Korean Carrot Salad

onion (diced (I used red onions))

coriander seeds (cracked)

Grate carrots in long strips or julienne them on a mandoline. The traditional recipe uses long square shaped carrot strips.

Dice the onion and crack coriander seeds in a mortar. Heat 2 tbsp of oil in a frying pan and fry the onions with cracked coriander seeds and cayenne pepper over low heat for about 10 minutes until the onions are soft and slightly caramelised.

In a medium bowl combine salt, sugar, red wine vinegar and minced garlic, add carrots to the marinade and then add cooked onions and spices. Mix well and let it chill in the fridge for 2-3 hours to allow the flavours to meld.

tbsp oil

tbsp minced garlic

Peel the carrots and cut them into thin strips using a mandolin, vegetable slicer, or a sharp knife. Put the julienned carrots in a mixing bowl, sprinkle with salt, and let them sit for 10 minutes to wilt.

Mix in the sugar, vinegar, and gochugaru (Korean chili flakes). If gochugaru is unavailable, use a combination of cayenne pepper and paprika. Toss everything together well.

In a small pot, heat the oil over medium-low heat and sauté the garlic until it becomes aromatic, ensuring it doesn’t burn. Pour the hot garlic oil over the carrots and mix thoroughly.

The salad can be served immediately or chilled in the fridge for 2 hours to enhance the flavors. For storage, this carrot salad can be kept in the refrigerator for up to 1 week.

Toast the cashews in a dry skillet, tossing frequently until golden and fragrant. Set them aside to cool, then coarsely chop them up.

Make the Dressing - In a small bowl, combine vinegar, sugar, soy sauce, sesame oil, and red pepper flakes. Stir to dissolve sugar and set aside for the flavors to meld.

Assemble Salad - Add your carrots, bell peppers, green onion, and cilantro to a medium mixing bowl.

Pour the dressing over the salad and stir to coat until it’s well combined. Cover and let it marinate in the refrigerator for 20 minutes.

Stir just before serving and adjust the seasoning. If it needs a little more punch, add more vinegar. Garnish with chopped cashews.

Loved the Spicy Korean Carrot Salad! It is a great vegetable side dish but also a great healthy snack to have ready in the fridge. Loved it!

Made this for dinner as a side and it was delicious! I love carrots and don’t have very many recipes for them but this one is a keeper. I added chopped Serrano peppers instead of crushed peppers for spice ..otherwise I wouldn’t change a thing! Can’t wait for leftovers tomorrow!
