Moroccan Lamb Tagine

Well I have to say I was in Morocco a few years ago and I purchased my 1st tagine And yes I brought it home in my suitcase. I have to say that the recipe with the lamb is missing some major ingredients. You absolutely have to have curry and cummin  Along with the Ginger and the cinnamon. I've used that recipe for years with chicken and pork and lamb and it is most delicious I recommend everyone trying to add these other spices as well....yum

I just got a Tagine for Christmas and was very eager to break it in and make something. 
I reviewed  the ingredients in this recipe  and thought this would be equally delicious if I swapped the lamb for chicken, as our son is funny about lamb. 
I also had a few dry figs in the pantry so I included them with the apricots. 
Sooo delicious, all of us were so impressed : ) Very saucy and savoury with a Just a little sweetness. Im excited to add this delicious dish to my winter recipes! Thank you !

These maybe good recipes but they're listed under the heading "roast lamb leftovers" and clearly the recipes need raw lamb. If you've had a lamb roast, the meat is already cooked, so none of these recipes are appropriate under this category.

I spent some time in Morocco several years ago and loved the food, and this dish sounded more Moroccan than other recipes I've seen so I tried it, and it was delicious! And I used 1 cup of dried apricots.

Garlicky Lamb Chops

This aromatic Moroccan lamb tagine is easy to make in your Instant Pot, slow cooker or stovetop. Serve with couscous, rice or mashed potatoes for a hearty and delicious meal.

Moroccan lamb tagine

olive oil (to fry)

1.3 kg (3 pounds) diced lamb

red onions (, finely diced)

garlic (, minced)

tbsp fresh ginger (, grated)

tsp cumin

tsp turmeric

tsp sweet paprika

cinnamon stick

g | 3 ½ oz dried apricots (, finely diced)

tbsp honey ((optional))

lemon (, juice only)

tomatoes

400 g | 14 ounces tinned chickpeas (drained and rinsed)

ml chicken stock ((from stock cube))

pistachios

Heat the oil in your pressure cooker and brown the lamb for a few minutes, in batches if necessary. Set aside. If you are short of time you can skip browning the lamb and instead add it in with remaining ingredients on Step 3.

If there’s any browned bits at the bottom of the pot, deglaze with a splash of stock or water. Add the chopped onion and cook for five minutes until softened.

Add the garlic, ginger and spices and stir to release the wonderful aromas.

Return the lamb to the pot and stir to combine.

Add the lemon juice, tomato paste, apricots and honey. Stir to combine.

Add the chopped tin tomatoes, chickpeas and stock.

Cover, set vent to sealing and cook for 20 minutes at high pressure. Allow for 10 minutes natural pressure release then manually release the remaining steam.

Remove the cinnamon stick. Taste and season if necessary. Garnish with the coriander and chopped pistachios. Serve with couscous or rice.

Instant Pot method

Heat the oil in a large lidded casserole dish. Fry the onions for five minutes until softened.

Add the lamb to the pot and stir to combine, cooking for 5 minutes.

Add the chopped tin tomatoes, chickpeas and 2 cups (500ml) stock - note this is twice the amount from pressure cooker method.

Bring to a boil then reduce a low simmer. Cover and cook for about 1h -1h 15 mins until the lamb is tender and stew has thickened.

Stovetop method

Follow steps 1-4 then put all the ingredients in your crockpot. Stir in the tomatoes, chickpeas and stock and cook on low for 8 hours or high for 6 hours.
