Celebrate Idul Adha (Eid al-Adha) with this Indonesian lamb curry, a coconut-based curry with soft and tender lamb/mutton that goes perfectly with rice or flatbread.

Gulai Kambing - Indonesian Lamb Curry

450 gram (1 lb) lamb/mutton meat,

lemongrass,

kaffir lime leaves (Indonesian: daun jeruk)

Indonesian bay leaves (Indonesian: daun salam)

(Indonesian: cengkeh)

cardamom pod (Indonesian: kapulaga), crushed to reveal the seeds

(1/2 stick) cinnamon stick (Indonesian: kayu manis)

(200 ml) coconut milk

(500 ml) water/chicken stock

coconut palm sugar (Indonesian: gula Jawa)

salt,

white pepper

shallot (Indonesian: bawang merah)

garlic (Indonesian: bawang putih)

5-10 red cayenne chilies (Indonesian: cabe merah keriting) (Note 1)

candlenuts (Indonesian: kemiri)

ginger (Indonesian: jahe)

galangal (Indonesian: lengkuas)

coriander (Indonesian: ketumbar)

turmeric

cumin (Indonesian: jinten)

Fry spice: Heat cooking oil in a pot and sauté spice paste, lemongrass, kaffir lime leaves, Indonesian bay leaves, cloves, cardamom, and cinnamon until fragrant, about 3 minutes.

Add meat: Add the lamb/mutton meat and stir until no longer pink.

Add coconut milk and seasoning: Add the coconut milk, water/stock, coconut palm sugar, salt, and white pepper. Stir and bring to a boil. Reduce the heat and simmer until the lamb is tender and the sauce has reduced by half, about 1 1/2 to 2 hours.

Serve: Turn off heat and serve the lamb curry immediately with steamed white rice.

This lamb tikka masala recipe is the essence of Indian comfort food. You can easily make it with any cut of lamb. In fact, the recpie works with other meat.

Lamb Tikka Masala

milliliters (1 tbsp) ghee

(2lbs) lamb shoulder,

milliliters (2 tbsp) ground turmeric

500 milliliters (2 cups) curry base sauce

milliliters (2 tbsp) vegetable oil

garlic cloves,

ginger,

onion powder

cumin

coriander

milliliters (1 tsp) paprika

milliliters (2 tsp) curry powder

milliliters (1 tsp) dried fenugreek leaves

tomato paste

(4 almonds

milliliters (1 tbsp) brown sugar

milliliters (1 tsp) garam masala

milliliters (1 cup) single cream

Heat the ghee in a large ovenproof casserole.

Cover the lamb with turmeric and brown on all sides in the casserole.

Pour in the curry base sauce, stir and cover with a lid.

Simmer on a low heat until the meat is cooked and tender. In this case, it took about 90 minutes. Set aside.

Fry the garlic and ginger at a low heat for 1 minute.

Pour the cooked lamb and its sauce into the pan and stir.

Add the onion powder, cumin, coriander, paprika, curry powder, fenugreek, tomato paste, ground almonds and brown sugar to the lamb. Stir and let the curry simmer slowly for 10 minutes.

Pour in the cream and garam masala. Stir well and let it simmer for another 5 minutes.

Garnish with cilantro and serve with rice, naan and your favourite Indian side dishes.

A fragrant lamb kofta curry recipe that won&#8217;t need hours on the stove. Make it as mild or spicy as you like by adjusting the amount of chillies in the recipe.

Lamb kofta curry

For the meatballs

fennel seeds

garlic

ginger

green chillies

shallot

tbsp desiccated coconut

lamb mince

For the curry sauce

shallot, chopped

tbsp garam masala

tsp turmeric

tin chopped tomatoes

tbsp natural yogurt

Lime wedges to serve

Toast the fennel seeds in a dry pan until fragrant. Whizz garlic cloves, ginger, chillies and shallot to a paste in a mini processor, then mix with the toasted fennel, coconut and lamb mince. Season and roll into 20 balls, then chill.

In a little oil, fry the shallot, fresh ginger, garam masala and ground turmeric for 5 minutes. Stir in the tin of tomatoes and a splash of water and simmer for 5 minutes. Add the meatballs, cover and simmer for 15 minutes. Drizzle over the natural yogurt and serve with lime wedges, steamed rice and extra yogurt.
