Make this easy, quick, and delicious omelette using Chinese sausage. A quick dinner that goes well with a bowl of plain cooked rice or Asian rice congee.

Easy Lap Cheong Omelette (Chinese Sausage Omelette)

eggs (lightly beaten)

sausage

onion shallots

Tbsp cooking oil

tsp sugar

tsp salt

tsp ground pepper

tsp sesame oil

green onion (finely chopped)

Thinly slice the sausage at an angle and set aside. Lightly beat the eggs with the seasonings and chopped green onion (if you choose to use)

Preheat oil in a non-stick skillet. An 8-inch pan can make 2 omelettes. If you have 10-12 inch pan, you can make one thicker omelette. It&#039;s up to you. I made two omelettes with an 8-inch pan. Saute half of the onion, until fragrant, about 2-3 minutes. Add half of the sausage and cook briefly until lightly browned and aromatic and then arrange the sausage decoratively if you like on the pan

Lower the heat to medium and gently pour in half of the egg mixture and gently swirl the pan to cover the base of the pan. Let it cook over medium heat until the bottom just started to set. Cover with a lid and lower the heat to low to let the top cook for another 1 minute. This way you don&#039;t have to flip over the omelette (I&#039;m bad at doing that!)

Uncover the lid and transfer to a serving plate. Continue cooking the second omelette. Garnish with chopped green onion and serve warm

We had some leftover Chinese sausage, and I was looking for a way to use it up. I love this combination. The recipe is an absolute winner!

This is the best omelet I have ever had. No cap. I topped mine with sriracha because I like things spicy, but my girlfriend did it without and she loved it too. THANK YOU.

I'm almost a little embarrassed to review this because it's so simple- but sometimes you have some ingredients and need a good internet search to fire up the ol' kitchen inspiration. There isn't an Asian-style omelet or pancake that I don't love, so I knew this was going to be a winner. I actually repurposed the lap cheong from some leftovers (it was a basic cabbage stir fry with lap cheong, but the cabbage would've probably been good in this too if there was any left hahahah). I loaded mine up with scallions and it was *chefs kiss*!

So delicious!! I used half the salt and found it perfect. Thanks for the recipe!
