Kukuri Bhindi, called Kurmure Bhendi Bhaja in Bengali, is sliced okra coated in spices and fried until crunchy. &nbsp;This crispy fried okra is so good, you cannot stop eating it!

Kurkuri Bhindi / Crispy Fried Okra Recipe

10.5 oz Okra (Bhindi)

Rice flour

Semolina (Sooji/Rava) (fine)

tbsp Nigella seeds (Kalonji)

tsp Fennel Seeds (Saunf)

tsp Ground Turmeric (Haldi powder)

tsp Kashmiri red chili powder (adjust

Oil (for deep-frying (1 tbsp for air fryer))

Wash okra and then pat dry with a kitchen towel. Using a sharp knife, slice the okra lengthwise in half or quarters depending on their size.&nbsp;

In a medium-sized mixing bowl, combine the flour, semolina, nigella seeds, fennel seeds, salt, turmeric and chili powder. Whisk to combine and then pour in the water to make a thick batter.&nbsp;

Add the sliced okra to the batter and toss it around to coat all the slides. Set aside for 15 minutes.&nbsp;

When ready to deep-fry, place a heavy bottomed pan over medium-high heat. Pour in the oil to a depth of about 1 inch. Have a plate layered with a kitchen towel ready.&nbsp;

Depending on how big your pan is, add the okra slices carefully, without overcrowding the pan. Tossing and turning, fry the okra for about 5 minutes or until golden brown in color. Remove from the pan using a slotted spoon and place on the kitchen towel. The okra tastes best when served immediately.&nbsp;

For Deep-frying:

Place half of the okra slices in the air fryer basket, spreading them out as much as possible (if you have a large air fryer, you could do all at once). Spray some oil on the spread okra slices.&nbsp;

Cook at 330˚F for 10 mins. Remove and shake the okra, then cook at 350˚F for about 2-5 mins until crispy.&nbsp;Serve immediately.&nbsp;

Crispy Air Fryer Okra (Kurkuri Bhindi)

okra (rinsed, dried and cut in half lengthwise)

avocado oil

salt (adjust

turmeric

red chili powder

coriander powder

cumin powder

amchur ((dry mango powder))

chaat masala (see notes for substitute)

besan ((chickpea flour)

Prepare Okra

Rinse okra well. Dry it completely, then cut each okra in half, lengthwise. Trim off the crown and tips.

Season Okra

Combine okra, oil, salt, spices and chickpea flour in a large mixing bowl and toss well until the okra gets coated with spices and flour.

Air Fry

Preheat the air fryer at 360°F for 2 minutes. When ready, spread the okra in the fryer basket in a single layer. Depending on the size of your air fryer, you may have to cook okra in 2 or 3 batches. Cook for 12 minutes, shaking the basket halfway through.Note: If you like your okra extra crispy, shake the basket and cook it for another 1-2 minutes.

Season the okra as per instructions above. Cook in a preheated oven at 400°F for 20-25 minutes, flipping halfway though.

Bhindi Fry is a spicy, tasty and super crispy dish made with tender okra or ladies’ finger, gram flour, spices and seasonings. Thus, most aptly also known as Kurkuri Bhindi. This Fried Okra is one of the best side dishes you can make to pair with your everyday Indian meals.

red chili powder (or paprika)

Coriander Powder ((ground coriander))

cumin powder ((ground cumin))

mango powder ((amchur powder))

flour ((besan)

Rinse the okra or bhindi in water for 3 to 4 times. Wipe them completely dry with a kitchen napkin. Trim off the crown and the base tip.

Slice each okra vertically into 4 pieces.

If you have small sized okra, then slice into 2 pieces. Take all your sliced okra in a big plate or a big bowl.

Now sprinkle all the spice powders one by one on the sliced okra. Season with salt according to taste.

With a spoon or spatula, gently mix the spice powders with the okra.

Sprinkle the besan on the okra.

Again, gently mix the besan with the okra. The besan and the seasonings must evenly coat the okra slices.

Marinate the okra in this mixture for 20 to 30 minutes. You could also keep it for an hour.

Preparation

In your kadai (wok) or a frying pan, heat 2 to 3 tablespoons oil. 

Add a batch of marinated okra and fry. You can fry in three to four batches depending on the size of kadai. Add more oil if required while frying okra. 

Fry the okra till golden brown and crisp on a medium heat. 

Take care and keep on turning the okra so that they get fried evenly. If the oil becomes too hot, you could lower the heat and fry.

Keep the fried okra on a crumpled kitchen tissue so that the extra oil gets drained.

For the next batch again add 2 to 3 tablespoons oil or as required in the pan. Let the oil become medium hot and then add the marinated bhindi. For each batch add 2 to 3 tablespoons oil or as required while frying.

Serve bhindi kurkuri directly as they are or if you want you could garnish okra with coriander leaves, julienned ginger or sliced green chilis.

If you like you could also sprinkle some lime or lemon juice on top of the crispy okra. you could also sprinkle some black salt (kala namak) or chaat masala on the crispy fried okra.

Enjoy the Kurkuri Bhindi Fry as is or pair with roti and a bowl of curd or yogurt.
