Tender, moist, and flavorful Korean baby back ribs!

Korean BBQ Pork Ribs

slabs baby back ribs (5 to 7 pounds)

soy sauce

water

rice wine (or mirin or white wine)

sesame oil

honey

brown sugar (use regular sugar if unavailable)

garlic (8

ginger

medium onion, grated (See note 1)

sweet apple, grated (See note 1)

black pepper

Korean red pepper paste (gochujang, 고추장)

Korean red chili pepper flakes (gochugaru, 고추가루)

brown sugar (Use regular sugar if unavailable)

garlic (See note 1)

Prepare the ingredients for the marinade of your choice. Mix all of the ingredients well.

For the marinade

Pull off the membrane if it&#039;s not been removed (see note 2). Cut each slab of the ribs into two pieces for easier handling. Rinse the ribs and drain. Coat the ribs well with the marinade, and marinate them for a minimum of eight hours (preferably 24 hours to 48 hours). Turn them over once after half of the marinating time has passed. (You can use large zip lock bags for easier handling.)

Preparing the ribs

Preheat the oven to 325°F (300°F if using a convection oven). Line a baking sheet with aluminum foil. I used 2 baking dishes. Arrange the ribs, meat side down. If using the mild marinade, pour some marinade into the baking sheet or dish. Cover the baking sheet/dish tightly with aluminum foil. Bake them for 1.5 hour (2 hours if you want fall off the bones tenderness). Remove the foil cover.

If used the mild marinade, you will have a lot of liquid in the baking sheet/dish. Pour it out into a sauce pan along with any reserved marinade, and bring the liquid to a boil and reduce by about half or until it turns into a thick consistency. You don&#039;t need to do this with the spicy marinade as it doesn&#039;t have as much liquid. Brush the sauce onto the ribs.

Cooking the ribs

Option 1: Change the oven setting to broil (500°F) and preheat for a few minutes. Then broil the ribs until the ribs are lightly caramelized and charred, about 5 minutes on each side. Baste the ribs with the sauce a couple of times while broiling.

Option 2: Preheat the grill and grill the ribs over medium heat until the ribs are lightly caramelized and charred, about 5 minutes on each side. Baste the ribs with the sauce while grilling.

Finishing the ribs

You don't need to grill ribs to make them fabulous. Korean braised pork ribs are great any time of year.

onion (as finely diced as you can get it)

garlic (crushed)

tbsp coarse gochugaru (- korean pepper flakes)

tbsp gochujang (- korean chili paste)

tbsp shiro miso

mirin

apricot jam

tsp sesame oil

tbsp vegetable oil (plus enough to coat the ribs)

chicken stock (- low or no sodium)

Pre-heat your broiler. Coat the ribs with a bit of vegetable oil and lay them out in a single layer on a broiler safe sheet pan. Broil until lightly browned. Rotate the sheet pan to make sure they brown evenly. When they look good, flip them and repeat. Remove from the oven. Set your oven to 325F.

Brown the ribs

Heat the vegetable oil in a large dutch oven over medium low heat. Add the onions and cook, stirring occasionally, until translucent. This takes about 5 minutes. Stir in the garlic and cook another 30 seconds. Reduce heat to low.&nbsp;

Mix in the gochugaru, gochujang, shiro miso, mirin, soy, apricot jam and sesame oil. Stir to combine.&nbsp;

Add the chicken stock and bring to a simmer.&nbsp;

Add the ribs to the dutch oven. Stir. The liquid won't cover the ribs. That's OK. Resist the urge to add more stock. Put a sheet of aluminium foil over the dutch oven and cover tightly. Place the pot in the pre-heated oven.

After 30 minutes, remove the pot. Using tongs, move some of the submerged ribs up. Move the ones that were on the top down. Basically mix them up. Replace the foil and lid and return to oven.

Continue to cook for another 30-40 minutes. Check at 30 minutes. They should be fork tender but if they aren't cook them another 10 minutes. Cook them until they are tender. Tender doesn't mean mush. Mush is bad. Tender means they pull away cleanly from the bone. Maybe a little tug to get them off but the bone winds up clean.&nbsp;

Remove the pot from the oven. Remove the ribs to a bowl and tent with foil.&nbsp;

Put the sauce in a large cup or fat separator and spoon off the fat. Return the sauce to the pot. Over medium heat, reduce the sauce until it's fairly thick - like a thin BBQ sauce. This should only take around 5-8 minutes if you resisted the urge to add more liquid while cooking.

Return the ribs to pot and toss in the sauce. Garnish with sesame seeds. Serve with rice and a nice green salad. Or forget the sides and just mow down on ribs.

Braise the ribs

These spicy Korean pork ribs are irresistible and very easy to prepare in a pressure cooker. Deliciously sticky and finger lickin’ good! See notes for how to cook in your slow cooker.

Pressure cooker Korean pork ribs

tbsp gochugaru or 1 tbsp hot chilli powder

tbsp sweet paprika

salt (or

garlic powder

½ tsp ground black pepper

250 ml (1 cup) dry cider or ginger ale

tbsp gochujang paste (or Sriracha)

tbsp ketchup

tbsp Asian fish sauce

tbsp brown sugar sugar

garlic

tbsp ginger

lime juice (or

tbsp cornflour (cornstarch) (diluted in 1 tbsp cold water)

lime (to garnish)

salt and pepper (to season, if needed)

If you are using a rack of ribs, you might need to remove the thin membrane that covers the back. Simply slip the tip of a knife under the thin membrane that covers the bony side of the ribs and pull it off – it should come off quite easily.

Combine all the ingredients for the dry rub then use it to liberally coat the ribs.

In a small bowl, mix the ginger ale, gochujang paste, ketchup, soy sauce, fish sauce, brown sugar, minced garlic and ginger.

Add this to your Instant Pot. Add the trivet (if cooking spare ribs) and place the ribs on top.

SPARE RIBS: Cover, set vent to sealing and cook on high pressure for 30 minutes. Allow the pressure to release naturally.BABY BACK RIBS: Cover, set vent to sealing and cook on high pressure for 23 minutes. Allow 5 minutes natural release then release the remaining steam manually.

Transfer the ribs to a rimmed baking sheet, meat side up.

Add the diluted cornflour to the sauce and set the pressure cooker to ‘sauté’. Cook, stirring occasionally until the sauce is reduced and sticky.

Meanwhile preheat the grill (broiler). Liberally brush the ribs with the sticky sauce then cook for 2-3 minutes until slightly charred and sizzling.

Scatter with lime zest and serve with some extra sauce on the side.

I just made this tonight with boneless ribs. Did 25 minutes in the Instant Pot but probably could have been less time. I thought they may be dry (leaner meat) but was pleasantly surprised!  I will make again, but cut back on the fish sauce a bit. Great recipe!

They came out amazing!! The marinate was right for them and the ribs came out very juice and tender.

Delicious made this in 40 mins total and it was great! Only change I made was no fish sauce and lime and instead of cider I used broth

Made this tonight - it was FANTASTIC!  We like our ribs a little less well-done, so cooked for 20 minutes with 10 minutes of natural release.  The browning at the beginning made it a little slow, but SO worth the effort.  Really great ribs; thanks for the recipe!
