Thermomix recipe: Butter Cake

250 Grams Butter (room temperature)

150 Grams plain thin style yoghurt, room temperature

200 Grams full cream milk, room temperature

Teaspoon Vanilla Bean Paste or extract

eggs, room temperature

420 Grams golden caster sugar

400 Grams SR flour

Grams custard powder

Batch Creamy Vanilla Icing

Preheat oven to 170ºC (fan forced), with rack in the middle of the oven. Grease and line 24 cm round cake tin.

Place butter into Thermomix bowl and mix **40 sec/50ºC/speed 4** (this will loosen up the butter, but not melt it completely which you don’t want to do … if it is completely melted the cake will be heavier).

Insert butterfly, then add yoghurt, milk, vanilla and eggs and mix **10 sec/speed 3**.

Add sugar, flour and custard powder. The bowl will be very full so use the spatula to stir though some of the batter to bring liquid from the bottom to the top before continuing. Replace lid and mix **10 sec/speed 3**.

Scrape around sides with spatula then mix **30 sec/speed 3**.

Pour batter into cake tin smoothing the top when you have finished.

Bake for 1 hour, or when a skewer inserted into centre comes out clean.

Cool for 15 minutes before removing to a cooling rack to cool completely before icing.

An 18cm (7-inch) everyday chocolate cake - not too rich, still yummy.

Everyday Chocolate Cake

g self-raising flour

baking powder ((7.5 milliliters))

vanilla extract ((5 milliliters))

salt

g butter,

150 g icing sugar

Preheat the oven to 190°C/ 170°C fan/ gas mark 5/ 375°F

Line the tins with a paper liner

Grease the tins (if they need it) with butter paper (or a little butter on kitchen paper)

Preparation:

Mix the cake ingredients together thoroughly(Butter, caster sugar, eggs, cocoa, flour, baking powder, salt, vanilla extract)

Evenly divide the mixture between the tins. Smooth the top with a palette knife and make a slight dip in the centre

Cook for 25-30 minutes until the cake surface springs back when you touch it lightly with your fingertip

Remove from the tin and leave to cool on a cooling rack. Leave the paper in place if you don’t intend to fill the cake immediately.

For the Everyday Chocolate Cake:

Beat the softened butter and vanilla extract with an electric whisk

Add in the icing sugar (and optionally cocoa) gradually, beating well as you go

For the buttercream filling:

Decide which cake looks better (e.g. flatter or less cracked) and put it aside

Put the other cake upside down on your plate. Spread the buttercream over the cake

Put the better-looking cake on top, the right way up. Sprinkle the top with sieved icing sugar

Strawberry Sugar Free Cake Recipe

Tablespoons (100 grams) sugar sweetener

almond flour

baking powder

water

Tablespoons oil

Vanilla Extract

Meringue Icing

Strawberry jam

Strawberry powder

Prepare all ingredients

Start preparing all of the ingredients. Have your eggs at room temperature and separate egg whites and yolks. Sweetener is best to have powdered for baking as it melts much easier. If you have made our recipes, prepare jam and powder, and make the frosting if you have not. At the same time, heat your oven to 160 Celsius or 320 Fahrenheit. 

Whisk Egg Whites and Egg Yolks

Using your kitchen machine, place egg whites into the bowl and mix until fluffy. Place the bowl aside. Using a second bowl, add egg yolks together with sweetener and whisk. 

Once you whisk your egg yolks, scoop in the egg whites into the bowl and mix on low until combined.

Add the rest of the Ingredients

Add all other ingredients using a spoon while your machine keeps whisking them. 

Pour and Bake

Once your cake batter is thoroughly combined, pour it onto the large cake pan and bake for 30 to 35 minutes. 

Spread Jam

Make sure your sheet cake is thoroughly cooled before going into the next steps. Make small holes throughout the cake using the back of the spatula or wooden stick. This will help your jam to get directly into the cake to add more moisture and flavor.  Once your holes are all made, cut your sheet cake into half and spread half of the strawberry jam on one half of the cake. Place the other half of the top of the cake to form two layers. 

Extra Jam and Frosting

Spread the rest of the jam on top of the second layer of the cake. On top of that goes meringue frosting. You can either spread it with a spatula or fill our icing bag and frost it. 

Strawberry Powder

Lastly comes our strawberry Powder. Place powder into the sieve or bigger tea sieve, as I have done, and gently powder your whole cake with dehydrated strawberry powder.
