Asian prawn salad recipe with king prawns, vegetables and spicy, sweet, salty chilli lime dressings. So fast and easy to make at home in 15 minutes with simple cupboard-friendly ingredients.

Prawn Salad with Asian Dressing

200 g King prawns (Peeled and deveined cooked prawns, thawed)

100 g Glass noodles (Cellophane/ Mung Bean or Rice Noodles)

Salad onion (Cut thin slices)

tomatoes

Red chilli pepper (Cut thin slices (Optional))

Coriander (Roughly chopped)

Mint leaves

tbsp Fish sauce (Or Light soy sauce

Lime juice (Fresh squeeze lime juice)

tbsp Sugar (Or honey/brown sugar)

Garlic (Finely chopped/grated)

Finger chillies (Or bird eye chilli

Thaw/defrost the prawns according to the packet instructions. Gather and prepare all the vegetables. Combine all the dressing sauce ingredients, in a small bowl. Mix well until sugar dissolved and set it aside.

Soak the glass noodles in hot boiling water for 8-10 minutes until soft and cooked through. Then drain the water out and shake the excess water out. Or you can boil according to the packet instructions.

In a large mixing bowl, place the cooked glass noodles, prawns, cherry tomatoes, onions, chilli slices, coriander and mint leaves.

Pour the dressing sauce and toss well to combine everything evenly.

Transfer to serving plate and sprinkle roasted crushed peanuts and fried onions.

400 g frozen king prawns, peeled and raw ((£5.95))

baby gem lettuce, ((£0.89))

150 g radishes,thinly sliced ((£0.39))

mango, ((£1.29))

red onion, thinly sliced ((£0.15))

Fresh coriander, torn to serve ((£0.60))

tbsp extra virgin olive oil

tbsp rapeseed oil

soy sauce

tbsp honey

tbsp rice vinegar

brown sugar

Salt and Pepper

Next, add 1 tbsp rapeseed oil, paprika, salt and pepper into the basket and shake to evenly coat the prawns. Space the prawns out again, then cook for a further 3-4 minutes at 400°F (200°C).

Combine the extra virgin olive oil, soy sauce, honey, rice vinegar and brown sugar to form the salad dressing. Taste to adjust the seasoning as necessary.

Drizzle the dressing over the lettuce, cucumber and red onion.  Toss to combine then serve into bowls and top with radishes, the cooked prawns, mango, an optional wedge of lime  and a sprinkle of fresh coriander. If you like spice then add some chilli flakes. Dig in!

Preheat your airfryer to 400°F (200°C). Place the frozen prawns into the airfryer basket, evenly distributed so they aren’t touching. Cook for 2 minutes at 400°F (200°C)
