This Turkish Bulgur Salad (Kisir) is one of our all-time favorite family recipes in summer! It’s such a quick and easy make-ahead meal prep recipe and the perfect salad to serve as a side dish for grilling! Use quinoa, millet, or rice for a gluten-free option.

Turkish Bulgur Salad (Kisir)

8,8 oz fine bulgur (or sub quinoa, millet, rice

onion

garlic

red bell pepper

carrots (optional)

tomato paste

tbsp oil (+ 1 tbsp more for frying)

lemon juice (or vinegar)

parsley (or coriander)

salt and pepper (to taste)

paprika powder (or chili to taste, optional)

sugar (optional

cherry tomatoes (or lettuce, cucumber)

pomegranate seeds (or toasted chopped almonds/hazelnuts)

mint (or other herbs of choice)

Place the bulgur in a pot, saucepan or heatproof bowl. Then pour ½ liter (500 ml) hot vegetable broth over the bulgur. Cover and set aside for 20-25 minutes, or until all of the liquid has been absorbed.

In the meantime, heat 1 tablespoon of oil in a pan or skillet. Add the onions and sauté for 1-2 minutes until almost translucent. Then add the bell peppers and carrots and sauté another 3 minutes. Finally, add the garlic and sauté a further minute, or until the veggies are tender. Set aside.

Once the bulgur has absorbed all of the liquid, transfer to a large bowl. Stir in the Ajvar (or paprika paste), tomato paste and sautéed vegetables to combine.

Allow to cool to room temperature, then mix in the oil, vinegar, parsley, and seasonings (salt, pepper, paprika, chili, sugar) to taste.

Enjoy immediately or cover and refrigerate overnight to unfold flavors.

20 minutes Turkish Bulgur Salad Kısır

bulgur

spring onions

parsley

3-5 pickles

+1/2 tbsp tomato paste

sweet red pepper paste

olive oil

tbsp + 1 tsp dried mint

tsp each cumin (hot red pepper

tsp isot pepper (optional)

tsp sumac (optional)

pomegranate molasses

juice of a lemon

Soak

First soak the bulgur wheat in the same amount of hot water, cover, and let it sit for about 10 minutes.

Sauté

Cut the onion in small cubes. In a medium-size pan add 6-7 tbsp olive oil and saute the onion for about 4 minutes on low medium heat.

Chop

Chop the vegetables, spring onions, parsley finely, and pickles in small cubes.

Season

Add tomato paste, red pepper paste, dried mint, cumin, and hot red pepper flakes and give it a stir.

Cook

Add the bulgur wheat and salt and cook for about 3 more minutes.

Meanwhile, you can brew your Turkish tea too 🙂

Taste

Taste the kisir and add more spice if you like along with isot pepper, sweet pepper and sumac (these are optional)

Add Fresh Herbs

Add the fresh greens after it is cooled down and mix it gently.

Salad Sauce

Finely add pomegranate molasses, lemon juice, and more olive oil if needed and enjoy with Turkish tea time treats

Ingredients For Kısır:
1+1/4 cup thin bulgur wheat
1 onion
4-6 spring onions
1/2 bunch of parsley
3-5 pickles 
1 +1/2 tbsp tomato paste
close to 1 tbsp sweet red pepper paste
5-7 tbsp olive oil

1 tsp each cumin, hot red pepper flakes
1 tsp sweet red pepper flakes (optional)
1 tsp isot pepper (optional)
1/2 tsp sumac (optional)
