Do something different on burger night...go Greek!  These Greek lamb burgers are juicy, flavorful and super easy to make. The secret is in the meat mixture, combining aromatics with spices like oregano, earthy cumin, and paprika, plus a generous does of fresh mint and parsley. Greek Lamb Burgers

lb lamb

red onion, grated

garlic cloves,

parsley

mint leaves, chopped

½ tsp dry oregano

tsp cumin

paprika

½ tsp cayenne pepper, optional

Kosher salt and black pepper

virgin olive oil

Greek pita bread

Homemade Tztaziki sauce

tomatoes

Green bell pepper

cucumbers

Sliced red onions

Pitted Kalamata olives, sliced

Heat an outdoor gas grill on medium for 20 to 30 minutes or so, meanwhile, prepare the meat mixture, pita (or buns) and fixings for the burgers.

Add the ground lamb (or mix of lamb and beef) to a mixing bowl. Add grated onions, garlic, fresh herbs, oregano, cumin, paprika and cayenne. Season with kosher salt and pepper. Add a generous drizzle of extra virgin olive oil, and mix until everything is well combined.

Divide the meat mixture into 8 equal balls. Using both hands, work meat into smooth spheres, then lightly press to form into patties. Arrange the patties on a large tray or dish, and with the tip of your thumb, press lightly to form a shallow, somewhat wide, depression into the center of each patty. (see cook's tip #2 below) Cover and refrigerate until grill is ready.

Lightly oil grill grates and arrange the burger patties on top. Grill over medium heat, covered, for 4 to 5 minutes on each side, turning once midway through cooking (internal temperature for a medium burger should register 160 degrees F. Adjust cooking time according to your desired doneness.)

Allow the lamb burgers to rest for 5 to 10 minutes before serving. Serve in pita (or buns), with tztaziki sauce, tomatoes, cucumbers, peppers, onions. If you like add kalamata olives and a sprinkle of feta.

Can I just say these were the best burgers I have ever eaten?  I didn't have any yogurt to make the Tztaziki sauce so I used your recipe for Tahini Sauce and it was delicious.  We didn't have pita but used a wonderful loaf of sourdough.  I loved the toppings and the flavor of the meat; so juicy.  I just love how much parsley is used so much in mediterranean cooking;  Thank you so much.

This was a really fantastic recipe! I made some small modifications but used yor flavor profile and our lamb burgers were REALLY GOOD. We don't combine dairy and meat so I made a lemon-garlic-mint aioli (using store bought mayo) to speard on the buns, and then a cucumber/kalamada olive/shallot mix to be the crunch on the burger. My family loved this and it iwll now go into regular rotation!

Great recipe and quick to prepare. Fantastic flavors!  We served on brioche buns with olive tapenade and feta paired with a petite syrah.

Lamb Burgers with Arugula Pesto and Roasted Onion

yellow onion,

olive oil

(25 g) arugula

pumpkin seeds

tsp (10 ml) lemon juice

tsp garlic, chopped

lb (450 g) lean ground lamb

(30 g) panko breadcrumbs

tbsp ground sumac

4 buns, toasted

(125 ml) sour cream

½ cup (15 g) arugula

With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

On the baking sheet, toss the onion wedges with the oil. Season with salt and pepper. Bake for 30 minutes or until the onion is tender and golden.

Roasted Onion

Meanwhile, in a small food processor, purée all of the ingredients until fairly smooth. Season with salt and pepper. Set aside.

Arugula Pesto

In a bowl, combine the ground lamb, breadcrumbs, sumac and egg. Season with salt and pepper. Using your hands, form the mixture into 4 patties.


In a large skillet over medium heat, cook the patties in the oil for 4 to 5 minutes on each side.

Patties

Cover the bun bottoms with the sour cream. Top with the patties, roast onions, arugula and pesto. Close with the bun tops.

Keeping Herbs Fresh

These burgers will be your favorite way to use ground lamb! Fire up your grill to make this amazing Greek meal in just 20 minutes.

Grilled Lamb Burgers with Feta

lb ground lamb

oregano

tsp salt

tsp black pepper

flat leaf parsley ((loosely filled))

mint leaves ((1-2 inch))

basil leaves ((4-5 inch))

red jalapeño pepper ((See Note 2))

garlic

lemon

feta cheese crumbles

Using gloves (optional), cut red jalapeño pepper stem off and remove the seeds and set aside (See Note 2). In a medium sized bowl add the ground lamb (or beef) and the salt, pepper and oregano. Mix to combine.

Place herbs, jalapeño pepper, garlic cloves and two to three 2-inch pieces of lemon zest (I used my vegetable peeler to strip off) in food processor.&nbsp;Pulse several times to break down and add to the seasoned ground lamb.

To the mixing bowl add the feta cheese crumbles and gently work the ingredients together to mix thoroughly. Do not over mix and compress. Divide the lamb mixture into four portions and gently form into four patties. Set aside.

Prep the grill to around 450°F and then clean and oil it so burgers do not stick.&nbsp;Grill for 3 minutes on the first side covered, flip and cook for 4 minutes covered, then back over for 1 minute more. I removed them from the grill and allowed them to rest for 10 minutes. Should be medium.

Serve with tabouli salad and top with Tzatziki sauce if desired.

These were excellent! I had ground lamb plus feta to use up. Added a few other spices and forgot the lemon zest 🤦‍♀️but they had lots of flavor and were moist. (Hi Kevin—we met at Nagi’s 11/2015 blogging workshop!)

I used  all the ingredients but chopped them up into the meat, grilled them on a wood burning stove and served them in pita bread . The best burgers ever!

Taste was good BUT
there isn't anything in these patties that binds it together ( egg or bread).  It was weird but I decided to trust the instructions and...ended up with ground meat dish. No patties, they fell completely apart just as I afraided..
Real disappointment :(
