir until the color of the soup looks even. Turn heat to medium high to bring the soup to a boil.
